- Healthy Breakfast Meal Prep!😍 In this video we’ll be making 4 Easy & Gluten-free Breakfast Recipes. These breakfast meal prep recipes will make healthy eating a lot easier for 2023🤩 Meal prepping saves so much time and it’s the best feeling when you wake up and you have a ready breakfast waiting in the fridge.
Sheet Pan Pancakes
This makes about 6 servings:
4 eggs
3 cups lactose-free unsweetened natural yogurt (720 ml)
1/4 cup maple syrup or brown sugar (60 ml)
2 teaspoons vanilla extract
2 cups gluten-free flour mix (or regular flour if not coeliac/intolerant/IBS sufferer) (480 ml)
2 tablespoons baking powder
Topping examples:
strawberries
blueberries
bananas
dark chocolate chips
1. Mix the wet ingredients together
2. Add the dry ingredients and stir until combined
3. Spread the mixture on a baking pan lined with parchment paper. Add your toppings (press them lightly into the batter)
4. Bake at 180 Celsius degrees (350 in Fahrenheit) for about 30-40 minutes. Serve with Greek yogurt, berries and maple syrup, for example!
5. Store in the fridge!
High-protein Chocolate Overnight Oats (about 30 g protein per serving)
Ingredients for 1 serving:
1/3 cup gluten-free oats (80 ml)
2 tablespoons vegan chocolate protein powder
1 tablespoon cacao powder
1/2 cup almond milk (120 ml)
1/2 cup lactose-free Greek yogurt (120 ml)
1 tablespoon chia seeds
1 tablespoon maple syrup
Toppings:
1 tablespoon peanut butter
berries or fruit
1. Mix the dry ingredients together
2. Add the wet ingredients and stir until combined
3. Refrigerate for a few hours, rather overnight
4. Serve with peanut butter and berries/fruit
Egg Muffins
This makes 3 servings:
6 slices of thin turkey or ham
6 eggs
1 small bell pepper cut into pieces or any other vegetables
some fresh herbs, I used basil
pinch of salt
pinch of pepper
1. Lightly grease a muffin pan with melted coconut oil or cooking spray
2. Take one slice of turkey and lay it onto on muffin cup (it will form a ”cup”)
3. Crack an egg into each muffin cup
4. Sprinkle some salt, veggies and herbs on top.
5. Bake at 180 Celsius degrees (350 in Fahrenheit) for about 15 minutes, or until the egg whites are just set.
Blueberry Pie Baked Oats
This makes about 5-6 servings:
2 mashed bananas
3 eggs
3 tablespoons maple syrup or honey (or more if you want to make it sweeter)
2 teaspoons vanilla extract
2 cups almond milk (480 ml)
2 cups gluten-free oats or buckwheat flakes (480 ml)
1 tablespoon baking powder
1 tablespoon cinnamon
1 cup frozen or fresh blueberries (240 ml)
1. Mix the wet ingredients together
2. Add the dry ingredients and stir until combined
3. Fold in the blueberries (save some for topping if you like)
4. Pour into a baking dish
5. Bake at 180 Celsius degrees / 350 in Fahrenheit for about 40 minutes
6. Cut into pieces. Serve with some vegan yogurt and maple syrup, for example!
7. Store in the fridge!

I’m a coeliac vegetarian on a diet and a bowl of ice cubes seems to be the dish of choice 😂. Thank you for the inspiration.
Would it be rude if I made a suggestion? I know that some of your recipes talk about how much protein is in the recipe, but I wonder if it is possible to do a calorie count for each serving? It is so easy to see a recipe being done and wince at the contents, expecting them to be high in calories. I tend therefore to avoid them, but if there is a calorie count, you swiftly realise that oats, banana and cocoa powder isn’t all that calorie dense.
Apologies if I’m out of order with the suggestion.

@@fitfoodieselma Hi! I used natural yoghurt ( about 15%fat) and maple syrup..but I now did them again with a little vegan butter on the parchment paper and they came out perfect! 😍 Thank you, I also tried your Orange Protein Chocolate Baked Oats and Banana Pan Oats and everything is wonderful! ❤️

As a vegetarian, what can I use instead of turkey/ham if I want to make the egg muffins?
Thank you so much🥰 You can just leave it out, but make sure to grease the muffin pan well, you could even use silicone molds😁 If you want to add an ingredient, feta would work well, for example😍
Honestly, I thought that they were thin slices of potato when I first saw them! Maybe a viable substitute?
What I have done in the past, is used ribbons of courgette (zucchini) or carrot. I have blanched them and then, using 6 ribbons, woven them together. That makes a really great base.

Hi Rebecca! Thank you so much🥰 That's a great idea😍 Sheet pan pancakes freeze well, up to 3 months. If using berries/fruit as toppings, they might not taste so good defrosted, so I might leave out the toppings and make plain pancakes. You can cut the pancakes into pieces after baking, let cool down completely, stack, wrap, freeze, and thaw as needed in the microwave. Baked oats work well frozen as well. Egg muffins can be frozen too up to 3 months. The most important step when freezing egg muffins is to make sure they are wrapped tightly to prevent any air from getting in and drying them out. You can also freeze overnight oats, and the best way to defrost them is to leave them in the fridge overnight. Hope these tips help😁 Wishing you all the best for the rest of your pregnancy💗
