    In Morocco we don't put cinnamon with cumin or with garlic cinnamon goes well in sweet and savory red onion and raisins tagine. also we leave cumin until the end like last five minute of cooking because if you add cumin at the beginning it release that bitter taste to the dish!
    P.s these are my grandmas cooking advice 😉

    This is the tastiest feed I have ever made. I make this once or twice a week everyone absolutely loves it, great dish for cleaning out the fridge of all the left over veg. It doesn't matter what you put in it it always tastes great!!!!!!

    I did tagine zitoune ( with olives ) but instead of chicken I put smoked tofu :D

      Ras el Hanout in veggies is a bad idea, it kills their taste bcz its strong, in Morocco we use it with lamb or beef,

Because you could make one I am just not sure you can get the right type of clay for it but it's worth the try and also I wish I knew when you were in Morocco because I happened to be there last year too to see my family..     Thanx, guys! This is a great recipe and very easy to make. I've got a ceramic Tagine pot but I'm not sure if I can use it on the cooker or in the oven. Unfortunately, I cannot light a proper fire like they do in Morocco.

      You can use it on the stove top (gas) if you use something to diffuse the heat. Amazon actually sells that. However, I also used a wire thinggie meant for the bar-b-Q under the tagine and it worked fine. Oven is just fine too but not as traditional . You might not get the same evaporation/condensation that makes a tagine so special.

    Looks delicious, but I don't know why, when I think of Tagine I think of Aubergines. Thanks for showing the Flatbread recipe, just what we were looking for.
    All is well with us, we just recieved our order of your first two books. My wife gifted me the third one for my birthday and I am pretty much doing recipes from there nonstop since, so far all were exceptionally delicious and very easy to make, so looking forward to doing some from the other books as well! 😁

      We're with you Christian, We just couldn't find any at the moment. We're big advocates for cooking with what you have and letting your imagination do the rest, we'll have to do that a bit more these days.

      Chickpea flour is gluten free so it might come put more like a pancake. Delicious all the same. If you have no veg stock just water and a pinch of salt would be fine.

      Hey Alice, I think it would definitely work in a slow cooker. IF you want any char or extra flavour in a particular ingredient maybe fry it a bit before you add it. :D

    Looks delicious. I made my first flatbread the other day, but it came out more like naan, I guess because I had a hard time rolling it out thin enough. Tasted great though. If you were going to bake it, how would you do that? Love all your recipes!

      I'd make sure the oven was preheated to its top temperature, then if you have a casserole dish or any oven dish I'd have that in the oven while its preheating too. Then once its hot take it out dust it a little and add your flat bread to the hot dish and bake, you'll have to eye ball the baking time as it differs with different thicknesses. The thinner the better though.

    You know what would be really good on top instead of mint/parsley how about za'atar? That would definitely keep it authentic. Great recipe, thanks

      Spinking of mint on tagine is not authentic, Coriander would be the thing but added at the beginning and again 10 minutes before end of cooking, not raw. Zaatar in Morocco is actually wild Thyme, not the spice blend used in Middle eastern cooking.

      Has to be done. There's always a native of our recipes origin in the comments, haha. Any starchy root veg would replace the sweet potato. 😀

    What if you can't get plant based yought, with isolation in I can't go anywhere for soy yoghurt. My tiny town is safe

      I've seen flatbread made with flour and water, or plant-based milk! It won't be the same, but if you look for the recipes you'll eventually find one that's pretty similar.

      You could make it almost like a tighter pancake recipe. We often use a baked sweet potato or starchy vegetable mixed with flour and water and some spices to make a doughy batter. You'll just have to slowly add the flour and water ( or milk ) until you get the doughy consistency.

      At 1:18 he is saying "courgette", which is British English for zucchini. At 3:27 they are saying "ground cumin"

      Would never have guessed courgette - thanks. Caught the ground cumin fine, I just happened to have the subtitles on at the time. Funny thing, in my part of the world we call them squash. Again, thanks for the info.

    I Love it, InLive it. , I Love. It so much. My Hubby Loves it. So much. . It is a really Good Wholesome meal. I always add maybe 2 or 3 carrots . . I am not a Lover or regather ( was not a) Lover of Courgette but, I took your Advice & cook it with Spices. Even Curry Powder as ye say. But it is really Delicious
    Well. I will add what ever I have & if we have it for lunch it is even nicer for dinner. ……. We. Make enough. ….. . Good idea to make it a few hours before you need it , take it off the heat before fully cooked & let it cook in ambient heat & really is Divine. . It absorbs the Lovely flavours. . It is so hard to say I have had enough.

      We're just trying to be inclusive. People find it hard to make recipes without oil without hearing that its oil free, and people struggle with adding oil to oil free recipes. It's an unusual barrier. Once people like the recipe we're happy

    This looks delicious! But I wouldn't call this a tagine, Wrong cooking method, wrong flavor profile. And the flat bread is more middle eastern not Moroccan.

    Just so disappointed with the western way of just erasing things. This is not tagline this looks like how I make a vegetarian curry. At least try and stick some of the basics.
