    7 fish must be American-Italian tradition. Canadian-Italians we are into 10 different kinds or more 😂. This year will be maybe 3..... no big family dinner stay safe friends . Enjoy! Buon Natale

    This is your recipe so I am not going to tell you how to make it, But I will tell you that draining fried anything on paper towels is an amateur mistake. Always use a wire mesh rack! The paper towels absorb the oil but leave it against your food which makes it soggy after a very few mins. Also for a much crispier product you will want to bread and let it rest and allow the flour to be absorbed somewhat by the shrimp sweating as you so delicately put it. Then toss it back into the flour right before you put it in the oil. This will give you more adhesion for your breading and you won't lose as much of the seasoning to the hot oil. You are probably going to take this down pretty quickly since it refutes your recipe. I would so like it if you were able to take constructive criticism. But alas, your Italian and your ego might get bruised. lol Quick guys, grab this tip. I am a retired chef of nearly 50 years in the business. I know what I'm talking about. :)
