Chappatti /roti/paratha eaten widely around world not just by us Indian/Pakistani so variation. We should try her way with our atta and see what happens.

Actually these are Nans rolled out thinner. For chappatis you need whole wheat flour. From the colour I assume what you used is all purpose flour. This is used for Nan, Romali Rotis and a few other flat breads, but not chapattis. That's why they come out hard without hot water and oil. You can make chappatis and phulkas without adding oil to the dough.
Maida knead with hot water n little oil it will not get hard Its very tasty with mutton curry, chicken curry Ofcourse not every day But its very tasty...
Parathas are thicker versions of chapati. We make chapatis with oil regularly in maharashtra. Since we get good quality finely milled atta we dont need much oil.

I used boiling water, then start kneading with a wooden spoon until it cools down. The hot is what brings out the softness coz, it kind of starts cooking the dough before cooking in the pan

For 3 cups of flour, I use 1 cup water and then keep adding little by little until the dough comes together

When one uses oil to make dough or while rolling; and, again to fry, it is parantha...not chapati/roti.
