I used a round giant cookie cutter to make individual cakes out of the sheet and topped vegan whipped cream and fresh strawberries. The pastry chef guest demanded to see the recipe and was flabbergasted in shock!!! Your cake was the star of the night! Thank you so much! I made this today and it was super moist and absolutely delicious! I used one 18 cm pan and baked it for about 40-45 minutes. Filled it with homemade raspberry jam and vegan whipped cream and put the rest of the whipped cream on top of the cake and decorated with fresh raspberries. This cake recipe is definately a keeper!

The first time I made it I split the suggested batter amount between 2 - 6.5” tins and they were THIN like pancakes. And no there was nothing wrong with my baking powder, I tested everything. Here are the ingredients: 1 cup plant milk (I used Elmhurst Cashew) 2 tbsn white vinegar (I used ACV) ……………………… Vanilla ( used 2 tspn) 1/3 cup oil ( I used 1/2 room temp coconut oil and 1/2 vegan sour cream about 1.5z each plus 1 more tbsp sour cream) ……………………… 1 & 1/2 c flour ( I used Swans cake flour) 2 tspn baking powder 1/2 tsp baking soda 3/4 cup white sugar (I used Zulke Vegan) Pinch sea salt I doubled all these amounts and split it up into 2 - 8.5” tins. It ended up approximately 3 & 1/2 cups of batter per tin. Baked as she suggests for 35 ish minutes until toothpick or skewer comes out clean. Came out super moist. Make the day before and wrap in cling after cooled to room temp overnight to seal in moisture. Really good for a vegan vanilla cake✌🏽
I will be using this recipe LOTS in the future. The cake turned out amazing! The only changes I made was using mashed banana instead of oil and added almond extract for a little extra flavor. I added berries and coconut cool whip and it was scrumptious! Thank YOU!

This is a good sponge recipe. I sometimes add a tablespoon of tahini (sesame paste) to a vegan cake mixture. It somehow adds that bit of egg yolk richness into the cake. Of course you have to make extra sure no one who might eat it has a sesame allergy.

I did make a few arrangements to the recipe though: instead of 1 1/2 cup of flour I put 3/4 cup for the vinegar i put 1 1/2 tbs instead of 2, (might even just put 1 tbsp because it had a very slight vinagry scent to the cake and if ate alone you would be able to taste it) Other than that the cake recipe worked wonder! Mini tip if its the first time making the cake and you're a lil slow. i recommend prepping the dry ingredients first then the wet as it prevent your milk from over curdling.
But if you add whipped up aqua faba (water from can of chic peas) whip it up like a meringue and fold it in, makes a huge difference especially when making a Swiss roll. Just a suggestion of course.

I'd split the batter and bake one after another, instead of everything in a single swoop. I agree - the bake time would be much longer and it may not come out as flat and evenly baked if you pour everything into one cake pan.

Hi - yes, sure you can. Generally when a recipe asks for 1 cup sugar, you can use 1 cup honey. For measurements greater than 1 cup sugar, I'd use 2/3 the amount. So if a cake asks for 3 cups sugar, I'd use two cups honey. For 2/3 cup sugar, I'd use 2/3 cup honey. Hope that answers your question :)

I'm pretty sure, yeah. Vegan milks are basically water with gumming agents anyways. I think the idea is just to incorporate the acid into the mixture for the most part. You could probably try incorporating the vinegar quickly at the end (before the reaction finishes) or use a dry acid like citric acid and only add water at the very end.

The cake looks good but the only complaint is you should have cut the Cake so we can see how it looks on the inside
