    Once you know the basics of a technique, you can FREAK IT. You've heard of duck confit? And it sounds super time-intensive and expensive? In this vid, I used the same principles to make lemon chicken confit, which you could eat any day of the week. Steamed chicken breasts? Nah. Showing you how to steam eggs in the shell to big-batch jammy eggs, ramen eggs, hard boiled, and everything in between. Then there's a secret to crisp zucchini (it's all in the cut!).

    I’ve always been team sauna over steam bath, but that doesn’t really explain my shady attitude toward steaming. Once I steamed eggs, though, the love affair was ON

    Your tomato confit for the amatriciana recipe, I used and abused the olive oil for other recipes. Like garnish for homemade pizza and topping for homemade focaccia. Thanks a lot for these new techniques!

    A level up on the egg steaming technique: rice cooker. Use the basket that you've probably never looked at after taking it out of the box. It's so convenient, it's self contained and to make Alton Brown happy, you've added another use to a multitasking appliance

    Went out to buy a steamer basket just to try out steaming eggs, made some for Thanksgiving and it went so well!! I’ve never had an easier time peeling eggs the too! 😆 thank you!!

    Great video. As someone who lives at high altitude, I've always been frustrated by instructions for the various states of boiled eggs. Looking forward to conducting my own little steamed egg experiment.

    Oooo love the idea of crisping the skin of the confit chicken!!! Also oregano/lemon/garlic is the best on chicken, I’d add a palmful of Sichuan peppercorns to the confit oil to infuse too!

    Were your eggs cold or at room temp before steaming? Also would love to know the status of your amazing podcast with Rick--is it on hiatus? Dead? Will there be a season 2? Thanks so much!

      I've steamed eggs before, it's better to put them in straight from the fridge. Room temp is okay but not necessary. The most important thing is the hot start, wait until the water is at a full boil first. May all your eggs peel beautifully!

    A coworker adds a splash of soy sauce in her snacking egg (make sure the soy sauce gets in the yolk) and it's so good. I'll never go back to salt and pepper again.

    Too bad there was a bias against steaming. Steaming is one of the best ways to savor the freshness of fresh picked or fresh caught foods including seafood and veggies.

    Plane snack? Boiled eggs? I love eggs, but if I smell your boiled eggs while I’m on a flight, 🤮. Please don’t encourage this.
