FRESH PEACH COBBLER WITH PANCAKE BATTER
* 6 ripe peaches
* 1 stick salted butter
* 1/2 cup brown sugar
* 1/2 cup white sugar
* 1 cup pancake mix
* 2 cups whole milk
* 1/2tsp each nutmeg & cinnamon
Preheat oven to 375.
Boil peaches for 1 minute, add to an ice bath until cool to the touch. Add 1 stick butter to casserole dish, divided if using multiple dishes. Place in oven to melt & brown. Peel and slice peaches. Add to a pan with the sugar, sauté on medium high about 10 minutes until all sugar is dissolved and peaches have released juices.
Whisk together pancake batter with cinnamon & nutmeg, add milk and whisk until combined- add extra mix if too thin. Place sautéed peaches into the melted butter in casserole dish(s), cover with batter- do not overfill, this will rise. Bake for 40-45 minutes, serve warm with a scoop of ice cream!

Finally a peach cobbler with fresh 🍑 peaches not canned peaches.
Just a tip for peeling the peaches. Once blanched use the edge of a knife to grasp the edge of the skin and pull it off.
