You are so lucky to get your hands on all those sweet potatoes. In Germany we only have 1 kind. It is the one with the orange inside. But I shouldn`t even complain, because a couple of years ago, those bad boys were only available at special health food stores. Luckily almost every supermarket carries sweet potatoes now, but, as I mentioned, only that one kind.
What I observed in the last 18 months though is, that veganism is rapidly rising and there are more and more products appearing in the stores and supermarkets. This is a very positive and hopeful trend. Let`s make it into a new habit for more and more consumers. I think it can`t be stopped anymore. Veganism is the future and the hope for all it`s creatures on it, as well as the whole planet.

Eye surgery “lasik” 22 years ago was the best decision I made. Now that I’m older I use reading glasses but don’t need the massive distance glasses I previously needed since I was a child.
Agreed! Zero regrets, totally worth the surgery and recovery. It was life changing for me to have peripheral vision, and working out without sweaty glasses! So good Do it

Chelsea I watch a ton of different Vegan recipe videos and have decided that you are by far my favorite UA-camr. I love ALL of your recipes and watch them over and over because they are soooo simple and delicious and not frufru or time consuming. Also I love that you are REAL and totally unpretentious. Keep up the great work!
Lasiks is one of the best things I ever did! I would recommend getting a really well respected dr, even if it cost more (mine was about $6,000 10 years ago...most do finanacing). And that has more than paid for itself. I went to a really amazing Dr in NY who did a procedure so I would never need reading glasses. They also did 4 hours of testing to make sure my eyes were suitable candidates. The day of the operation, it was about 10 minutes, slightly creepy (but nothing as bad as Clockwork Orange) a machine actually did the procedure. Did not hurt by the next day, new eyes. You really feel it the first time you go on vacation. It is so much freedom. When he did mime so I would not need reading glasses, I was in my 30s. Now I'm in my late 40s and I don't need them! (makes me feel so much younger looking) and saves $ My husband pays $1000+ everyother year because bifocals are so expensive. Thanks for the great food advice, hopefully this is good advice for you. Everytime i see ur veggie stock powder i laugh because its made in Croatia, and used in every Balkan country, including mine(Bosnia) and every household here swears by "vegeta"😂😂
Haha yup I grew up on that stuff in Serbia! But even my mom knew better back in the 90ies and stopped using it. I get that the focus here is not necessarily super healthy ingredients, but it’s funny she’s using it! I was shocked when I saw Vegeta in my local grocery store here in NZ 😁

My husband and I both had lasik 20 years ago. Best decision we ever made! Now that we are 50 we have reading glasses or old eye glasses I call them. But it was truly freedom for both of us who had to wear glasses since we were in first grade! It is well worth it Chelsea! Yes, the surgery is scary but the years you get out of it are worth it!

I had lasik surgery when I was about 24. Yesterday was my 48th bday!! Ijust started to noticed maybe a month ago I need glasses again It was so worth the money.
I've had Lasik! I had a little bit of "ghosting" right afterwards, but everything is great now and I am so so so happy I did it. The actual process was easy. I went to the office and they gave me valium, so I didn't care at ALL when the did the procedure. Haha. Afterwards, my eyes didn't hurt but they were tearing like crazy and I wasn't supposed to open my eyes (and didn't want to). But the next morning, I opened my eyes and I could see perfectly. In fact better than perfectly. It was amazing and my eyes felt fine. About 6 months after the procedure the mild ghosting went away, and now my eyes are great.
I had Lasik done in 2005- totally worth it! I was near-sightedness since 4th grade- I only use dollar store reading glasses at times now. I had to hold still for 20 seconds each eye and that was it. The depth and clearness was amazing to see of the clouds, mountains and sky. Best wishes!
I decided against laser eye surgery, I concluded that if I needed it to save my eyesight then that was one thing but I was electing myself for it, which I know it is relatively safe but there are still possible side effects, so in the end I decided to not have it and never looked back. I like my glasses 😉
Hey Chelse, I had the Lasik surgery done about 10 years ago it was the best money I ever spent on myself had glasses since the first grade it’s easy do it you won’t regret it
I had lasik surgery back in 1998 when it first came out, then had a touch up on one eye about 2 years ago. I was pretty blind & had astigmatism. I think it was the best money I have ever spent.
Five years and counting, and still believe Lasik was totally worth it! The operation took just a couple minutes and afterward, I opened my eyes and could read the time on the clock across the room, which was absolutely HUGE after a lifetime of being nearsighted. If you're a good candidate, I highly recommend it. It is life-changing!
I had lasik 2 years ago....vision was -6.5 in one eye...-6.25 in the other. Now I have 20/20 vision. It is very scary because it's the unknown....I cancelled my appt twice over a one year period of time and finally got enough courage to go through with it the third time. Most bestest thing I ever spent money on in my entire life. Take Omega 3 starting now if you haven't started because it helps the eye heal and also helps with dry eye (recommendation from my doctor) but I never got dry eye...maybe because I take omega 3...no idea.
Chelsea, I say have the surgery. I had Lasik 18 1/2 years ago and I still see distance great. I do wear reading glasses now, but that is due to age. My son also had Lasik two years ago and he is so happy to be glasses/contact lens free. It's a quick procedure and you will be so happy!!

