    I tried this technique last night and made the most perfect, soft rotis ever! I used 195g boiling water for 200g atta and I was able to incorporate more water during the kneading. The rotis were a breeze to roll out. Thank you as always for using metric. I weighed out 40g dough per roti, very useful for the days you have to count your macros. Love that the dough has zero oil. We ate 8 rotis with dinner and the following day, I microwaved the remaining two to eat with anda bhurji. The rotis remained pillowy soft. Thanks as always 💗

    My moms tip is to use the flour as less as possible for dusting purpose as extra flour anyway hardens the roti when it is not hot anymore. For me she makes perfect roti specially the rumali roti 😊

      @Shady Queens, the recipe calls for 20g of Atta per roti which will turn into 40g of dough with the addition of water. I have always used 40-50g dough while making rotis and it turns out well every time. A little effort to watch the recipe properly before commenting will be appreciated.

    You guys in the comment section seems to have amazing lives.. I and my roommates live in Pune as we work for the IT corporate companies, so we make our own Roti's since 2018 and believe me if I say we make some of the best Roti's we have ever had since we were kids. We have to make at least of 30-40 Roti's every day and we are now pros.. 😂😅

      no there is not much significance of hot water because my mother never used hot water i my self dont use hot waterome people who dont get it right they need hot water it depends on kneeding and baking even salt is not needed. high blood pressure people shouldnt put salt to rotis.

      I make it with normal water but the dough and still it is soft. Add little oil in the floor.

      Don’t feel bad. This roti is not perfect. Those edges are jagged and rough. They should be smooth. Good luck in your effort- takes a lot of practice 😊

    Adding hot water to atta before kneading is absolutely a revelation to me.I have always added room temperature water. I'll definitely try this way. Thanks. Making rotis is a skill.

But have been using cold water up to now so will try boiling water tonight when I make a couple for my vegetarian Friday (Catholic!) ❤️.     I had never been able to master rootis but your precise measurements helped me learn how roti dough is different from luuchi and paratha. I also had to practice to get the proper thickness but within 3 batches on successive evenings, I was getting perfectly puffed rootis! And truth be told, even the early not-always-puffed roti were still delicious and khub noram!

    I m 15 year old passionate cook, I cook all sorts of dishes. Last time I cooked chicken biryani and my parents liked it but making rooti is something that I learnt myself.
    1st try- instead becoming a dough my atta came up to be a complete disaster, it became all batter and mushy.
    2nd try- not adding too much water resulted in a completely dry dough which ended up very badly but I soon added some more water this time but my rolling was not perfect.
    3rd try- making the dough was very easy for now but the rolling seemed pretty bad I got uneven surfaces and the surface which had more thickness ended up being raw.
    4rth try- I guess I somehow learnt to do everything but the rolling was still not perfect but not as horrible as the last three tries.
    5th- I watched tutorials on UA-cam showing how to perfectly roll a dough and by some magic I could now make circular shaped rooti very perfectly without any problem.
    All I can say is making rooti is something you need to experience by doing it, recipes did give me idea but not the experience. Thank you for all your interesting recipes!!!

    You guys are my hero. I tried this today and they came out to be awesome. A few burnt marks but I am learning. This is the best recipe on the net. I tried several recipes including adding baking soda, yeast, milk etc. Many Indian aunties share their recipe but do not give away the "secrets" for making good rotis at home. This recipe is so simple and well explained with a scientific thought. You guys are my inspiration. Keep up the good work. God Bless.

    My father makes roti everyday. And he kneads it in such a smooth dough, it is like cotton. And when he rolls the roti, he rolls it so perfectly, it is as round as a moon in full moon night. Amazing. Over here, it is also perfect. 👍❤️

    This method works! I tried it yesterday. I made rooti for the first time. Although the dough was initially slimy as I must have miscalculated the proportion of hot water, the rootis puffed up on tawa and it was super soft and tasty. Thanks a lot!!!

      When we moved to US we had same problem. Even my mom who is pro at it couldn’t make soft ones. Well turns out how the flour is made is also another aspect of it. Depending on where you live find out what’s the best brand. In US sujata gold is the best one found in Indian grocery stores.

    For someone who has just begun making Chapatis.. I initially learnt it with regular water and oil... They turned of fine but honestly I felt the hot water really makes them softer and I focused on how she rolled the dough .. I tried it and they actually turned out pretty round. Thanks for the video was really helpful and enjoyed the chapatis 👍👍

    Followed the recipe exactly but maybe my flour had less gluten and I didn't use salt, therefore there was a lot of water for the flour, after adjusting for consistency and making the dough properly, this was the best roti I have ever made in my entire life. It was extremely soft, round, fluffy and absolutely perfect! My parents, my brother and I loved it so so very much! Thank you so much for such a detailed, scientific, methodologically broken down approach to making rotis! It was perfect!! Thank you so much!

