Perfectly Crisp Steak Milanesa - Gregcipes

    Milanesa is another cross-cultural and extremely versatile food owing to its incredibly simple and cheap preparation. Other names for this dish in other cultures include milanese and wiener schnitzel and, if you loosen the definition enough, chicken fried steak. However, this dish doesnt have to be made with steak, anything from chicken to pork and even eggplant or tofu can be prepared this way. The most important part of this dish is the breading and frying process, but the rest, i.e. the seasonings, are entirely up to the cook. Have fun and make it the way you like the best!
    Ingredients:
    Thinly sliced or pounded steak
    flour
    2 eggs
    plain breadcrumbs
    vegetable oil
    salt
    pepper
    cayenne pepper*
    garlic*
    Italian seasoning*
    lime*
    *optional
    Directions:
    Prepare your dredging station by using three dishes and covering each with either the flour, eggs, or breadcrumbs. season your flour with salt, pepper, and cayenne pepper to taste. Grate or press garlic and add to the eggs and beat together. Season breadcrumbs with Italian seasoning to taste. Coat steak in seasoned flour first, shake off any excess. Next, dip steak in the eggs. Lastly coat the steak in the breadcrumbs and set aside. This order is very important for all the components sticking properly. Prepare a large saute pan by filling with enough oil to cover the about 1/4 inch. Heat pan over medium high. Test oil for correct temperature by dropping a breadcrumb into it. If the breadcrumb floats to the top and is surrounded by small bubbles, the oil is ready. Lay steak into the oil away from you. Once one side is golden brown (~3 minutes), turn over. If there are blonde spots, ladle some of the hot oil on top of the steak. Once the other side is golden brown, remove steak and place on a paper towel-lined plate. Immediately sprinkle some salt on the steak and squeeze lime juice over them. Let rest for 2-3 minutes and then enjoy!

    Pretty good recipe. I'm from Argentina and we eat milanesas all the time. We don't mix the seasoning, salt and pepper with the breadcrumbs/flour but with the eggs. But I guess your version works too. Also, I don't deep fry my milanesas, I put them in the oven with a little bit of oil on both sides. Much healthier.
