Yes, you can do that also. I wash it with lime/lemon and fry it for enough time, and I've never had that issue with the itchiness. Also, cutting the leaves really small helps too.
Yes you can! These was actually really crunchy for a while until I wrapped them up. Yeast actually keeps them more crunchy than baking powder. If you want it more airy, make the batter a little more runny and mix it more to make it airy.

Nice! You don't have to blanch it but if it's frozen solid, I guess it might be a easy way to thaw it out.

I always thought you had to pre cook the dasheen bush a couple minutes before making saheena so it doesnt itch your mouth. Great recipe though.

This is like pakoras. In India, we make the layered variety. We never use all purpose flour. Indians call this Patra or patroda.
