BAKING WITH VEGGIES? ZUCCHINI BREAD RECIPE

- FULL RECIPE:
2 Cups Shredded Zucchini
3 1/2 Cups AP Flour
2 TSP Cinnamon
1 TSP Salt
1/2 TSP Baking Powder
1 TSP Baking Soda
4 Eggs
1 1/2 Cups Sugar
1 Cup Oil
Optional: 2 Cups Raisins, Walnuts, or Chocolate Chips
Directions:
Beat together oil, sugar, and eggs. Add flour, baking soda, baking powder, salt, and cinnamon. Mix until well combined. Add zucchini, and your choice of fillings.
Divide into three greased loaf pans. Bake at 375F for 40 minutes, until firm.

I love zucchini bread... I saw someone mention pear bread.. I made two loaves of it this past winter and WOW! It’s the bomb. I make banana bread at least once a month. And when it’s not hot summer temps I bake bread once a week! No low carb in this house.

The secret of zucchini bread is the additions you can put in it! Like raisins, dried cranberries, dried cherries, pineapple, apples and different spices like cinnamin, apple pie spice, punpkin pie spice, nuts etc.
A secret of using dried fruits is to soak them in hot water for they soften and become chewy!
We add chocolate chips!!

My favorite way to make it is using zucchini, yellow squash and carrots. When you slice the bread you have all the colors showing through. We've added walnuts and/or chocolate chips too. So good.
The key to making a zucchini bread is to squeeze All the moisture out of it before mixing it in the batter. It is too watery otherwise when you cook it.
I have a chocolate zucchini bread that you make in a blender that you can’t tell has any zucchini in it. Add chocolate chips and it’s delicious!

Looks very good!! To blasted hot out in Northern California to be baking; 118 degrees of dry heat. I grate the zucchini and freeze it. Will try this recipe when it starts to cool down cause I really like it.

I am one of those people that does not like zucchini. So when I make anything that calls for zucchini I will use patty pan squash. I really like using the patty pan. I had never thought of it before but I don't think I have ever seen all plant patty pan squash, and if you haven't why not. Since you both love apple pie that would be a good thing to make.

We had Zucchini casserole all the time when I was a kid. I hated it then, but I enjoy it now and then as I have gotten older. It is pretty much shredded zuccs, milk, cheddar cheese and bisquick.

Zucchini Casserole, 350, 9x13 Dish, PAM, Tomato Sauce, Thin Slice Zucchini, Thin Slice Tomato, Shred Mozz. Add 2nd Layer, Top w/Tomato Sauce, Grated Parmesan.👍

You both are darling. Love how you go shopping for Zucchini... I would recommend doing food play lists.... like all baked sweet pies like cherry, then all baked savoury pies like chicken pot pie. There is a zillion cookies. If you can, get a secret taste tester each video... or take a bunch to the picnic.

Another fun video by you guys. They are enjoyable whether they're about cooking, tours of the veggie fields, or anything else you choose to video. Sadie is really warming up to the camera. Even if you forget to warm up the oven ahead of time lol! I was going to comment that I always love putting raisins in my zucchini bread but then Sadie said she doesn't care for them. Good substitution adding the chocolate chips though. Can't go wrong with them!

Here's a Kitchenaid tip. That beater that they used to mix the cake also comes with a rubber spatula type on both sides. That way you don't have to stop and scrape the bowl during mixing food. It scrapes it pretty well , all by itself. They only run about $10.

You a very good list going. When that’s exhausted ask again. A thought for you.. when zucchini is plentiful (NOW) I make zucchini boats and fill them with enchilada stuffing. I use zucchini instead of tortillas. Give it a try…when your plants start producing. lol, I watch Veggie Boys.
