Mexican Grilled Chicken - My New Fav Sandwich!
Вставка
- Опубліковано 13 чер 2023
- My buddy Judd McCutchen called me one day and said, "Man, I have a recipe you need to try and make a video with that recipe." The next day I brought a few simple ingredients which was basically chicken thighs, a can of pickled jalapeños and some hot sauce. I made the chicken and immediately decided to make this for the Meat Church Congregation. This delicious grilled chicken can be eaten plain, used in a sandwich, tacos or quesadilla. This chicken is warm, but I wouldn't consider it too spicy because the jalapeños are pickled. In this video we grilled this directly over high heat, but you can use any type of cooker you desire to make this chicken. We ultimately used this chicken to make a sandwich with cheddar cheese & mayo which complimented the heat perfectly in my opinion.

Dude! I have been an evangelist for a while now. I have made many of the recipes (just the way you do it) and everyone I serve is BLOWN AWAY! This is by far the best chicken sandwich I have ever had. We already have a cabinet dedicated to Cholula and Meat Church, so this was easy. I also agree with everything Mrs. Meat Church tells you, but she is indeed wrong on this. I did the thigh meat and the breast meat. That will never happen again. I always go for white meat with fried chicken, but this sandwich will never be made at my house with anything but the boneless, skinless thighs. I share your site and recipes with everyone, and give your rubs out as gifts. On tap this Fathers Day weekend... The Cheerwine (I live in North Carolina) pulled pork (Cherry pellets on the Traeger) with homemade slaw on Saturday, and salmon with the maple-butter glaze on Sunday. By the way, I have five Meat Church retailers within five miles of me, so life is good!
Love the feedback. Thank you for being here!! -Matt
@@fredstevens129 Buddy I have 35 pits and smokers including 6 offsets if you want to flop them on the table and measure. Don’t bring a water gun to this fight. PS - you’ll life will be way better when you quit worrying what type of smoker people choose to use. That’s not the point. One day you’ll look back on the memories you created around good food and it won’t have anything to do with the name brand on the cooker. Be well. Cheers!
@@MeatChurchBBQ thanks for sticking up for reason and kindness. I love my Traeger, as did the 15 people who came for Father’s Day. Sell your smokers some other way dude. I won’t even Google it now.
@@MeatChurchBBQ You do indeed have many pits. I've met many a man with many guitars, and they still can't play. But flop away, I''m sure you're just as impressive as the other guys that make such crass references.
But seriously, the joke was on the Traeger tin cans, not on you or your other pits. But it's funny how I watch your show and usually enjoy it, but sort of feel like you're pushing Miller Lite and Traeger and I wonder if I'm not watching an infomercial. Yet still I enjoy seeing what you're doing most of the time.
The fanboy who "won't even google it" has a serious case of rectal-cranial inversion and apparently has some kind of man crush on you and your enormous...................................................................... number of smokers. LOL
Take it light man. Keep making the good BBQ. But seriously...Traeger makes some tin can garbage. But the money is good, eh?
@@MeatChurchBBQWow! That was a real ugly response. Whether you are in the right or wrong. You're over here making measuring d!ck references? *How many years old are you? (just hold up the # of fingers).
Escabeche is why. Carrots have a unique capacity to absorb spiciness. For example, if you put sliced carrots into the liquid from pickled jalapenos, the carrots will 'absorb' the spiciness, leaving the liquid much milder, while the carrots will become very spicy and delicious.
Thanks
10000% correct
Yep
I first learned about carrots and jalapenos in college in the 80s from our booze runs to Juarez. Super delicious.
I’m definitely going to do this. Also going to use that brine for some turkey legs too and see how that turns out!!! 🎉
Made these sandwiches last night and they were spot on. I used leftovers tonight to make chopped chicken/cheese sandwiches and they were a step up from the night before to which I will give credit to marinating for another night in the fridge. Another great recipe, thank your buddy Judd for putting you on to this one.
