I have been smoking mac & cheese for years! So good!! I usually just use 1.5 - 2 lbs of grated white American cheese on mine and a qt of half & half. I par cook my noodles first and then smoke for about 2 hours, stirring every 30 minutes.
Watched this morning, hit the store got all my ingredients and made it and it did NOT disappoint! Only thing I need to do is make a smaller portion! Alot for 2 people! At least it's good and will have left overs! Thanks!
I talked with your friend James from Puck’s BBQ Sauce. He asked me where l had heard of his company and I told him from Ashkicking BBQ. Had placed an order with him. Thanks for the info definitely making those party ribs with the sauce. Now I will have to order some Honey chipotle rub. Have an awesome weekend.
I've experimented with a lot of smoked mac and cheese recipes on pellet grill, standard method doesn't get smokey at all. Using this method of cooking the noodles in the smoker is definitely the key. And using American cheese or sodium citrate. I'm gonna have to try it.

@nelliediaz2001 I used a gluten free noodle made from chick peas, and they worked great. The brand of noodle was Banza.. worked really well, and everyone loved it. (Bright orange box, found at Walmart... several types of noodle available) No changes made on the cook. (Tried to add pic of box, but evidently not as savvy as I thought.. 😆)

Hey I have an idea for you. Get some Jalapeños slice them up. Dip them in a beer batter then deep fry them then put them in this macNcheese recipe 😁🤘😎🥃🍻

I have a friend that's gluten free. Did the noodles hold up or did you have to cook a special way?

1.5 hours total, for me. Your mileage may very.