Hi Chels! That looked like an acorn squash ( that’s what we call it in US). Butternut is pale and kind of pear shaped. It never occurred to me that I can eat the outside of the squash! Looks really good, especially the salad with sweet potatoes.
hahah i totally heard butternut too...never heard of buttercup so i bet my brain jsut thought butter nut! But yea in the states we call that kabocha! Its so healthy for u!

Thats what we call it.
I was the LASIK Consultant for our clinic for years and was the one to run peoples measurements. What they were doing was 1) testing eye pressure to look for symptoms of Glaucoma and more importantly 2) checking the thickness of your cornea to ensure that they are thick enough to have a good flap to lift. I also had mine done myself in 2007 and it was the best decision I’ve ever made. You DO still have to have reading glasses when you reach your 40s but your distance vision should still be good. The outcomes all depend on the technician running good measurements for the treatment plan! Know that there is absolutely nothing that would happen during the procedure that isn’t fixable (hole in the flap or something) so it’s not a big deal itself. You are really blurry for 1 week or so after then it improves. Some people do have more dry eyes after but for most it’s not a noticeable change. For good measurements be sure to be out of contacts for a couple weeks prior and ensure that your eyes aren’t too dry that pre-op or it WILL alter the measurements! I HIGHLY RECOMMEND IT!
Disclaimer it also depends on people’s professions as to recommending it. If you mainly use your distance vision then YES! But for people who sit behind a computer all day or so close vision work mainly then it wouldn’t be AS beneficial.
Lasik is worth it. Before I even got up from the table I was on I could read the clock on the wall. It is awesome to be able to see the first thing in the morning. Take a few deep breathes, perhaps do your "get psyched up dance" and go for it. You won't regret it.
My husband had a Lasik and it was really worth it. And it happened quite quickly as he said. It was not so bad. Afterwards he had to wear sunglasses and tears came out off the eyes for about 1 hour or so but it became better and better every hour. The next morning he woke up and was suprised as he saw everything clearly and without his glasses. The only thing is, because he was about 52 or so when he had the Lasik, that he can see close things and letters etc worse. But that s what they said and this is not such a problem for him. But when you are younger you wont have this, they've said. But as a police it is better if you don't have to wear glasses all the time. Wish you all the best! Best wishes from Germany! Love love love LASIK. I got it like 8/9 years ago and I’ve loved every minute. I had horrible vision before. -6.75 contact rx. If LASIK failed tomorrow I’d get it done again, no doubt. Worth every penny!

I didn’t know if I should say anything, and I have not even though or noticed that about your stomach, but when you showed it and made it so natural it was really beautiful ❤ Our bodies goes through changes, and it’s very natural. Sometimes it’s about have kids, sometimes it aging, sometimes it’s weigh loss or weight gain, it can also be sickness. It’s natural and I really appreciate how natural you was about it. I hope it’s okay to comment about it too ❤ It’s all just positive and for real, if you haven’t said anything it would never had crossed my mind.

