Traditional URDI BARA by Aunty Molly

  • Aunty Molly's Urdi Bara brought back memories of my great-grandmother, and the simple, traditional food I grew up on. Recipes like this are special to me, and I'm happy to share it with you today!
    Aunty Molly made a large batch, but I will give you the recipe for a small amount.
    Yields 10-14 bara (depending on the size)
    You'll need:
    1 cup of flour
    1 cup of soaked, washed and freshly ground urdi
    4-6 bandhania/chadon beni leaves
    5 cloves of garlic, minced
    hot pepper (to your liking)
    1/2 teaspoon of turmeric
    1 teaspoon of yeast
    salt (your preference)
    oil for deep frying
    In the video, I referred to bara as a "fritter". I think it can be a fritter or flatbread, depending on how you fry it and how you eat it.

    Trinidad, Jamaica, Fiji and Mauritius, Tobago & Guyanese Prepares some of the most delicious Fusion cuisines..My wife is Puerto Rican and her neighbour is from Trinidad and this lady in her mid 70s prepares some of the most sumptuous dishes I have ever tasted..

      @@TasteofTrini Hmm! not only her even my father was good cook and also my 2 brothers..We are very multicultural..Because of many marriages done at my paternal side abroad outside India..So we aren't those Typical Indians..Even I am settled abroad for the past 20 years now and my wife is puerto rican,My older brother wife is Filipino & I got mixed breed cousins in New Zealand,Romania,England and also in America..That's why I grew up eating all sorts of foods including various Meat without any Taboos attached..I can also prepare German, Vietnamese and Puerto Rican cuisines..Besides typical indian dishes..I have many Hobbies..My son is of Portuguese, German, Spanish & Indian origin..He is from my first marriage..
      Just look at me..Sorry I didn't intend to bore you with my ancestral History about aesthetics..But one more thing ..I love Awadhi cuisines such as the Moguls introduced in India..Iranian and farsi foods are sumptuous too..But above all Trinidad, Tobago, Guyanese , Jamaica, Fiji and Mauritius are most interesting to me..Because of the Cross Cultural inhabitants..For Example Puerto Ricans Prepare many dishes that has African influence in it besides spanish..Same like you got as Trinidadians..Mixture of Indians and various other culture..Isn't it wonderful to be different than the typicals..Now you got headache reading my Rants..Take Care Lady..

    This BAARAH apart from its rich taste it is also high in PROTEIN , I am so happy that our Trini and Guyanese sisters are bringing back the old time way of cooking on the You Tube . This ia our true culture and we should share it with our grandchildren.

    Thanks Aunty Molly for sharing. This was the traditional Bara here in Penal, Trinidad. The white flour bara gained popularity as a commercialized (CHEAP!) version. This one is older, tastier and more nutritious. I have had bara in North India and Nepal and it’s made with the same Urdi.

    This took me down memory lane. I remembered my Mom used to make this. It made a heavier but more filling and satisfying bara....but it was delicious.

    We have something similar to this in India called medu vada. It's made with hulled urad daal (so it's white to begin with), that you soak for like 45 minutes or so, and grind in a blender to make a paste. Then you fold in grated ginger, curry leaves, and whole black pepper (we like it spicy!), and deep fry it. I've always wondered what to do with the whole urad daal with the skin on, and this looks like it'd be perfect.

    Thats the only type of bara I make and I am not old school. I make it very often and we eat it with tamarind chutney. My mom taught me to make it and its always a hit. Very rich it protein, fiber, iron and vitamins. Good food for vegetarians

    In Suriname they still make This 'traditional' Urdi bara. The only difference is, they make a hole in the middle. It's a Very popular snack.

      I’m from both Suriname and Guyana background... my family made these as well and, called them Bara... So when I visited Trinidad you can imagine my confusion when I first saw and heard about doubles :) I was like this is similar to Bara that I grew up having...Anyway,I now have a better understanding that the Trinidad doubles birthed to cut cost... so doubles is actually the offspring of Bara ... thanks for explaining .

      It was delicious! Hope you try it sometime. I've seen many Guyanese people make bara or vada. Maybe you know it but by a different name and maybe different ingredients.
      The garden is nice. It gets colder here than FL, and not a lot of tropical trees grow here like they would in FL.

      Taste of Trini I do know about bara but we use different ingredients. I would definitely try your recipe. I’ve never been to Texas hopefully I’ll visit by 2021. My family and I are planning a road trip across the great United States of America 🇺🇸

    When i attended primary school in the 1950s, this was sold outside the school gates. It cost 1 penny with chutney i.e. 2 cents. We looked forward to this every recess time. The phoulourie was 1 cent. Nice to see a comeback, brings back memories.

    Can't wait to try this. My mom would always talk about how our grandmother would make "urdi bara". But she never knew how to make it.
    I have urdi dhal right now in the fridge. Can't wait to surprise her and make it. Will let you know how it turns out.

    my grandmother does still make this especially carnival weekend. To me it has a special taste when the older people make these things than the younger people. I guess the experience the older heads have

      Yeah, it's not used a lot in Trinbagonian cooking. It's used usually in the Hindu community for poojas. The bara is delicious! Hope you try it sometime.

      Yes actually chole bhatura is doubles. Chole meaning channa and bhatura meaning bara.

      Che ryl Yep, which would makes sense because chole bhatura comes from East UP which is where most Indo-Trinis ancestors are from.

      Yes, it is like bhatura and puri. It's a recipe that was brought over to Trinidad and Tobago from India when my ancestors came as indentured labourers.

    I never had urdi bara, and I was born in T&T I will try to make it but with urdi flour I find it's to much work with the urdi peas, my question to you is this do you know how to make "Traditional "Pholourie ,the pholourie I knew is nothing like what they make today. I am 76years old and I will like to taste them old time Traditional pholourie.

    in the old days there was a "bara lady" that would pass by, set up her little tray and sell bara, kurma jelaby and a few other delicacies.....before the days of a doubles vendor on every corner.

    What a fabulous recipe! I love the technique for removing the hulls. Bara is the Welsh word for bread. I'm not even sure it's a coincidence because Welsh is an ancient Indo-European language.
