WOW that was packed full of information! ❤️ Just hung some kefir earlier today for some cheese. Yum! I make and sell raw goat milk kefir. In fact just 2 hours ago I had a knock at my door. There stood a woman who apparently I had gifted some kefir grains to awhile back. She was thanking me profusely, saying that she loves her kefir and that I had saved her life. 😳 I am smart enough not to take the credit but to thank her back equally as enthusiastically for sharing her story. I guess the day she was at my home to pick up her grains I had given her a sample to drink. She said that her stomach had been in terrible pain for 2 years, and with in 10 minutes of her drive home she said her pain was gone and she could feel it working. I am often, lovingly mocked by my grown children saying whenever someone has an ailment that I can be seen or heard whispering the word “Kefir!” 🤣 I so appreciate when people share their stories. Thank you for sharing this information for others who don’t know yet about kefir. 😊

Holy crap!!! I've been making my own kefir from raw milk for several years. I knew it was good for me but I didn't know a fraction of the info you presented here ! Thanks for doing all the research! I definitely will keep drinking my kefir! I usually do a second fermentation with some fruit for about 1 to 2 hours which decreases the tangy flavor. Then I add a little honey or maple syrup and blend it up. Stick it in the fridge for a couple of hours and it's delicious!

In the same way, you make curd cheese from sour milk (let it stay till it goes thick). Curd is universal stuff, use it as bread spread (with herbs, salt, pepper), or for dinner with boiled potatoes(some onions, a bit of linseed oil), baking a real cheesecake. You can even add some fruits and eat curd as a sweet dessert. Great source of protein. Greetings from Germany.

Love this, I accidentally made Raw Goats Milk Kefir Labneh the other day, I let it overferment, freaked out at the flavour so then I just hung it like you did for 24 hours and then put it in the fridge . I had my first tablespoon of it and OMFG it is the most delicious goats "cheese" I have actually had.
Going to be making a lot more - I have a freezer full of raw goats milk !!

We love our kefir too! Just a few notes. We were making two cups a day and we were finding that we just had too much volume when flipping it every day so we just cut down to 1/2 cup a day. It has made it manageable for the two of us. When I get too many grains happening I either give them away or freeze them with a bit of dried milk powder. When you need them just thaw in fresh milk and they bounce back in a few days. I am surprised more people don't make kefir - so easy and delicious.

So I got my grains, and have been making kefir for about a month or so. Very happy with/about it. Now I want to try making the cheese. My question is this: Since kefir is like the best thing on earth for us, does the cheese have that same benefit? I’ve always got questions for you, and you always seem to have the answers. I appreciate that so much. Thank you for being you, don’t change, please.

    • @FermentedHomestead

I’m happy to help anytime I can! All I can do is think about what I know because I don’t have the actual answer. Since making the cheese means straining out the whey you will be losing some of its goodness, however I’m sure there’s plenty left behind and it’s certainly much better than store bought cheese!

Or sometimes I'd rest the grains in the fridge, but couldn't leave it like that for very long. Just using one cup per day so as not to have to refrigerate the grains. Now since my new grains are multiplying like crazy, i decided to venture into the world of kefir cheese and whey. I think I have new hobby lol. Only wish I had a local source of raw milk that's near me.

Question about gut health: do you drink coffee or non-herbal tea? I was told that caffeine messes with stomach (causes gerd) and gut (blocks/ reduces vitamin/mineral absorption). I drink decaf, but can’t pass on a caffeinated soda occasionally (olipop soda, “healthy” kind)

No, you can use store bought kefir to make kefir cheese. Store bought kefir isn’t really a natural ferment. Most of the time it’s just selected cultures and who knows which way it will go but you can definitely strain it to make cheese

It will probably be fine but I wouldn’t use it because it’s very different bacteria with different requirements. You could use brine from another veggie ferment but I don’t recommend using a starter in most ferments because it speeds it up and changes the flavor

After sitting on the counter for 24 hours my kefir would be totally separated, it would look like cottage cheese at the top, and the whey in the bottom. So I let it sit out for 20 hours and it turned out very nice no separation. My question is since we dropped four hours off of it, is it going to affect the probiotics and vitamins that are in it in anyway. Will there be a lesser amount in my final product? Thanks in advance. I’m looking forward to your answer.

The yield would be the same, a shorter fermentation would mean less probiotics. If it’s separating before 24 hours it usually means either the temperature is too high or there’s too many grains for the amount of milk you’re using. I hope that helps 😊

I’m not sure what you mean, are you referring to the second ferment?

How long is the milk you strain your grains out of good for in the fridge? I've been growing my milk kefir for a couple weeks now, and I'm making my family watch this because they have been hesitant to drink it! Thank you!

Do you mean how long do I strain it for or how old is the milk when I strained it? I usually strain it for around 24 hours but it varies based on what consistency I want and I’m not sure how old the milk was. I hope the video helps! It’s fantastic stuff 😃
