Katsu Curry For the curry: 4 carrots, cut into small pieces 1 onion, cut into small pieces 1 lb potatoes, cut into small pieces 1 tablespoon tomato paste 3 cups chicken broth Golden Curry Japanese Curry Mix, 6 servings (4 cubes) Salt and pepper to taste For the Katsu 6 chicken breasts pounded thinly Salt, pepper and garlic powder to taste 1 cup flour, seasoned with salt, pepper, garlic powder 2 eggs with a splash of milk, whisked 2 cups panko seasoned with salt, pepper, garlic powder Oil for frying To make the curry, add some oil into a pan and sautee the onion for 5 minutes sprinkle a pinch of salt. Add the tomato paste if using and cook for a minute. Add the garlic, ginger, carrots and potatoes. Add the chicken broth. Let this come to a boil then lower the heat and cover. Cook until veggies have softened about 12-15 minutes. Add the curry mix cubes and stir until dissolved completely. Cook until thickened, about 5-7 minutes. In the meantime, pound the chicken thinly and season both sides with salt, pepper and garlic powder. Dip into the flour, shaking off excess flour, then the egg-milk mixture letting the excess drips, then the panko. Fry until golden brown about 3-4 minutes on each side depending on the thickness. Serve over rice and enjoy.

This is exactly how I make my chicken katsu curry! Although I add a bit of keens curry powder because I don’t find the Japanese curry cubes hot enough for me
It's called rangiri and they do that in Japan when making curry bc they find it more attractive and the bigger surface area helps the vegetables absorb more flavor.