These have been an absolute staple in my meal preps since this video came out. Thank you Matt and the Meat Church team!
Saved this for a couple of weeks and finally tried it yesterday. This is the most awesome chicken sandwich I’ve had in years. Added avocado and jalapeño ranch to mine.
I love the music choice as Matt shakes the hot sauce 😂😂😄
Came here to comment something very similar….. No need! You covered it!! I chuckled the entire time like a middle-schooler….
@@earniejohnson8040 That's all Don. He's an editing magician!
Priceless
Who doesn't like70s porn music.
I buy everything based on reviews. Some said this was hard to put together ua-cam.com/users/postUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt some guy said 2 hours and 2 beers later. I didn't drink beer like I was going to. I didn't feel like going to the store. I'm assuming I would have had at least 3. I took my time. Stepped outside for a cigarette break a couple times but all in all it was about a 3 hour project for me but it wasn't like it was difficult or anything . Only pictures but everything is pretty organized and labeled although I didn't see any #s on the actual pieces like it shows in the diagrams. Only the screws were labeled. On the cardboard part of the packaging on the back side. I put it together in my living room too. It wasn't supposed to rain today but it's Michigan and I couldn't wait so I put it together in my living room. Without beer but beer would definitely have made it more fun that's for sure. I'm giving this a 5 for easy assembly. I'll update after it stops raining when I can take it out of my living room and cook some food on it. Hope this helps at least for people who think they can't put this together because I did and you can too . And there are extra screws. I got nervous and immediately came here to see if others had the same experience and they have. You're not doing it wrong. There will be extra screws. Be patient. Don't rush it. Drink beer. Happy assembling
This recipe will more than likely be a part of my meal prep! Looks delicious! Thanks for this!
Great video Matt! This recipe looks so simple and so delicious. Going to print this one for my files.
Thanks for sharing!!!
Made these tonight and added sweet and spicy pickles. Unbelievable chicken sandwich. Did a couple without seasoning and they were great as well. They were a big hit! Thank you!
This recipe was awesome! So simple and such good flavor!
Made this tonight for the wife and I and it immediately moved into one of our favorites. Incredible recipe that we will definitely do again!
this recipe is so simple but the flavor is on another level!!!!!
Making these for Fathers Day tomorrow. My dad, who is 80 years young, loves anything Jalapeño so, he is getting these tomorrow. Matt, thank you for everything you do! I have tried damn near everything you have done videos on and have not been disappointed once! I am in Montgomery Texas, I have friends that own the bowling center in Waxahachie, I will be visiting the store at some point in the very near future. I use all of your spices (thank God I can get them at Academy). KEEP UP THE GREAT WORK MY FRIEND!
Doing this for Father's Day with some homemade slaw, steak fries!👍 Cheers 🍻. Love this Church!
Thank you for another outstanding recipe! Everyone loved it
Made these on the Weber kettle last night.
Outstanding! Love the way the jalapeno marinade goes right through chicken thighs giving you a Flavorful bite every time.
👍👍
Perfect cook for father's day. Thanks pastor Matt!
Great recipe! That outdoor kitchen back drop at night is second to none.
I made this for Farther's Day, hands down the best chicken I and my family has ever had.
From now on, I'm only making chicken this way, marinated in jalapeno juice.
I can't thank you enough for this recipe.❤
Appreciate you and your no nonsense style..Good recipes too and fun grilling...
The fajita rub is one of my go-to's. Great video Matt
Best video that I've seen in the bbq world in a while. Thanks for sharing, I'm definitely making this!!! Love your channel!
Just looked and I’ve got everything I need at the house right now. Trying this on Saturday.
Did this recipe and it was amazing. Loved the grilling the jalapenos and eating them on the sandwich too.
Matt that looks amazing my mouth was watering just from the description. That you sir and keep killing it.
Great recipe! Love it in fajitas! What I do around my house. Great job!
Tried this recipe as I had all the ingredients and yes it was the bomb............ not hot at all but had a great kick to it.
