- Chef Tomas Matsufuji serves up some of Lima’s freshest ceviche at Al Toke Pez in Lima, Peru. Al Toke Pez serves high-quality ingredients at affordable prices in an unpretentious spot where diners can eat-in at the bar or take their food to-go.
Along with ceviche, they offer classic Peruvian and Nikkei dishes like arroz con mariscos (fried rice with seafood), fried fish, and leche de tigre. Thomas goes to the fish market every morning to source fresh ingredients with a focus on sustainable buying practices.

Thank you for doing this interview in Spanish. His English must be excellent since he studied a PhD in England, but always nicer to speak your native tongue. His charisma really comes through.
Yeah and it's awesome to see him with that sweet Peruvian accent.
Diana Dai i was wondering too, why he didn’t do the interview in English. Although always Cool to hear our lovely Peruvian accent 🇵🇪
Castellano, spanish is the name spain gave to the language after the conquer of America. We dnt acept spanish in America we say castellano, because Castilla was the kinsom who conquered America wasnt Spain.
@@canaldelnocanal Español, no te compliques.

He's proud about his food and thats when it really matters, you can feel it in every dish.
Glad he decided to enter the restaurant business instead of chemistry! And still put his background to good use
Funny how he said he would kill less people in a restaurant!
Why are u glad?
I love that he is a Spanish speaking Japanese-Peruvian
They have one of the largest Japanese diasporas in the world. At one point there were 950 000 Peruvians of Japanese descent living in Peru.
@Joel Samaniego wtf? Mexico?
@Joel Samaniego I would like to remind you that not only Mexico has that accent but many other countries. Man has that accent because in Peru some use it to talk.
@Joel Samaniego It's true, although I didn't listen to a Mexican with that accent you say. Maybe it's a shared accent. Sorry for my bad English.
He's peruvian
Great choice for the first Lima episode - Al Toke Pez is incredible!
What is most interesting is his father’s restaurant was very expensive and one of the famous Japanese chef worked there is Nobu...he learned Nikkei food there and his restaurants worldwide offer Nikkei food (Peruvian-Japanese) and Robert De Niro is his business partner.

Como aprecio a los peruanos personas educadas y tan amables cariños desde Argentina!
I love this guy. He just seems like such a positive, funny, humble, hard working, honest guy. And with all of that having been said, he’s got a sense of style -- a flair about him. It’s a beautiful thing, man. A simple, beautiful thing.
I feel it fam..To hear that woman not even bring up his food but just declare that he is just such a good person..and I look at him and hear his attitude; his positivity, humility, kindness, sense of humor and charm etc all while doing something special and making sure it’s accessible to people…I just hope that I can raise the kids I have one day to be such amazing human beings in their own way.
There's nothing better than a person who is obviously very successful but puts themselves down humorously every chance they get.
That bank loan line at 8:10 killed me.
totally. self deprecating humor is a seriously undervalued trait
"I'll kill less people in a restaurant" is now my life motto LOL
Best quote and change of lifestyle by far
ima take it as my motto too
Mtasufuji that means he's probably related to the Matsufuji family that owns the Edo restaurants all over Lima including one in Berlin street near the center of Miraflores, pretty impressive to start his own restaurant separate from family business and have success like that
The speed and finesse of how he cut that fish was therapeutic.
lol same here....
“Do I consider myself famous? Yes, in the banks for not paying debts. They don’t give me any loans…” 😭
Small restaurants are the best because they’re always more about the food
-seafood
-loves his job passionately
-quick and delicious streetfood
-works in cramp places with ease
This guy is japanese alright.
If nothing else, that most definitely gives it away.
+ is highly educated but would rather work at a job he truly loves

OMG I WAS GOING TO EAT THERE 2 DAYS AGO BUT IS WAS FULL OF PEOPLE SO I LEFT!!! Didn't know it was THE PLACE to go. #cryingInSpanish
@William Vega I'll go next time forsure
Love that he makes the ceviche of his choice and uses ingredients abundant in season
This is one of the best episodes yet! He's an inspiration!

PERU!!! i’m so glad they made a video about the amazing food we have in peru!❤️
One of the best meals we ate in Peru!
Spanish is such a lovely language! I love it!
peruvian accent is the best :)
His got a unique "nikkei" accent that is proper of Lima only.
@@carcez "nikkei" accent doesn't exist. Limeñian and japanese peruvian have the same accent since they aren't segregated
@@miguelgalvezangles328 sisisi
@@HugsmadeDrugs it does, very subtle but a peruvian will notice the small difference, like, still using the diaphragm to speak
Peru has by far the best food in all of the Americas. From Canada to Argentina nothing compares to Peru. The food here is a unique mix of jungle and dessert ingredients cooked using native techniques and Asian techniques.
IITS SO GOOD!!
Don’t forget the huge Italian influence
mexico disagrees
Pedro Mexico and Peru are a tie for me. Both have an abundance of incredible dishes 🙌🏼❤️
Depends what kinds. If you love meat; Argentina is by far the best. If you love spicy foods; Peruvian is definitely not it.
Mr 232172 as a peruvian i can say that mexican and peruvian food are the best but i find that sometimes mexican food can be overwhelmingly greasy or spicy so i think that maybe peruvian food would appeal to more people than mexican, but i would really kill for some street tacos in lima that aren’t expensive as hell
"I thought I'd kill less people in a restaurant." Lmao I love this guy.
When somebody with a crutch doesn't mind the wait, it speaks volumes.
Perú! My country im si proud 😋
Proud of? A fish takeaway? lol
Thomas Shelby It is better than many full-scale sit down restaurant meals. Excellent stuff

