Carla Lalli Music Makes Juicy Chicken Cutlets with Spicy Coconut Dressing

- Sharing my technique for boneless, skin-ON chicken thighs, which is really how all chicken cutlets achieve their highest potential. I love the combo of hot and cold things together; the crisp thighs are paired with a crunchy salad and sweet and spicy coconut dressing. Don’t shake the can of coconut milk before
opening it-you’ll use the layer of cream
on top in the dressing,
which is mellowed by cooling iceberg
lettuce and rich dark-meat chicken.
Transfer the unused coconut milk to a
clean jar and refrigerate
it for making soup
or a curry (it will hold for several days).

While you were grating the chili, I was reminded of the time I decided to grind a bunch of dried chilis in my blender. It went well until I opened the top of the blender. I had to evacuate the house for an hour until the chili dust settled.

For crisping up chicken thigh skin (usually doing traditional teriyaki) I've found the technique of stabbing the skin a few times *super* helpful. It helps prevent the curling skin from making any lifted-off parts. Obviously the weight helps with this, but if you stab the skin it works nicely sans weight.
Carla you (and Sohla) inspired me to buy my own "Pressy Downy". I LOVE it.... You now have the 'upbeat' version😂
