My favorite simple dish right now is pasta with butter and Gochujang sauce (not just the paste). Gochujang is made from fermented red chili paste, and the sauce I buy has toasted sesame oil, rice vinegar, and soy sauce added. Talk about flavor town! I think you said some butter was allowed, right? So that makes this a two ingredient dish.

Instead of salt & pepper on the potatoes, I would’ve gone with an Italian spice mix. Alessi makes a “dipping spices grinder” with a good mix meant to go onto oil for dipping bread into that I use. Maybe instead of just oil in the pasta, get a jar of sun dried tomatoes in oil, then you can have bits of tomato in there and that flavored oil in the mix.
And I’m not just saying that b/c I’ll regularly do pasta with those tomatoes, capers, Asiago & dipping spices…

Made a jacket potato in my air fryer and it made it even better than in the oven. Crispy on the outside but soft and fluffy on the inside. My poor oven hasn’t been used since I got my air fryer for my birthday the start of this month. Jacket potatoes are such an under rated food too, the perfect vessel for so many toppings.

@@Boogie_the_catI read the general rule of thumb is minus 10% of the temperature and around 25% of the cooking time for the oven. So for 1 potato I did 200°c for 20- 30 minutes depending the size. I check it after 20 minutes and adjust from there.

Have you ever heard of smash-baked potatoes? For me, that made me eat a lot more baked potatoes recently.
Basically, what you do is microwave a potato until it's hot, then drop it on the work surface so that it drives all that steam into the structure of the potato, causing it to burst open and become all fluffy. Once the potato is in this state, then you oven/air-fry it until golden brown and crispy. Absolutely delightful.

    Two ingredients ideas:
Dessert - whipped ricotta with nutella
Main - if butter is an acceptable extra, try gnocchi (even fun gnocchi like pumpkin gnocchi or spinach gnocchi if those are available in the uk) with browned butter, and add fresh sage leaves to your melting butter to infuse the flavour
Starter - make crepe like crusts using grated pecorino and top them with chopped canned pears

Costco here in Canada sells Olive Garden Italian dressing (I am sure other dressings are available). Cut a potato into largish wedges (6?) and coat liberally with salad dressing. I'd simply put some dark chocolate into the pastry, drizzle melted dark choc on top and then garnish with a tiny bit of salt.
As for the pasta, adding oil into the cooking water doesn't actually prevent sticking because oil floats and doesn't even have much contact with the pasta. The key is stirring. Stir constantly during the first couple of minutes of cooking and keep the water boiling (a simmer is not enough). And if you really want to use oil, try adding it after cooking and draining instead.

I just tried a 3-ingredient dessert from Fiji called _vakalavalava_ - yes, that is the real name. Got it off of Sorted, easy recipe.
    4 cups grated casava root
    1 cup desiccated coconut
    1can condensed milk
Mix ingredients together and place in a well-buttered baking tray(a 9"x9" will do). Bake at 180ºC/375ºF for 15-20 minutes until golden brown. Cool, cut, and serve.
It's nice on its own with plenty of texture and a mild sweetness. I like topping it with a little cinnamon and a toasted marshmallow. Lush.
Edit: Since you asked, I'd use a cark chocolate peanut butter cup in that dessert ravioli. I know Trader Joe's/Aldi North sells them, can probably get them other places, too.

I live in Florida so the oven for a long time is not a good idea lol i always do baked potatoes for 5-8 minutes in the microwave and then air fry them because if it's super hot, i can just put my air fryer on my back porch lol
The oil isn't meant to ever go in the water because it just sits on top. The oil that does make it onto the pasta keeps the sauce from sticking to it. if you do want something to keep it from sticking if you're not putting the pasta and the sauce together immediately, toss it in some good oil after, like you did in the video.
Also the baked potatoes are called twice baked potatoes! If you have smooth ingredients, you can pipe the mash back into the shell with a piping bag to make it look pretty if you are serving guests or just bored lol

Carrots - roasted carrots glazed in a carrot syrup, carrot crisps, served with some kind of carrot puree/"humous" or maybe fermented carrot sauce (like a hot sauce without the heat). Potatoes are pretty versatile as well, mash, potato scones, potato soup, vodka! More just a fun experiment than a tasty meal idea though.