Hi Chelsea ! I had lasik surgery 6 years ago and it was the best thing that I have done. It is a bit scary having something done to your eyes but I suggest you do research and make sure you are comfortable with the eye surgeon and company. See if there are testimonials of patients that have had the procedure with the company you are considering. Ask a lot of questions so that you have a good understanding of what to expect during and after the procedure and that will help you decide if it is right for you. Wishing you the best of luck!

So glad you shared these. They ALL look good. I’m definitely going to try the salad with sweet potatoes. My only challenge is that I work at a hospital so I need to bring my lunches with me already prepared so I tend to bring one pot meals but I’ll try these for my dinner. BUT…if you ever feel inspired to….I’d love any one pot meals or easily transportable meals to be reheated. Thanks so much for your videos, I like your healthy relation to food. No need to get things complicated, eating low calorie dense food has helped me so much. Before I was literally weighting everything and counting macros.
For the lasik, I did it 5yrs ago. Not a funny process true. The surgery in itself is painless and is super quick. Tbh the following night was a nightmare for me, my eyes were burning and I feared not seeing again. But it is sooo worth it. My vision was already better the day after and took a couple of months before being perfect. It has been life changing really, good luck to you :)
Laser eye was THE best thing I’ve ever done!! Wish i did it so much earlier!!!!
Lasik is awesome!! I love being free from my everyday glasses. I haven’t had dry eyes and I’m ok with reading glasses later. That seems reasonable to me. The Valium really helped and the healing process is not bad at all. It was worth every penny spent :)
The only thing I regret about Lasik eye surgery was that I waiting too long to get it done! It has been the best thing I have done by far!!

LASIK was 1000000% worth it. They give you a valium before the surgery, so you don't really care about anything, it's no big deal. And I think we call it "kabocha" squash? Different from butternut.

Yes, it’s a kobocha, someone said acorn, but it has a rounded bottom and extra orange. Definitely kobocha.

I have had laser eye surgery and it was so worth it. It was 1998!!! but I didn't have any of that. I literally went in had a consult and went back in the afternoon and they froze my eyes and did it and the next day dah da I could see!!! Go for it
Not LASIK but I had cataract surgery last year and they put in corrective replacement lenses. I have been very myopic since birth. Now I wake up in the morning, open my eyes and can see everything sharp and clear. It’s wonderful. They give you a sedative and numbing drops and it’s over in ten minutes per eye. LASIK is even quicker. The next day you are fine.
I wouldn’t worry about people who had bad results. Laser surgery is much better than it was and some techniques are really new. Check out which they are offering as it might be good to shop around for the best option.

Where I'm from in America the squash is called acorn. I haven't had that particular one in what feels like forever. Definitely going to put that on my shopping list for next time.🤘✌

I got SMILE laser eye surgery (in Christchurch) and it has been amazing I can hardly remember what life was like not being able to see without glasses a year and a half on! Was a really quick procedure. Can't wait to make the noodle meal!! Looks yum!!

Ideas for lunches for me… I travel for work and have to take my food for the week with me. Also I can’t warm anything up for lunch. I pretty much do salads
I gained 18 lbs during COVID I feel so gross No clothes fit and I am tires all the time. I have been vegan for over 10 plus years. I am 56, I think I just am lazy and got to eating too much oil and grains, nuts etc. Thanks for your videos, I pray I can can loose this weight I look pregnant
Hi Chels! I had lasik surgery 12 years ago and it paid for itself it what I saved on glasses/contacts over the years. I’m over 40 now and use reading glasses occasionally, but essentially perfect vision all these years later🙂
Had to watch this again. Everything looks so great. I just got finished eating a noodle bowl, with vegis, and chard. Not sure I've seen you eat much chard, but I can get frozen organic, so easy to add to the broth, and want to get my dark leafies. Goes good with the noodles and other vegs, which I reconstitute from dry... helps with time, and prep. Still can't find a broth powder or cube without much salt. I found some packets of 'low sodium' broth but even they seem salty, so I whip up my own as I cook. I'm getting faster at it.
I had lasik about 10 years ago and was the best thing Ive done for myself.... Besides going plant based! But no reason for fear the lasik was painless and well worth it!
My husband and I both had lasix about 15 years ago. We would both do it again!
