I used to eat that steak once a week. I was always served with a few slices of lemon to squeeze over the meat. Same plate setup. Little tiny restaurant with 6 tables. An older couple who converted the front of the house to seating. Sadly when the old man passed away Mama Rosa closed the place down. His funeral was very big, every one who ate at their place was family no matter who you were. Watching you make these beefsteak brought back a lot of fond memories. BTW I'm a white man who speaks nada Spanish. But I almost lived at their house because of how nice they were. Mama made me steak one last time before she passed away also a year later. I make the same dish every year in memory and I always include a slice of lemon.

South TX cooking is the BEST. I'm a Cajun from south LA and if you combine these styles.. million dollar industry.

It's a staple in Argentina, where my dad is from. It's something so simple yet delicious. My ma would use stale bread to make the bread crumbs. They don't do a batter in Argentina though it's basically just the thin beef, egg wash, and seasoned bread crumbs. We ate it with lemon or mayo, and often served it with bread to make a sandwich or pasta. Best part was the trimmings from the meat was saved and used to make this stew that I can't remember the name of. It was basically just the beef trimmings and chicken broth, with rice being added once the beef was fully cooked. Man, I miss my childhood, got to make some milanessa some day. Maybe some empanada too.

Sounds like a Mexican version of chicken parmesan. I can dig it. I bet it would be pretty solid with some pico too.

used to be a place that served a version of Milenesa with a chili relleno split open, cheese side down then ranchera over it all. it was called Bocho's Special. Bocho was the owner's brother. Boy it was good!

Great video. I'm Cuban and my Abuela and my mother would make us something similar. But we called it Bistec Empanizado. Haven't had it in years. Going to have to make Milanesa de Res and see if it tastes like what I had as a kid. Looks almost identical.

I live in SW New Mexico and the meat markets sell this cut here. I've asked 200 people what its for because its so thin. Until now, I could not get an answer as what its intended purpose. Now I know and wil be doing this recipe, except I think i'll use the flat top outside. And those potatoes......dang, looks great boss

Wow Arnie YUMMO!!!!!! You know when I had it in Juarez, they'd spread mustard on the meat then bread it with the crackers, "DEEP" fry the sucker like 3min. Delish. I make a chile con queso with poblanos, habaneros, garlic( plenty),green onion, tomatoes. Sautee in oil with chicken knorr, water. When cooked thickend up, add plenty of jack cheese. Pour over the milanesa!!!!! Ohhhhhhhhhh hell yea!!!!!! That"Mexican"gravy is the bomb!!! Try it my friend NETA!!!! Your not only gonna happy dance, TE VAS A AVENTAR UN ZAPATIADO!!!!!!🤭🤭🤭😆😆. and dip them texas size frys in that sauce too. Many blessings from el paso tx💚

In my family we didn't bread them or pound them. Just fry them as-is with a bit of salt, pepper, garlic and then slice the cooked meat into thin strips to put in a bolillo with mayo, maybe some shredded lettuce, and salsa as milanesa steak sandwiches.
If i make it myself these days, before cooking I also trim out the big veins of connective tissue or whatever that stuff is that's impossible to chew.
