Yes, please! I've been around the universe of diets. Most all work in some way. But they all fail similarly - - - Reproducibility and Longevity. You might be able to hit keto for 6+ months. But you can't do that for the rest of your life. Even Mr. Keto himself (Peter Attia) says keto isn't worth it. You might be able fast for a few months. But it's difficult to continue for the rest of your life. What you probable can do for the rest of your life is cook these full sheet pan meals on Sunday morning to cover the full week. So you're in a good spot M - F because your life will get in the way. No worries because the decision of what to eat will have already been made. You can choose wisely and easily! Most people struggling with weight issues aren't lifestyle dieters or ripped freaks otherwise. We're just normal people that tend toward easy gainers. Plus we have annoying jobs, intense families, struggles, etc. These high quality sheet pan meals are the easy button.

Awesome idea Bri!! Just one little tip courtesy of cooking god Jacques Pepin: if you peel the “woody” parts of the asparagus with a veg peeler you’ll get to use 90-95% of them instead of 60-70%, they’re actually almost as tender as the upper part if you do that and you waste a LOT less of them.❤
We just finished all 3 dishes last night. We loved all of them. The curried vegetables were our favorite and we are going to rerun them with chicken. More like this, if you can, but we love watching and trying whatever you put out!
Bone-in skin-on chicken thighs are my go to dinner! I make them with roasted potatoes. I use fennel on mine. I also roast / bake on parchment paper for easy clean up.

Please do more of these sheet pan recipes! Even though my oven quit on me a year ago, I have a large-ish toaster oven that fit pans up to 12 inches long. It's really good for baking and can do these recipes cut in half for my husband and I.
It's nice to see something like this being put out by someone like you. Half of my meals are just ideas rather than recipes. My son asked me a few days ago what I was making and I said I don't know. Pot of stuff. It was like broccoli, potatoes, zucchini, corn, peppers, onion, and beans. With some vaguely Mexican style seasonings.
In the last two weeks, I have made the chicken and potatoes with Greek vegetables and the curry vegetable sheet pan dinners -- WOWZA. They were delicious. Even my husband, who is a meat and potato guy loved the curry. Please keep them coming.
Perfect timing as always - this is my busy season at work (Q1) and finding time to cook gets really difficult so fast and easy (so I can multi-task and work while food is cooking) is EXACTLY what I need to avoid resorting to take out. Thank you!!
VERDICT: The Greek chicken sheet pan meal was a HIT. And as easy as advertised. I was able to take a quick break from work, get everything in the oven, and keep working while dinner cooked. Can't wait to try the others!

Thank you for being my primary cooking inspiration. I've improved so much over the past few years and it is, no joke, 90% thanks to you. Even in this video--I know I'm rarely going to buy broccolini (usually it's $$$ around here) and I'm not huge on asparagus, but I do love green beans and never considered a succotash as a pairing for salmon. Hell, I didn't know what a succotash was until 10 minutes ago. And I especially never considered just doing it all on two sheet trays in the oven. I may not always follow your recipes exact, but I always find some new ideas while watching. Thanks for doing what you do
Oh fun fact Brie, my mom makes a pasta dish that is 80% of the same ingredients as that greek veggie side, but insted of feta cheese she uses salt-cured capers and chilli and garlic infused olive oil. We use course tangliettele for pasta since they go amazing with that fresh, spicy and umami-forward flavour of the sauce. Its called Pasta Putanesca and (apparently) my mom got it from her italian friend that travels between parts of Europe a lot. Its amazing, I highly recommend anyone to try it.

Came here to share that it looked similar to a briam. The one time I made it, it also had potatoes in it. The briam I had was also layered and much wetter than what Brian made here.
@@neelshiv Yup, sounds about right. There are several variations, you can put many fleshy vegetables in it, however tomato (and tomato juice or sauce), feta and fleshy veggies (be it potatoes, zucchini, eggplant, etc)all in a sheet pan in the oven are the cornerstones of the recipe

I made Mediterranean chicken sheet dish. Instead of buying feta and olives separately, I bought Whole Food's olive feta garlic blend from their olive bar. It was so flavorful. I think it saved money also. Less prep to. The taters scorched black on one side but we're still good and smokey. I used harissa and smokey paprika instead of pepper flakes. It's great. Just made that first one. It's spectacular. Almost but not quite overwhelmingly flavorful. The chicken skin is crunchy, the potatoes are super soft except for the crispy bottoms, the veggie... thingie... tastes amazing. Will absolutely make this again. Thanks for the recipe!

