I have recently added water kefir to my daily fermentations and it has been a game changes in my household. My 3yr daughter and her friends just love to drink twice fermented fruit based kefir. It's might not be as beneficial as milk kefir but when dealing with toddlers you have to take the win 😊

Since milk kefir multiplies so quickly, try using a batch of milk kefir as a base for bread.
I mix a strained batch of room temperature kefir with 1 tablespoon of yeast, one heaping tablespoon of sugar and one cup of bread flour; stir and let this sponge activate for a few hours.
Next add one scant tablespoon of salt and another cup of flour to the sponge and mix well. Then add flour one half cup at a time until the dough forms a ball. Turn the dough onto a floured surface and knead for five or ten minutes, adding flour as needed. Shape the dough and put it into a greased loaf pan. Let rise until you like the shape and then bake at 365 for about forty minutes. Check it at thirty just to see how it is baking.
This recipe will also make two pizza crusts.

I just started activating my kefir grains. The first day was good, went 24 hours and 1 cup of organic milk (although it was ultra pasteurized because that's all I could find). The second batch I added 1 1/2 cups same milk to the grains and 24 hours later it went crazy and over fermented the milk, separated the curds and whey, in Hawaii at about 80 deg. F. I still drank the kefir blending it with frozen berries and honey. I started the third batch with 2 cups of same milk, but I'm going to check it after about 15 to 18 hours this time.

I have been making milk keifer for years now. One myth is that metal spoons somehow harm them or something. I've always used metal spoon to scoop them out of existing batch and put them in another mug to start a new batch. They've never complained but kept on going as good soldiers do. I'm using my spare milk kefir grains for making water kefir instead of just throwing them away. The process is exactly the same as with water kefir grains and the finished beverage tastes even the same. Only difference is the milk kefir grains stop growing in the sugar water and have to be replaced regularly after a month or so with new spare grains.

I bought some water kefir online about 5 years ago, and it was producing really well for a while.. I had them tucked away in a box fermenting and my mother in law took the box home by mistake and I didn't realize she took them.. I couldn't find them anywhere and thought that I fed them to my pets by mistake.. flash forward like 6 months she calls me up and says hey this really gross jar labeled water grains was in the box of stuff you gave me to store... it took a second but then dawned on me... So now I have a jar of syrupy brown grains. They smell sour but not disgusting and I don't see mold. Would you try to revive or toss them out? I'm not sure if you answer questions, but your videos helped me out a few times.

When mine turned orange they died shortly thereafter. You can try to nurse them back by giving fresh mile often. Two things happened that seemed to turn mine orange: 1) I rinsed them daily, and 2) I changed the milk brand. I no longer rinse and my new grains have been healthy for more than a year. I suggest no rinsing.

No, it must have Kefir grains or Kefir starter added to it.

All these beneficial bacteria get destroyed in the acid environment in the stomach area, they never get through to go to the small intestines where they would be beneficial.
