What to do with over-fermented kefir

  • Our guts need microbes to keep us healthy and fermented foods like kefir are full of these.
    Microbes act like mini pharmacies to regulate the chemicals and hormones in our body.
    This video is all about what I do when I leave my kefir grains to ferment my milk for too long and the kefir separates into curd and whey.
    Don't panic if this happens to your kefir. You can still use the curd to make kefir cheese and the whey to make Kefir soda.
    I demonstrate in this video how I make my own kefir cheese, which contains the protein and kefir Soda, which contains the probiotics.
    Store the Kefir Cheese in the fridge and consume within 1 week.
    For the Kefir Soda I use 500ml bottles mixing 40ml Kefir Whey with 300ml 100% pure fruit juice and 160ml filtered/bottled water. Store in the fridge and consume within 1 week.

    In my beginner journey into making kefir I learned through trial and error, my first attempts I sealed the jar, later on I learned kefir is aerobic (air breathing).
    My first, sealed jar attempts were very bitter/sour.
    My later batches, in a jar with a piece of paper towel and elastic band on top were much less acidic and creamier. 😋

    Thanks Matty! :) I make the keefir "soda" with fruit pieces and a little bit of honey. This gives the drink more bubbles.

      You’re not supposed to use honey in kefir. You’re running the risk of contaminating your kefir.

    I never use a metal sieve. I use a jelly bag (jam).

      Yeah, ideally you should use a plastic sieve but I've not found my metal one has harmed my grains at all and I only have my grains in the sieve for a few seconds.

      Stainless is fine, don't use aluminum or other metals.

    Can we have the soda recipe. I get you use 50mls kefir whey with 300 mls of juice, but you don't tell us how much water you added to the bottle. Also what size bottles are you using?

      I put my kefir soda in 500ml bottles with stoppers.
      Mix 40ml whey with 300ml fruit juice and 160ml filtered or bottled water.

    Not so long ago the national drink of Scotland was neither Whisky or Buckfast or even Irn Bru but a wine like drink called Bland made from fermented Whey. Before I became lactose intolerant and subsequently vegan I wanted to make it. I used to make Kefir and Kefir cheese but I can't have it anymore. A superb video none the less.

    is kefir "grain" the same thing as the curd you get every time kefir milk is made?

      No, they're two different things. Kefir grains are the yeast and bacteria that ferment the milk. The curd is the solid that forms when the milk gets over-fermented and turns into curd and whey. You can use the curd to make Kefir cheese and the whey to make Kefir sofa.

      @@MattyBsLifeSkills I bought kefir grains and have make kefir milk 5-6 times but now I don't see grains like I started with...just curds when I strain. Did I ferment away the true grains?

    Do the kefir grains die when over fermented?

      As long as you don't leave the grains in the over fermented kefir for more than a few days they'll be fine. Just make sure to give them fresh milk once the fermentation is done so they have more lactose to feed on.
