Lightly Crispy Shortbread Cookies | So Simple!

- Try this recipe if you are looking for amazing shortbread cookies - It is perfectly buttery, very lightly crispy, and not overly sweet. Make any shape, size, and thickness, and enjoy it in many ways such as a cookie box, tea snack, parties, etc!

📌 The ingredients To Make Shortbread Cookies
Makes about 3 - 4 dozen cookies
• Unsalted butter 226 g | 8 oz (2 US sticks)
• Powdered sugar 90 g | 3.1 oz (3/4 US cup)
• Vanilla extract 1 tsp
• All-purpose flour 280 g | 10 oz (2 1/4 US cups *Level the surface.)
• Cornstarch 25 g (3 Tbsp *Level the surface.)
• Salt 1/2 tsp
** For best results, measure ingredients with a scale. All recipes are designed with weighed ingredients using grams/ounces. Cup measurements are provided for your convenience. **
Bake at 350 F 175 C (Preheated) for about 13 - 15 minutes or longer until the edge gets lightly golden brown.
* Bake longer depending on the thickness and size of the cookies, oven, etc.
[For pressed cookies]
Bake at 350 F | 175 C (Preheated) for 35 - 40 minutes or longer until the surface gets lightly golden brown.
* It’s crispy already but bake at 300 F | 150 C for 25 - 30 minutes if you want it to be more flaky.
* I used a 8-inch (20 cm) tart pan today.

I’ve never used cornflour before in my shortbread I use rice flour and if you’re searching for a good old crunch I sprinkle it either sanding sugar or Demerara sugar if you’re interested just google McKenzie shortbread recipe enjoy ❤

Thanks for this - we don’t have all purpose flour - we have cake, self raising & bread flour. What do you suggest I use?
You can use cake flour or blend cake flour and bread flour (1:1) to get similar texture!
Thank you for sharing! The cornstarch realy makes a difference! Question though: for the Chocolate dip, did you temper chocolate or did you use coverture 🤔
I did this time since I used couverture chocolate. You can omit it with chocolate chips.

So I’ve been starting to make tarts and I found a tart recipe online. After cooking it, it tastes just like shortbread cookies. Haha well, it paired well with the cream and fruits I added. I will try your tart recipe though. Have you ever molded shortbread tarts before? Curious if you’ve tried
I made tarts before with similar to shortbread cookie recipes - but tarts spead more, slide down more, or simply don't hold the shape well. So I hear you! You'll need to blind-bake with them.
Is the corn starch necessary? Or i can use cake flour?

Leave them at room temperature for sometime and they should get dried if tempering was done properly. If not, chill it in the fridge for some time!

Can I use a hand mixer...?
The flour should scatter everywhere more easily, so mix at very low speed and stop frequently. You can also mix it with a spatula, it takes some time but it works better if you don't want the dough to contain lots of air inside.
