  • How to make two different Korean sidedishes, "dubu ganjang jorim" and "dubu buchim yangnyeomjang".
    Here are the full recipes:
Panfried tofu with spicy sauce (dubu buchim yangnyumjang)
    www.maangchi.co....
Panfried tofu in soy sauce (dubu ganjang jorim)
    www.maangchi.co....
Tofu is pronounced as "doo boo" in Korean. If you say doo boo in front of Koreans, they will be impressed!
    Panfried tofu with spicy sauce
(Dubu buchim yangnyumjang)
    Ingredients:
Half package of tofu (about 10 oz: 280 grams), soy sauce, hot pepper flakes, sugar, green onion, garlic, sesame oil, roasted sesame seeds
1.Slice the tofu into bite size pieces (¼ inch thick rectangles). You should get 10 pieces. Towel off each piece with a paper towel.
    2. Heat a pan with 1 to 2 tbs of vegetable oil. Add the tofu and lower the heat. Cook over low heat about 5-7 minutes.
    3. When the bottom of the tofu looks golden brown, turn it over and cook another 5 minutes.
    4. Transfer the cooked tofu to a serving plate.
    5. Make your sauce in a small bowl by mixing these ingredients:
1 clove of minced garlic, 1 chopped green onion, 1 ts hot pepper flakes, 1 ts sugar (or honey), 2 tbs soy sauce, and 2 ts sesame oil
    6. Spoon the sauce evenly over the tofu, and sprinkle some roasted sesame seeds just before serving.
    7. Serve with rice as a side dish

    Panfried tofu in soy sauce
(Dubu ganjang jorim)
    Ingredients:
Half package of tofu (about 10 oz: 280 grams), garlic, soy sauce, corn syrup (mulyeot), black sesame seeds.
    1. Slice the tofu into bite size pieces (¼ inch thick rectangles).
    4. Add 1 clove minced garlic, 1 tbs soy sauce, 1 tbs corn syrup and stir it to caramelize the tofu.
    5. Turn the heat off and transfer the cooked tofu to a serving plate.
    6. Sprinkle some roasted black sesame seeds before serving.
    7. Serve with rice as a side dish.
*tip: you can use this dish as a side dish for your doshirak (Korean lunch box)

I made the dubu buchim yangnyeomjang last night and both me and my mom LOVED it!! I added a little gochujang to the sauce for extra flavor. I saved this recipe and will definitely make it again. Thank you!! 😄

I use the brand name "saempyo" dark soy sauce. I get it at a Korean grocery store. Check the ingredient section on my website. I posted the photo of the soy sauce there. Thank you!

Thank you maangchi for this great recipe.. I tried the second recipe. It is simple and delicious 😋 i don't have corn syrup, so instead of that, i replaced with sugar. It worked well! Thanks for your great love in guiding us on how to make marvellous korean recipes. 💞🌹

Try using the Korean one Maangchi recommended. Chinese/Japanese soy sauces are very different from Korean ones because Korean soy sauce is fermented for a long time and thus have a deeper taste. However, Japanese soysauce like kikkoman is not fermented that long and has a shallow taste more suited for japanese dishes.

My kids love tofu and because it is so cheap I love making a tofu dish for lunch. I made this today for my kids.
I halved the gochugaru, and doubled the honey. Oh! I also added some tiny minced ginger. ❤ They loved it. Next time I will pour off some sauce though and make a serving for me that is a little more spicy! But, I ate it with some homemade kimchi and rice! Thanks Maangchi!!

I don't know what it is. You can leave your question on the forum on my website. Someone else may give you the answer. The food sounds like a snack. Banchan (side dihs) is usually a little salty.

I think it's because when it is wet, it will splatter when it touches the oil. Also, when it is wet, it will not easily brown when frying.