Thanks MUNCHIES for showing my beautiful people and country some love❤️🇵🇪#ArribaPeru
0:58 when he says that the food is "suave" it means that it's delicate, not light.
This is the best series in Vice.
That food looks SO GOOD. I’ve thought about a trip to visit Machu Picchu, seems like I may add another spot!
Lima para s the best city to eat in Latin America, you should program a gastronomic tour for some days there, you have to try both street food and restaurant food, it's amazing
Peru has the most underrated cuisine hands down.
It's considered the top 3 cuisines of the world, nobody underrates it. If anything it isn't as well known like Thai or Mexican, which are objectively lesser cuisines but got better and longer marketing campaings.
@@HugsmadeDrugs I've been to mexico and live among many mexicans, and yes, mexican food is overrated, very good, but very overrated. But thai food, when I visited Thailand oh man, they have so much diversity, so many dishes,so good, I can honestly say that is one of the best, and peruvian cuisine is not underrated anymore, you're right, it has won best gastronomic destination 8 years in a row.
Absolutely brilliant: a chemist turned chef! His food must be delicious, too bad I can't try it 😔
Perú is amazing!!!
Yummy. We love Peruvian food. 😊
I Love street food icons!!!!! Keep making them
The way this man handles the fish and squid soothes my soul. So much attention to detail its so pure
I AM A GREEK CHEF AND HAVE ONE VERY GOOD RESTAURANT. I TRAVEL FOR YEARS ALL OVER THE WORLD, CHANGE IDEAS, CHANGING MINE ,ETC. THAT GUY IS ONE OF THE BEST (WITH ALL THE RESPECT) CHEFFS I HAVE EVER SEEN!!SIMPLE, BUT EXTREMELY GOOD ,NICE AND PROUD BUT NOT EGOIST. HE HAS HIS OWN WAY TO CREATE DISHES AND I END ADMIRING HIM!!
"And I thought, I'll kill less people in a restaurant." HAHAHA Give this man an award for this statement
Such authentic genuine person
"seafood is inexpensive"
Damn bruh, come to England, you need a bank loan to live off of seafood.
Seafood is only expensive in England because of the fact that English people refuse to eat/buy any of the fucking local/seasonal seafood and so rely on imports
English seafood is more expensive to get for most people... It's a premium since all the supermarkets sell foreign imported seafood.
Same issue in France, depending of the region. It's just too expensive.
This video is about his restaurant, that cooks seafood. In Lima, Perú. Where we are blessed and grateful for an abundance of seafood. What does your comment have to do with the theme of the video...
Maybe because the european region have a huge issue with anisaki infected fish , and they need to import the fish , that would be the problem , because it sound odd for me the fact that you live in an island and can´t eat seafood as you want!
wtf, watching a video of peru food halfway and i hear my countryman's accent
I damn shocked leh
Haha instantly spotted that too
haha same thing here.
what is peruvian people's opinion of japanese that live in peru?

Love these!
The world is awesome. I dig the mix of languages/culture.
It's mostly Asians. They live with every race and integrate and collaborate with every race in almost every country on earth really well.
I love this! Want to go try this food, looks delicious.
I cant stop watching these 😁 best series ever.
Wow... How he goes from learning Chemistry to go into the Agricultural or Laboratory fields to cooking in a restaurant, he compares the two by saying "I'll kill less people in a restaurant." That truly is a terrifying reality to face in a world where both of these fields truly go hand-in-hand.
I love Peruvian food is so good. It has a lot of influences that's why they has so many delicious dishes. Gordon Ramsey was there, Mark Weins is there now and Food ranger next. There are others youtubers not that famous but it seems they all decided to check out Peruvian food at this time of the year.
How do you know food ranger is coming to Peru?
Amazing it all looked so good, when I get the chance I will be sure to check them out!!!
Would love to try that, respect to that man and his ethos!
I would make a trip to Lima just to visit this place. Wow.
Amazing places, and let me tell you, there is lots of amazing food in peru, and if a peruvian says its good, you can bet its going to be amazing.
its like watching a Surinamese-chinese speak better Surinamese than me..... still doesn't top black guy with a Dutch-belgian accent.

Great, yet another awesome restaurant I haven't been to yet here in Lima...now it's next on my list :)
As a followup, I finally went with my wife(Peruana) and we both loved it. The short wait was worth it. You should definitely try the "combinado", a nice mix of ceviche, crunchy fried squid, and arroz con mariscos...which stole the show with it's flavor de wok. Great job, we'll be going back!
Pucha que Ricooooo se ve todo esto!!!! En mi lista para el proximo año en Junio 🤩
I hope you make more videos like these
