Once you know the basics of a technique, you can FREAK IT. You've heard of duck confit? And it sounds super time-intensive and expensive? In this vid, I used the same principles to make lemon chicken confit, which you could eat any day of the week. Steamed chicken breasts? Nah. Showing you how to steam eggs in the shell to big-batch jammy eggs, ramen eggs, hard boiled, and everything in between. Then there's a secret to crisp zucchini (it's all in the cut!).

I’ve always been team sauna over steam bath, but that doesn’t really explain my shady attitude toward steaming. Once I steamed eggs, though, the love affair was ON
I love see the tail of your sweet dog sneaking by at the begining of 8:18 Seed-Free Zucchini 🤣🐕 Once again @CarlaLalliMusic123 for another great tutorial! 🥰
Your tomato confit for the amatriciana recipe, I used and abused the olive oil for other recipes. Like garnish for homemade pizza and topping for homemade focaccia. Thanks a lot for these new techniques!
BRILLIANT!
A level up on the egg steaming technique: rice cooker. Use the basket that you've probably never looked at after taking it out of the box. It's so convenient, it's self contained and to make Alton Brown happy, you've added another use to a multitasking appliance
I tried this and I had perfect, peelable eggs. Never going back to the old method. Team Steam for the win 🙌
Went out to buy a steamer basket just to try out steaming eggs, made some for Thanksgiving and it went so well!! I’ve never had an easier time peeling eggs the too! 😆 thank you!!
Carla deserves all the love and so much more
LOVE your Art Deco nails.
Great video. As someone who lives at high altitude, I've always been frustrated by instructions for the various states of boiled eggs. Looking forward to conducting my own little steamed egg experiment.
The steamed eggs 🤯this looks awesome for meal prep! Gonna try it!
Trying to focus on the techniques but am mesmerized by your nails, omg omg omg
Carla's nail game is eggcelent today
I've steamed eggs before! I can't go back to boiling now, they peeled perfectly.
The zucchini cutting technique is the bomb!
Oooo love the idea of crisping the skin of the confit chicken!!! Also oregano/lemon/garlic is the best on chicken, I’d add a palmful of Sichuan peppercorns to the confit oil to infuse too!
Sponsorship aside, my Victorinox chef knife is a workhorse in the kitchen. Truly a terrific knife.
Just made Broccoli D tacos for breakfast and now auntie Carla has blessed us with some more techniques 😊
LOVED Montrachet! We used to go twice a year!
Food is so great! Thanks for another great lesson.
I loved this video Carla!
Another Miss Carla awesome technique 😊😋
CARLA YOUR NAILS! ❤❤
I made chicken confit tonight for dinner and it was amazinggg, plus I roasted some veggies using the oil from the chicken, such a perfect fall dinner
my 8" @victorinox knife is undefeated. best knife i own and was ridiculously cheap to acquire. nice to see them as a sponsor w carla
Many thanks for this content and so many others.. Your the best ....Your that cool Italian princess next that everybody should be so lucky to have .
Omg love your nails!
Yes Carla, team 9 minutes 🙏🏼
Were your eggs cold or at room temp before steaming? Also would love to know the status of your amazing podcast with Rick--is it on hiatus? Dead? Will there be a season 2? Thanks so much!
I've steamed eggs before, it's better to put them in straight from the fridge. Room temp is okay but not necessary. The most important thing is the hot start, wait until the water is at a full boil first. May all your eggs peel beautifully!
Freak the technique!! 🤘🏽
Sous vide is the best way to cook shelled eggs 😁.
I’m definitely an 8 to 9 minute egg. Yum!!
Marge’s tail👀
😂yeeeeesss I thot it was a mouse😅😅
Carla, Merry Christmas to you and your Family. I Love The Beautiful Crazy Girl that you are. DAVID, RI
Carla, would you ever do a short video showing us how you tie the cute knot in your apron?
It’s like when you do your laces 😅 but without the bow, you just tie one lace and that’s it
i bring a 9-minute egg to work every. single. day. it truly is the ideal snack
Just straight up freaks today 😂
Omg so weird I was saying GORGINA ALL DAY before watching this ❤❤😅
You mentioned saving the oil from the confit. Would you keep on the counter, and how long:)?
Eye-rolling question, but what sort of ink are you using on the eggs? Eating sharpie is a worry.
A coworker adds a splash of soy sauce in her snacking egg (make sure the soy sauce gets in the yolk) and it's so good. I'll never go back to salt and pepper again.
Where do you get your nails done?!? Always love them 😅
Love confit!! I did confit turkey thighs last Thanksgiving. Question. Did you add any fat to cast iron when crisping chicken?
a tiny bit to get things started
Garlic confit is a regular thing in my household. I make big batches of it and smash those suckers into my toast.
yumMEEE!
How do you use the zucchini that's left over?
8:16 I spy a tail ❤❤
❤️
Yes gorgina!
Too bad there was a bias against steaming. Steaming is one of the best ways to savor the freshness of fresh picked or fresh caught foods including seafood and veggies.
Have you realized a thing? You have a lot of subscribers but your views are not compared to that. Is this your observation?
Plane snack? Boiled eggs? I love eggs, but if I smell your boiled eggs while I’m on a flight, 🤮. Please don’t encourage this.
Mmmm no let’s not be that person who thinks brining eggs to eat on a plane is a necessary thing. It’s not. It just rude gross thoughtless and disgusting why!?!
