If you're buying taco seasoning from the grocery store, most of them have a small amount of beef or chicken bullion. That's probably why they added cumin and the other seasoning, instead of another packet of seasoning. Also, I'm not sure if you can get it there where you are, but we have a Taco Bell brand seasoning here in Michigan. It's good, but it's not the same as the restaurant. 😊❤❤❤❤
The chicken and beef both used a whole packet of seasoning, so I think they had you make a mock seasoning for the veggies because they didn't want you to have a partial packet of seasoning left over.

In the U.S. there are vegan mock meats that are really tasty, I use Gardein (there are other brands ofc) "chicken" strips, "beef tips" or "beef" crumble to make tacos and more. Great flavour, texture, and a few extra calories and more protein to make it satisfying (esp for a growing teenager). And plant-based cheeses have improved by orders of magnitude in just a couple years too. If y'all can find them in the UK, I highly recommend them.

I know what Barry means about "taste buds changing". All my life I've loathed Dandelion and Burdock but was forced to have some and was shocked to find out that I liked it now for some strange reason.
Suggestion: Make a flour and water paste, brush on the end flap this will seal and hold your wrap together. Makes it a little easier to handle and works great when making wraps, taquitos, enchiladas, or burritos.
Wensleydale is a creamy cheese quite strong flavoured on its own but often paired with cranberries which sweetens it up a lot, if you do like a crumbly but not dry/strong flavour cheese crumby Lancashire cheese is amazing... especially melted with a like milk in a dish under the grill.. perfect for dipping in bacon and toast 🤤🤤

It’s really nice on crackers, or toast - not cooked on the toast, just put on toast, like you would pate. And most of The supermarkets do a version, including the cheap ones, lol. New cheap versus steep idea - Welsh rarebit.
Have you cooked (well reheated) that chicken 3 times rotisserie then frying pan, then oven I thought reheating cooked chicken multiple times is a big no?

You could use quorn mince for Phoebe. For the cheesy sauce section try Doritos nacho cheese dip. It is vegetarian. I have never seen egg in it, but I put salad on according to the recipe I found which had the dip plus Mexicana cheese. Also I fried mine in a large paella pan.
easy way to make this vegetarian/vegan friendly - swap the chicken and beef mince for vegtarian "chicken" bits and veggie mince (and hey maybe facon for the top? vegans would just omit the egg i guess)

I suspect they knew the veg section didn't have enough total to soak up all the salt in the sachet of seasoning. Personally I consider the original recipe to be a "proof of concept" in that there was no point in making a veg section in that one - but yeah a veg and egg crunchwrap at home sounds great.
I love that you respect her vegetarian diet, but I can't get over also a tiny bit of cross-contamination being a problem. Very cool of her to not eat meat though! Dish looks great! Spiced up ground chicken for please!

you know what you could do to separate the veg from other filling is to put like a barrier of crunchy taco in each side so it minimize the seepage of the meat juice

You could put some refried beans in the veggie section for a more hearty vegan meal -- and I reckon it would be good for the non-vegan one
Other options- tofu, seitan, cheese (for lacto ovo vegetarians).

I found tomatoes that I liked once. It was while I was in Paris. They were so good.

The second tray and weight isn't to stop it from lifting but to compress the filling while it's cooking.

the reason you need more beef mince is that it will lose moisture while cooking and the chicken is precooked.
