Written recipe - these are some changes I did for a less sweet cake :) 1 cup milk (I used whole milk ) 2 tbsp vinegar or lemon juice ( u can use both ) 1/3 cup of vegetable oil ( I used butter ) 1.5 all purpose flour 2 tsp baking powder 1/2 tsp baking soda 3/4 cups of sugar ( I used half cup of sugar) pinch of salt
is there any way around using a thermometer for the sugar?... I don't have one and would prefer not to buy one just for one recipe...but this does look really good...
I haven't tried this myself but my suggestion is to use swiss meringue method instead of italian. Heat up the aquafaba and the sugar first just until the sugar is melted, then whip it.
sofi n I‘m not the author but I‘m sure any vinegar with a not too strong taste will work just fine. I have used acv for baking many times and it worked out for me!

You just have to listen carefully and note the recipe by yourself. There you have proportions for cake (cuz I'm making my own filling so I don't need proportions for meringue): 1 cup almond milk 2 tbsp vinegar 1/3 cup oil vanilla extract 1 1/2 cups flour 2 tsp baking powder 1/2 tsp baking soda 3/4 cup sugar salt

It's called Chantilly cake and I absolutely obsess over it. The Bakers at Whole Foods uses fresh blackberries. I was wondering . . . do you think the meringue can be made with monk fruit instead of sugar?
I didn't make THIS exact recipe but I made meringue once and it just tasted like regular meringue. You can feel chickpea but only if you won't use enough sugar.
How about cutting the cake in the end, so we can see if the sponge is really fluffy?

I used one Tbs ACV and one tbs water and it was delicious !

How long does the Aquafaba keep its whipped consistency?
Kind of like whipped cream - few hours. Might want to keep separate from cake and beat the Aquafaba before serving

No don't use water instead of milk, just use a dairy free substitute, i find soy milk is best for baking.

Sure - I don’t have a ratio for you but I think coconut sugar is a lot less sweet, you might have to add quite a bit more.

Why do you need add vinegar ?
Good question! The vinegar reacts with the baking soda. The combination gives the cake a nice lift and some fluffy texture.