When a cookbook says "3 ingredients" but then adds water, salt, pepper, etc. I get annoyed, but when you do it, I love it. I really like the idea of minimal ingredient/effort foods, especially as so many young people don't have a lot of experience cooking and regular recipes can be intimidating. It also helps teach basic cooking techniques in a simple way.
Series idea: Minimalist Pantry. Make a list of the bare minimum ingredients that you expect anyone to have, then see how many variations of meals you can make. Like, everyone should have an oil - even if it's just clarified butter, salt & pepper, an acid (wine, vinegar, lemon juice), sugar, and maybe basic condiments like catsup and mustard. Think like you are stocking a cabin rental for strangers for a month and don't know what they'd like or their cooking ability, or like you're sending a kid off to college. Once you get pantry stocked, you can only buy fresh stuff (meat, veg, fruit, dairy) to add - not spices, sauces, etc.
You could also do more "simple foods that impress". A simple jacket potato like you cooked, done well, is as basic as you can get, but presentation can elevate it. Just do foods that seem complicated but make them easy, like Lasagne. My mom refused to make it becaue it was "too hard" to make. I was so mad at her when I learned how easy it was, and that was even before oven ready pasta made it easier.

That's because things like salt, pepper, etc are classed as staples and not included in ingredient count.

@@maxineb9598 Yeah, but when you are a new cook, stressed, neurodivergent, and hungry, you count all the items you have to gather up to make a recipe, you don't go " 3 ingredients + spice cabinet"

Bag of instant mash + tin of chili con carne, use 1.5x the recommended water (or more if you want it thinner) and add the chili to make a potato chili soup (Instant mash is generally a really good soup thickener), generally gonna need a pinch of salt else you can tell it's watered down mash. I've been doing this one more often now it's getting colder, real nice to dip a toasted cheese sandwich into
Gnocci + tin of soup, put the soup into an oven safe dish, gnocci on top and bake, think shepherd's pie, I like chicken and mushroom for this, up it to 3 ingredients by mixing frozen mixed veg through the soup
(Experimental, not attempted this yet) Frozen hash browns + frozen ready meal mac and cheese, let the hash browns defrost and combine them in a bowl, cut the frozen block of mac n cheese into blocks, encase the frozen mac n cheese in hash brown mix, fry in an oven safe pan, bake in the oven after you flip to ensure they're cooked right through.
    Poverty cooks unite!

Never heard of pre-made sandwich filler. At least not something I've seen at any grocery stores near me, but that's brilliant. Then again, I HAVE seen trays of "chicken salad" at Costco, so maybe?

'Sandwich Filler' in the UK is what we'd call 'sandwich spreads.' Think the Walmart chicken salad that went viral on Tiktok a few years ago, or deviled ham/ham salad. A vegetarian could probably even get away with cole slaw.

I think stuff in jars is a great meal cheat anyway. You could also get grilled peppers in a jar, or artichokes, stuffed mushrooms in oil maybe, and add that to a pasta. Then you also have some veg at least😄 because although these are great if you're in a pinch I would suggest a little protein and veg for the diet as well. 😂 Hummus as a pasta sauce is also surprisingly good!

2 ingredient meals are pretty good I think, and more common than one would assume, especially when one item can carry a lot of the flavour.
Cherry tomatoes with french onion dip
Rice/pasta with cup-a-soup mix [I use potato and leek powder with rice as a side all the time]
    Penne pasta and pesto, classic
Every steak main is essentially just a steak, since you can buy all the sauces premade they would only be one other item, and smashed avocado with no extras is served on toast at restaurants and they charge a bucket for it.

If Pasta is "something you have ad home" than I would do truffle oil and pamesan ! For the pastry dough : use nutella role it up and freez it, cut it in slizes and bake. A tin of tomatoes (chopped) and a onion bag soup, if Milk or creme is something you have ad home ad a bit. Buttermilk frozen raspberries and honey in a blender best sorbet ever! Plum jam and joghurt or curd (German word is Quark, hope it is the same) with a bit cinamon (and berhaps cockies, I use oat cockies) perfect.
Pasta with a tin of tomatos ad a bit milk (makes tomatoes sweeter) , frozen herbs (eg italien style) and olive oil (if possible ad chees) in the oven..yam.
Klassik rosemary potatos...or turnip schnitzel (thum thick slices) or celery root schnitzel (pre boiled for a couple of minutes, turnip longer than celery) sheep chees, cotage chees or kind of in oven salt and pepper...excelent.
    I could go on 😁

I’d say core ingredients like your premade or the main attention ingredients
Anything like spice rack stuff, water, milk, butter, standard oil, sauces that you don’t just use once (tomato sauce, brown sauce, Worcestershire sauce etc) and salt & pepper your everyday items it wouldn’t count as core or stuff you grown or if you have chickens who lay eggs the self produced
I’m surprised no one coined in on the chocolate pastries bites
Easy to make and the combinations you could make like Milky Way core with a kinder chocolate topping
