God I love the way you film how the food vendor put the dish together before it is served to you. You definitely have a way of getting the older food vendors to smile for you. Not an easy task mind you given how tired they are (getting up early to buy the ingredients, prepare the food, set up shop, sit all day hoping to sell out their food for the day). Great insight on how the market vendor have to pay for their spot/stall too Sonny and what better way to show that then seeing how much those hard working vendor have to lug around everyday. I believe you went to cooking school. I wonder if you ever become a chef in the States somewhere, how would you cope with the memory of having experienced all of the fresh and tree-ripened ingredients in Vietnam compared to the ingredients that are sold States side.
Yes, then the food would cost 5-10 times more, lose the freshness, and the market would have the sterile smell of a US supermarket or a hospital. You should go to those places and leave places like Vietnam for us peasants. Thank you for your input and be sure to tell me where you go to eat so I don't go there.

@Young Tang There are restaurants in Vietnam as well. If people prefer to eat in the restaurants, then they can do so. Markets like these are more for the locals. Street food is a huge part of Vietnam's culture that I personally hope will never die. Also, just because food is served in a restaurant does not make it cleaner nor safer.
I love Hue it was the first city in central VN that I visited and after traveling to the city when I was 15 I actually wanted to move there, HN was a headache for me. I love Hue ppl and central VN ppl in general. they are as hard-working as other cities but they are so friendly and the ambiance is so laid back. I remember feeling very relaxed and it fits me soooo much, the weather was also very nice. I feel like ppl of central VN represent the best qualities of Vietnamese ppl, they also get the worst from nature each year yet they are so resilient
The HUSTLE is real in vietnam, it's no joke. Just preparing the food then bringing it to your spot then sitting there for a full day hoping to sell it all takes a special kind of person. Not to mention some people don't have enough money to buy their spot they have to walk around carrying everything with them.

Vietnam was splited into two sides: Vietnamese army on the north, French army on the south. Because they had to avoid any unexpected conflict between two countries until French army totally get out of Vietnam. Vietnam was fine at that time until the U.S decided to take over France's place, set up Ngo Dinh Diem' s government on the south. They turned Vietnam into a country with two different politicial institutions. They betrayed their own decision and disrespected a country's independence.

sonny, there are holes inside of a blood cake because of bubbles(hole pockets). so when the blood coagulates and solidifies, they become "holes". just think of it as a pancake batter, mixing it will give it bubbles so when you cook pancake, there are also holes. it's normal, dont be scared 😂 here in the philippines, we grill it and baste it with a mixture of banana ketchup and oil and dip it on vinegar with onion, garlic and chili. yummmmm
yes, the bubble part is for Sonny and the "grilling the bloodcake" part is for the new viewers, some of them are a little hesitant about trying new things. it's just an assurance that they wont regret eating blood cake if it's prepared properly 😆
Albino Crocodile this is a vietnamese dish and the way its cooked shouldn’t have any holes. When there are holes it means the pork blood had been overcooked/cooked in boiling water

Asians in general are resilient people. Though there are super wealthy folks, they represent a small fraction of the population in any Asian country. This is why Asians will try to use every part of an animal and utilize what is cheap and available. I give you much kudos and appreciation for incorporating a given country’s history and culture, instead of just focusing on the culinary side.

@@Rubix1982 Different type of noodles. The Bun Bo Hue broth is less aromatic than the Pho broth. Bun bo Hue has stronger smell due to the special shrimp paste. BBH is also served with spicy condiments, esp with sate (chili oil) sauce. BHH is often served together with pork, although the name suggests it's a pure beef dish. Also, the beef in BBH is cooked, unlike in Pho it's usually rare or medium rare.

Many many people don't have enough money for a spot in the market too, or maybe they'd rather spent their money on things they think are important, like education for their kids. You can't just give money to all of them, they're working hard on their own strength. You can help them by purchasing their stuffs but don't be wasteful (like buy a ton and ends up throwing all away for example). They would appreciate sympathy but maybe not pity. (sorry for my bad English btw)