Love the fajita seasoning........... the pulled pork tacos are the bomb also with this seasoning.
Thanks for the awesome recipes!!!!!
Mad respect. Love your products and videos. Everything I try is 🔥
Great recipe. Ton of flavor in this one. Had to make a substitute on the rub because the local bbq supply had everything meat church but the fajita rub. So i used malcombs grande gringo. Turned out fabulous. One of the best recipes ive tried out in a good while.
I've been watching you cook on Mill Scale equipment for some time now but that little unit right there really hit the spot with my needs. Imma look into it rn 👊🏻🇺🇸
Watched this early this morning, made it for dinner tonight. This is an absolute winner of a recipe, everyone in the family loved it!
Looks super delicious 👍 I love to eat the spicy carrots . simple recipe but looks amazing
Hey Matt thanks for this video I just got done making the sandwiches and it is the perfect amount of heat and great flavor from the marinade 👍🏻
Love the theme music 😂 Don is on point with the edits as always 👊🏼
He really is one of the best editors going these days.
Absolutely brilliant recipe, definitely my new go to for BBQ chicken sandwiches. Thanks mate from NZ
Ooh yeah...this weekend for sure! Thx for the videos.
Made this last weekend while camping, it was really good! Already planning on making it again.
This is just how my grandma would make them in the 70s and 80s. So good 😊
Matt- another crowd favorite! So friggin’ good! Thanks
I made these chicken sandwiches last night and you're right! The whole family was head heels over them. It's now on the short list for weekly dinner.
just made this tonight! This is FIRE! Simple with amazing flavor! Was a little worried it was going to have a little to much jalapeño flavor after marinating for 24 hours, but not at all! Cheers!
Delicious! The family loved it!
Gonna try this for sure THIS WEEK!
Jesus man. Can you make me cry!! Love me some Cholula….. definitely will be doing this over the weekend!!!
Yes sir another great recipe to make this weekend super versatile with amount of heat the butter with hot sauce baste is awesome. Thanks for sharing your greatness
This was absolutely delicious!
Made it last night. So tasty! Thanks Matt!
I love that outdoor kitchen!
Just made this tonight. Maybe best chicken thighs ever had. Added a touch of honey to the baste for caramelization. Soooo good.
Got me with the musical interlude. Well done.
Rocked this chicken tonight. Family loved it! Had to try some Duke's . Best ever!
Finally made it and it truly lived up to the hype. Love it man.
Fajita seasoning is my favorite rub. I pair it with a sweet rub on the pork I cook and I use it as a standalone. Such a great rub.
Made these last night. To DIE for. I also cannot handle much heat and these were spicy but very very palatable.
This was awesome!!!!! My 15 yo daughter loved this and my picky wife. I did ease up on the heat. Only marinated for 12 hrs and used less hot sauce. We used Colby jack cheese and where I’m from we use Hellmans. I garnished with lettuce tomato and pickled onion. Will probably make this once a week.
I made these Super Bowl weekend! They were a hit! Thanks!
I use a lot of pickled jalapeños in a lot of my BBQ sauces. So easy to cut that heat down with the smallest things. My kids 2, 4, 8, and 11 love them.
Looks like the bomb! Will try asap!
DUDE! I just made this, OH MY GOD! Without a doubt the BEST chicken I have had that wasn't fried of course, and even then it is close to that. Only difference is I seasoned the dry chicken, 15 minutes before cooking with: Salt, Pepper, Garlic, Chili Powder, Ground Cumin, and Paprika. I also used the green hot sauce as I like it better. It was so freaking good! And so simple to do. I did it on my gas grill and I can't freaking wait to do that again. Holy hell man, thank you UA-cam algorithm for popping this video up the other day. I think I will turn the left overs in to either fajitas or chicken quesadillas. So good man, cheers!
