- This is a fabulous fermented version of cottage cheese that is hard to beat in nutrients, probiotics, and health benefits. Great instruction! I just add kefir to my store-bought cottage cheese and leave it on the counter for a little while to ferment. It makes the cottage cheese last longer in the fridge and gives it a probiotic boost.
About how long is “a little while” is it more than 4-5 hours?

I mostly do it to make the cottage cheese last longer so just an hour or two. I would think if you wanted to truly ferment it you would need to leave it out over night or 24 hours.

Can you use raw milk or would that be to much for the l ruteri
I can't ifind any milk now that isn't ultra pastuerized. I love cottage cheese but can't use store bought due to the gums in them. Help! Donna I love all of your videos and thank you so much.
I used ultra pasteurized milk to make cheese before and it still worked. The yield will be less and your whey will be yellow tho.
