The only problem with this prep is that when you bite into them the peanut butter mix will come squishing out. I would suggest that you paint the first bit of chocolate up the sides of the cupcake paper holder and then follow on from there as demonstrated in the video. You can always shave of the little extra bit of chocolate to smothen the edge. And then you have a fully enclosed home-made peanut butter cup :)

The whisk probably won't be strong enough because the mixture is very thick, but you could use something like a wooden spoon, and just make sure everything is very well mixed.

Because the water is hot but cooling down it will never over heat the chocolate. Plus once it's melted you can snip the tip of the bag and pipe the chocolate. Great for decorating.

Yes, but in that case I recommend making a chocolate ganache instead of using melted chocolate, otherwise it will be too hard to bite. Chocolate ganache is very easy to make (just google), it's basically chocolate mixed with heavy cream to make it softer and richer.

Good tutorial but I like that totally enrobed in chocolate look. What I do is after putting the peanut butter filling in and banging it down to level, I go around the edge with a toothpick to pull some of the filling back from the sides. That way when I pour the chocolate on top, it flows into the area between the paper and the filling giving the candy an overall encapsulated look much like the store bought ones.
As everybodyedits001 mentioned above, soy nut butter might be a great option! Maybe even nutella too. You could do caramel too but you'd need to tilt the chocolate layer so it comes up the sides a bit, otherwise the caramel will seep out.
The sugar here is just to sweeten to taste, it doesn't provide anything structural in the recipe, so you can leave it out if you'd like. I don't know if it will taste good but whatever tastes good to you is perfect!
Whoo I popped them in the freezer and oh the chocolate and the peanut butter tasted heavenly! Instead of using a cupcake pan thing I used a measuring cup lol and it is pretty dang big.
I used natural peanut butter, Smuckers brand. Basically just ground up peanuts with a little salt. You can use any kind of peanut you'd like though! If you want smoother peanut butter filling, you can use the smooth peanut butters with partially hydrogenated oil. I don't like that partially hydrogenated oil so I just use natural.

Cool, welcome! I'm sorry, I'm not understanding your question. I think you're asking if the chocolate melts if you leave it at room temperature, and it won't. It will stay solid.
I use the microwave method to melt chocolate as well, double boiler method is too much effort lol. I tried this recipe as well and even tried out the TWIX chocolate :)
You can also multiply the whole recipe by 10 and make a peanut butter cup for a really bad day

Sounds good! If you want a softer chocolate experience you should make a chocolate ganache (with cream).
You toss it in the freezer after that layer briefly to set it, but it never really freezes, just chills.
I'd suggest if you want to fancy the taste up a little bit, add a little salt along with lots of crushed peanuts for that peanut butter cup texture