That first sheet pan Bri has with the pasta-less lasagna IS good. I would sauté the same veggies, same cheese, then put some eggs in it. Looked gross, but everyone I’ve ever had try it, loved it!
Yeah put eggs in that tomato sauce veggies and you just get alt Shakshuka lol. I can totally see myself make big batches and then use it for breakfast shakshuka over the week.
Hi Brian. Long time watcher, first time commenting (I think? lol). I just wanted to thank you for these sheet pan recipes. I love cooking, and cook for my family daily, but as a busy mom I can never muster up the energy to try something new, particularly if it's out of my comfort zone (e.g. East Asian, South Asian). I've made your chicken & zucchini bake and alloo gobi bake twice now and they're both huge hits. I just made the alloo gobi today again and I thought I should let you know that you're being modest when you say that the flavours are "pretty" well-rounded. It's bomb! Thank you for helping us avoid taking out Indian food when we have a craving. :)

This is one I'm making soon. I'm not into feta cheese but I'm sure mozzarella would work in a pinch. It looks amazing and they complement each other. The tomato with the seasoning on the chicken=perfection ☺ Thanks Bri for this, great video.
I'm not a big feta fan either, if you can get it in your area a fresh Mexican cheese like queso blanco should work as a great substitute, it's got the same crumbly nature as feta without smelling like feet.

We have a very simple tray dish in Sweden called Pytt i Panna. Traditionally you would fry it, but it tastes just as good as a tray bake. I actually just made something very similar to your first dish, except instead of chicken I just made the veggies (Roast potatoes, tomato, onion, feta) and made Koftas to it. It really is delicious, quick, easy and a taste of the mediterranean.
You are the master of practical but still top notch food. Your woman ain't mad at those culinary skills, I promise. You know how to make an insane variety of dishes too. Is there anything you struggle to make? If so that might be a cool video idea.

I make my version of your sheet pan fajitas regularly. This has some great ideas. Hint on cutting corn off the cob. Put a plastic tub in your sink and cut it there. Wont hurt your knife and kernels stay contained.
Made the Aloo Gobi for the first time with guests over tonight (I trust BrI) ... huge hit! And the one-bowl, one sheet-tray method was so welcome. Served with basmati rice, lime wedges on the side, and some salmon for those who wanted it -- but this is a fantastic vegan/vegetarian dish all on its own. Go B!
Pretty late comment but the Greek bake is one of my all time favorite recipes. I go back to it at least once a month. So good and makes awesome leftovers!
I really appreciate the healthy weeknight-worthy meals. These are the most challenging meals to accomplish. No one wants to cook for 2 hours after work... Separately, is that a Pugeot pepper grinder? I use Pugeot and they're the only pepper mill I have found that actually works well...

Found you through your bread video, now sticking around for other cooking vids and I honestly can’t thank you enough for the variability you offer, for the substitutes you mention and in general for ease of the dishes. The color pallet is also always very interesting and it makes cooking a lot more fun. I’m going to be heading into an office routing really soon and I was thinking about ways to cook for the week and this video is just perfect! The only thing I’d ask, if possible, more veggie dishes? I’m looking to cut my meat intake and it’s very hard to find good chefs that do traditional cooking (that I enjoy watching!) and those that do less meaty recipes as well. Much love and respect for what you do and share! ❤

I made the aloo gobi one and everyone loved it! Make sure you use a deep enough pan, it was boiling over in my sheet tray- will make again for sure!

We have a very simple tray dish in Sweden called Pytt i Panna. Traditionally you would fry it, but it tastes just as good as a tray bake.
I actually just made something very similar to your first dish, except instead of chicken I just made the veggies (Roast potatoes, tomato, onion, feta) and made Koftas to it. It really is delicious, quick, easy and a taste of the mediterranean.

you can have both skins n crisp.. drop the chopped tators in some baking soda water 10 mins. they will come out all crispy outside tender inside...

Made the alloo gobi this evening-it was delicious! Coconut cream is super sweet however, so I'd recommend using less and adding more lime juice.

I love doing the oven tray meals in the air frier. I have a giant one and I legit do my entire work weeks cooking in it.
I make my version of your sheet pan fajitas regularly. This has some great ideas. Hint on cutting corn off the cob. Put a plastic tub in your sink and cut it there. Wont hurt your knife and kernels stay contained.
Made the Aloo Gobi for the first time with guests over tonight (I trust BrI) ... huge hit! And the one-bowl, one sheet-tray method was so welcome. Served with basmati rice, lime wedges on the side, and some salmon for those who wanted it -- but this is a fantastic vegan/vegetarian dish all on its own. Go B!

Found you through your bread video, now sticking around for other cooking vids and I honestly can’t thank you enough for the variability you offer, for the substitutes you mention and in general for ease of the dishes. The color pallet is also always very interesting and it makes cooking a lot more fun.
I’m going to be heading into an office routing really soon and I was thinking about ways to cook for the week and this video is just perfect!
The only thing I’d ask, if possible, more veggie dishes? I’m looking to cut my meat intake and it’s very hard to find good chefs that do traditional cooking (that I enjoy watching!) and those that do less meaty recipes as well.
