Vegan Vanilla Cake

  • Ingredients:
    Dry Ingredients:
    2 1/4 cups flour
    3 tbsp. cornstarch
    1 tsp. baking soda
    1 tsp. baking powder
    1/4 salt
    1 1/2 cup non dairy milk (almond, soy, cashew)
    1tbsp. apple cider vinegar
    3/4 cup bone char free sugar (Zulka brand is what I use)
    1/3 cup flavor less oil (vegetable, sunflower, canola, grapeseed)
    1 tsp. vanilla extract or if you want a vanilla bean cake I would use 2 vanilla bean pods
    Instructions:
    1. Preheat your oven to 325 F. Get two 6 inch round pans with parchment paper by greasing them up with a vegan based spray (such as Vegalene).
    2. In a bowl, sift all your dry ingredients ( flour, sugar, baking powder, baking soda, cornstarch and salt) together and put that aside
    3. In a separate bowl, combine your wet ingredients (non-dairy milk, oil, apple cider vinegar, and vanilla extract). Let this set for 5 minutes until it curdles and whisk.
    4. Pour your wet ingredients slowly into your dry ingredients and mix throughly with your HAND MIXER.
    5. Divide the batter by filling it up to 3/4 of the way, don't over fill.
    6. Bake cakes for at least 25 minutes or until a toothpick is inserted and comes out clean.
    7. Remove cakes from oven and let it cool on a wire rack for 10-15 minutes. Once cooled, you can easily remove cakes from their pans
    8. Enjoy it with/without frosting. You can store your cake in the fridge for at least 1 week if covered properly with plastic wrap.

    Just made it and y'all you gotta make this!! I timed it for exactly 25 minutes and it came out perfect! Not a single crumb left on the toothpick!

    This is a solid recipe. I'm glad I was served this video four years after it was made. The flattening at the end I have never seen done before. My cakes usually come out flat but sometimes they don't depending on the time of year. Extreme seasonal changes where I live. Going to try the press technique. 👏👏👏👌🦄👍🍰

    The way i keep my cakes flat, i wet paper towel, fold it long ways and wrap it with foil. Like a belt. And tape it around the outside of the cake tin. It works wonders 🥰

      Dense is when there is still liquid in the cake which make it gooey and dense

    What would happen if I didn't include the cornstarch? What's the purpose?

      I have never tried it without the cornstarch. It makes the cake extra moist and thickens the batter.

      to make your cakes become more softer. corn starch is good use to make things thick such as vegan lemon meringues, jellies, and much more.

      coconut milk by the can, I have never tried but coconut milk with the other nut milks yes. Hope this helps

    Unfortunately this recipe did not work out for me. I followed this recipe step by step and for some reason the cake never rose and was very doughy. We did not over beat and we even made a second batch to make sure but same result. :/

      oh no! that's unfortunate. Hmmm did you set your oven at 325F? Sometimes oven temps can alter the rise of your cakes.

      You have to make buttermilk, which is when you add ACV to milk which will thicken the milk. Probably wouldn't use coconut milk from a can but a bottled one yes

    Not very spongy and sweet texture,
