How to Make Chantilly Cake - A Hawaii Favorite Dessert

  • Learn how to make one of Hawaii’s most favorite dessert, Chantilly Cake. This chocolate cake is perfect to make for a special celebration like birthdays, weddings, etc. The frosting is based on evaporated milk and butter.     Ingredients:
    Chocolate Chiffon Cake:
    7 large eggs, separated
    1/2 cup baking cocoa
    3/4 cup boiled water
    1 3/4 cups cake flour
    1 3/4 cups sugar
    1 1/2 tsp baking soda
    1 tsp salt
    1/2 cup canola oil
    2 tsp vanilla extract
    1/4 tsp cream of tartar
    Chantilly Frosting (double if you want more):
    1 cup evaporated milk
    1 cup white sugar
    3 egg yolks, beaten
    1/2 cup butter
    1 tsp vanilla extract
    2 tbsp evaporated milk
    1 tbsp cornstarch

    Just made this and my husband and kids love it. It is still cooling in the fridge to get thick but I hear them keep going in the fridge to get a taste!! I've been looking a long time for a good Chantilly recipe & I have to say this is by far the best. It is perfect, just in time for the holidays!

    Chantilly cake is my favorite. As a kid I always had a Chantilly cake as my birthday cake. I still have it at my old age 😁.

    I made this a surprise for my dad's birthday last month and it turned out amazing! Only thing I did different was not freeze the cake portion overnight, jus covered and put in the fridge to serve later that day. Will definitely make again!

    Can’t wait to make this! Excited for this frosting recipe. Last time I made chantilly frosting, was too liquidy and the cake absorbed it and got soggy. Was ono tho!

    Should I grease the pan or place parchment paper around. I am told with chiffon cakes you do not grease the pans BUT will the cake stick to the pan and be hard to remove?

      I'm sure you can reduce it. Maybe start off by cutting it down to a quarter. Then try it by taste and adjust accordingly.

    I just made this and was delicious. My cake wasn't as light as Liliha bakery but totally 100% my fault because I am bad at separating egg yolks & whites. Mahalo for the wonderful video, I was able to have my favorite for my bday.

      I know I'm late here but I learned to make it easier to separate egg whites, use a slotted spoon! Works like a charm!❤

      This type of Chantilly cake is a Hawaii thing, you won't find it in the mainland, that said my son moved to LV 10+ years ago and on my visits (from Hawaii) I have taken him this cake, I used a soft cooler with blue ice on the botton and hand carried it, it got there fine and still cold, Another island favorite restaurant recently opened in LV called zippys and they make a chantilly cake and my son said it's pretty
      close to the Liliha Bakery one which is the best on Oahu

    The filling between the two layers should not be the chantilly frosting it should be a more pastry cream/pudding filling, I imagine this recipe makes for a sugar rush cake

    I have a question about the egg whites. I noticed there was a small amount of yolks in your whites & "chefs" are always saying you can't get stiff peaks & have to throw it out & start over. I always believed them & would just throw it away. If it worked for you, then I'll never do that again

      As long as it’s a small amount it’ll be ok I believe it’s because of the oils from the yolks in the whites that make it have a more difficult time forming but if you have a small amount in it you should be fine and they’ll still form peaks
