so i made this last night and honestly, it was a tad bland. so i added a bit of salt and lemon juice and that brought out the flavors i think i wanted. just a heads up for those who plan on making this anytime soon.
U can always substitute Gorgonzola or blue cheese for the parm and or add several baby tomatoes qrtrd and I always top mine of w little parm shavings 🤌🏽

A few comments from an Italian: we use garlic only to infuse the oil, but discard it as soon as it's pale gold. Cheese must never be added to pasta when the pan is over the heat lest it melts. Also, in an aglio e olio pasta we would prefer pecorino romano rather than parmigiano. Always finish pasta in the pan with abundant cooking water (get the pasta out BEFORE it's al dente) so it's useless to shake the pasta dry when fishing it out of the pot.

Made this and it was simply great. Always loved clear non-tomato sauces for pasta. Second time added: thinly sliced calamata olives and thinly sliced sweet onion. Try that and see what you think of the additions.

I made this for the family two day’s ago. I could only find Serrano peppers, but the flavor was still great. I was going to pair it with your seared scallops, but my local grocer didn’t have those either. I ended up going with shrimp. It was a hit with everyone!

I do that kind of pasta all the time, love it! I like to saute some tail-off cooked extra small shrimp in the sauce for the extra flavor then add about 3 or 4 tablespoons of sour cream. Kicks the whole thing up to a new world level!

I’ve been sharpening my knives on the bottom of coffee mugs for 40+ years now. Works great.