BRO. Just made these with a buddy over some mesquite lump charcoal. Best grilled chicken sandwich I’ve ever had. Will be making this weekly
Man I made it today on my pit boss and it was amazing and my wife loved it thanks 👍
I made chicken today using this recipe. We were surprised at how good it was!
Great recipe and so simple I don’t even have to print it!
Awesome!! Can't wait to make these at our next family reunion!
Just made these tonight! Omg! Like Matt says, I ain't mad about it. I'll be making again for sure
Made 2 times , just easy and wow good. I reduced some of the pickling brine and the number of jalapenos , due to some people I grill for are high spice adversed . Used 3/4 and I could taste some spice 1st time. There was hardly any spice the 2nd time. Will be making on regular rotation, I grilled the chicken over lump charcoal , FANTASTIC !
Damn. Now I have to go back to HEB and get these ingredients.
Awesome job. Thanks, Matt!
Made these tonight. Used pepper jack and added a little thin red onion. Good stuff, Matt!
Just made it. soooooo good!!!!
I just made this yesterday, holy Hannah, wicked good thx
This looks good! Gonna try this one soon 👍
A cook where we stayed in Cancun yrs ago made this sandwich for us and we were instantly hooked. He showed us his secret and were even more blown away. Best chicken sandwich EVER
This looks awesome.
Tried last night, fantastic and easy enough for a weeknight meal. Thinking the brining method would work great on wings.
Great looking sandwich, was trying to come up with something new for a summer sammy. This will fit the bill. Heading to the store for chicken.
Love me a good chicken sandwich. Good stuff man. Keep up the good work.
Made these tonight as close to the recipe as I could get. So freakin good!!
Recently tried this for the first time and it's now a favorite of the whole family. Do yourself a favor and try it with homemade guacamole on the sandwich . . . next level.
Don’t watch Meat Church before bed! Drooling. Can’t wait to try this one!
Great channel, and your website is an awesome resource, glad I ran across this- thanks
Thanks for being here!
It must be chicken sandwich week in Tx, Chuds BBQ did one this week also. Both with thighs, over direct heat but other then that they are two different recipes. Both look legit! You guys definitely got me in the chicken sandwich mood. Thanks for another great cook.
Welcome!
Just brined chicken thighs overnight(about 24 hours) in Mrs Renfro’s jalapeño. I didn’t do the butter/hot sauce thing… but they were absolutely perfect. Thanks for the great idea!
Yo
Yumm looks delish, nice set up aswell
Yup, making these soon!
Oh man I just grilled a new york strip over the weekend I used the Cholula sauce for a binder then the fajita season. It was really good!
Definitely have to try
Matt - HOLY GOODNESS, we just made this and it will be my go to chix sandwich from here on. We were out of Fiesta, so used Voodoo, gave it even more of a kick but not too much. The warden does not like spicy and she was in love with it. Tell your Volleyball dad he is the man for sharing!!!
I made this and it was delicious! I added some bacon and sautéed onions! SO GOOD!!!
I've been doing this with Venison backstrap for awhile. We also add a can of the pickled green chili's. Most delicious.
BAD ASS!
Love that you threw the jalapeños on as well. I was eyeballing those.
I made these today, and both my son and I were blown away.
The leftovers will used for tacos with onion and cilantro.
Yummy gotta make these!
OK watched and made me WANT THIS. Made it today and damn. This is the real deal. Thanks again Matt!
Awesome video. Maybe a future tutorial video on how to use that grill? All the different things you can cook on it? Huge fan of Wednesdays and your new videos.
Matt always seems like such a grouchy kind of guy lol. Smile more man, Life ain't that bad. And this recipe looks really good and simple. Thank you. 😊
That looks awesome. On my menu next week for sure, thanks..:)!
We are making this one for sure. Going to try it on the flat top!
Awesome!
Made these for the second time tonight! Delicious…
I finally had the opportunity to try these out and they were awesome. I did Voodoo rub on half and honey hog hot on the other half. Voodoo came out spicier but they were both great.
