you dont even know how much i love your channel, im 13 and got into fungi at the begginning of quarantine. I now grow mushrooms, forage them, and have a tiktok where i make vids of me cooking them. Your channel started my love of fungi and i have seen almost all your videos. Thank you very much. :D

Fin, that's awesome! I'm loving growing and eating mushrooms I've never had before. But I'm 50 and semiretired, so it's far less impressive. At 13, I believe I was mainly focused on being a twerp.
Maybe you will be a successful mushroom farmer, chef, or mycologist some day. Or maybe someone who has a lifetime of growing tasty and healthful mushrooms as a badass hobby.

    Hi! Great video.
We eat a lot of verpa bohemica in Italy.
We first boil it for 45 minutes and then discard the water. After, we cook the boiled verpas as we would do with other mushrooms.

It would probably be good to include the most easily confused agaricus mushroom, the agaricus xanthoddermus. It looks like the other agaricus mushrooms, but when pressed, it becomes yellow.

Regarding the mystery termite mushroom with a taproot:
"A radicate Oudemansiella species, called “Heipijizong” or “Black Termite Mushroom”, has been widely cultivated in China in the past few years. It was regarded as either the European O. radicata or the North American O. furfuracea or even species of Termitomyces. This study aims to clarify the taxonomic position of this economically important mushroom. Phylogenetic analyses of “Heipijizong” and other related Oudemansiella species were carried out using ITS and nrLSU ribosomal RNA gene regions. Based on both morphological and molecular data, “Heipijizong” was identified as Oudemansiella raphanipes. Our study indicated that O. raphanipes possesses both 2-spored and 4-spored basidiomata. Detailed morphological descriptions and illustrations are provided for it."

Matsutake are delicious. I was weary at the price when I first came across them in a Japanese supermarket. But once I tried them I realized they were worth every penny. Just watch out for Chinese grown, Ive had them before and they were heavily discounted. They lacked flavor. I guess I would describe the consistency to be similar to shitake and the flavor to be earthy and almost meaty. I do not remember cinnamon nor pine.

You've been a great resource as I dive into this rabbit hole.
Can you do something about fungi's such as those popular in Asian cooking which are flat and 'rubbery'? Black fungus, cloud ear, white cloud are common bag names of dried varieties I've used. Are any cultivatable or gatherable in our areas?

I will say wild Agaricus do have a stronger flavor than grocery store mushrooms. I have found matsutake or a lookalike, it does smell like cinnamon, but I found the flavor to be less pronounced. I used it in soup, however, I found out later the preferred way to eat them is roasted.

    Dear FCM,
We can appreciate mushrooms for their culinary or medicinal qualities, but also for their beauty, their strangeness, their luminosity.
For us, this form of life so strange, so foreign to our species, and also a source of knowledge and a way of life. He invites us to enter Nature, to learn from a rotten log, a grassy meadow, an undergrowth conducive to meditation. It is also close to us, because it is a way of life and culture. Our asceticism, our pleasure, our spirituality.
We send you our grateful friendship from the Paris region!

you don't need all the whoosh and pop sound effects and all the gimmick graphics flying around, you could use way less. Your content is already top notch without all that and it makes it look like you're trying too hard. Also anyone reading this you shouldn't just go eating mushrooms like he's suggesting. you need to be 100 percent sure by an expert what you're looking at. there are a LOT of poisonous lookalikes that could kill you.