    I have to say i have been making rotis since i was 14 and still i loved watching this video, though i can make 1 roti in 1 minute..but still nice video.

    In my family, it was only my mom who used to make perfect soft rotis. But last year we lost her. Since then, its me who is making roti which never used to be soft.. Today I tried this technique .. And i am very happy to let you know that finally I am able to make damn perfect roti for the first time in my life.. They are so soft and each one of them got fluffed up. I have 3 people in my family and guess what, i have no left over rotis today. All are finished at one sitting. Thank you so much for teaching each and every tips.. This is really very helpful.. ❤❤❤

    If anyone complains about the choice of recipe - show us another video of making rooti that is so meticulously put together - temperature of water, particular factors that are affected by water, etc. Each of Insiya and Saptarshi's videos is a delicate marriage of art and science...laced with nostalgia.

    I am a beginner cook. I have tried multiple times to make rotli, but it never came out this soft. Thank you for sharing this video. I didn't use boiling water. I just used the hottest water that runs from my faucet, which runs really hot. The technique you mentioned to make the rotli nice and round really helped. Thank you!!

    It's one thing to learn from a cookbook...sometimes with trial & error...but your concise directions are
    utterly fail proof!🙏
    By the way...I love these brushed with apricot-kernel oil + rose petal jam,

    I'm in such shock; I can't believe that I actually succeeded at making phulka roti after watching this video! And it was soft still the next day! My family is from Assam, so rotis have been an experiment after eating mostly rice all my life.

    This is most perfect recepie for roti.... I have been trying to make the fluffiest and soft rotis for quiet a while but couldn't grasp the rolling technique ..... This tutorial helped me a lot❤❤

    Besides the impeccable production of the video, by following this recipe I ended up with the best rotis I ever made in my life. They are soft, and keep their softness for a long time. I've put them into a plastic bag and saved them for the other day. Kudos guys!

    I watch this video often because its so soothing - almost meditative :)
    Question - what do you guys think of using those tortilla makers for chapatis? Some people say that the tortilla pressed dough isn't as thin as chapatis, but I've seen women on youtube pressing them 3 times for desired thickness. The second thing I've heard is that the tortilla maker should only be used for corn tortillas, not flour ones - but I find that to be a bit suspect, because there's thousands of indian women in homes without domestic help, using tortilla presses to make chapatis for their families.
    Could you'll do a video test of rolled atta, versus tortilla pressed atta? Talk us through the pros and cons? Maybe how to achieve the perfect chapati by using a quick and easy tortilla press, for when we're in a rush?

      Chapatis have oil in them Roti are just flour and water, they are not the same thing

    Guys, I just wanted to share my gratitude. I had never cooked before the lockdown. So in the first few days of lockdown I found myself stranded. I started cooking by looking at videos on UA-cam. For the second dish that I cooked was your peyaj diye daal. I am a huge daal fan and pretty hard to impress. I didn't have much expectation from my own daal and was just cooking so I don't starve! However, your recipe was simple and perfect. Reminded me of childhood and maa's daal. Since then I have tried many of your recipes and they have all turned out great. I really appreciate you guys sharing videos of seemingly simple and everyday recipes along with special dishes! Your mutton recipe was perfect too. I can safely say now I can cook because of you guys. Thanks to your videos I didn't starve. And my god, with your presentation, your videos are an experience to behold. Thanks again.

    I could never make round rotis before marriage. Marriage teaches you lots of things. It basically teaches you to go outside your comfort zone. Now I make perfect rotis. It took me a month to learn with daily practice.

    Wow. I haven’t seen a more perfect rotis for a while. Great details. I was under impression that little oil is necessary to make soft rotis but looks like hot water will do just the same. 👍👌

      Yes, many people add oil and you can too if you prefer it. We usually don't. :-)

    Wow! It's nice to see someone teaching thoroughly making of a very basic food. It's a perfect explanation of the process. I only want to add that different atta behave differently. And one more tip. If you use maida in the time of rolling the chapati, it is better. Atta leaves a lot of residue on your chapati and that tends to make it a bit dry.

    I knead the dough exact same way using knuckles, but pouring lukewarm water, little by little while making the dough and the rotis are rolled out in circles with smooth edges.. and place it on the fire, and it poofs up..
    It stays soft the whole day!😊

      Many people find it difficult to pour just the right amount and end up adding more water than needed. By dipping your knuckles in the bowl of water towards the end there is no risk of accidentally adding more water. We've thought of this video from the point of view of a beginner, but thank you so so much for watching :-)

      Bong Eats oh, i also wet my hands to knead, by the end, when I’m almost done kneading... by the way, i keep thinking, how helpful these videos would’ve been if they came out like a few years ago, when I didn’t know to cook! Your videos are beautiful to watch.... I try to inculcate some of the ideas you give!
