    Fajita Quesadillas
    1 Tbsp. high heat oil like safflower or grape seed oil
    1 yellow bell pepper seeded and julienned
    1 red bell pepper seeded and julienned
    ½ large red onion seeded and cut to a fine julienne
    1 large zucchini, cut in half lengthwise then cut thin crosswise
    1 tsp. lemon pepper
    ½ cup grated vegan cheddar
    ½ cup grated vegan mozzarella
    1 bunch scallions, (green parts only) cut on the bias
    8 flour tortillas
    Vegan butter or extra virgin olive oil as needed
    2 small firm avocados
    Chipotle Crème as needed (recipe below)
    Toss the oil, bell peppers, onion, zucchini and lemon pepper in a medium size bowl.
    Season with salt and fresh ground black pepper.
    Heat a grill pan or large sauté pan over high heat.
    Add the vegetables and cook until they are soft and charred.
    Remove the pan from the heat and allow the vegetables to cool.
    Place the vegetables in a bowl and incorporate the cheese and scallions.
    Fill a flour tortilla with about 1/3 cup of filling, fold the tortilla in half and reserve.
    Repeat with the remaining tortillas.
    Heat a large nonstick pan over medium heat and add a dab of vegan butter or a drizzle of extra virgin olive oil.
    Cook 2 Quesadillas at a time for about 2 minutes on each side or until the tortilla is golden brown and the cheese is melted.
    Cut each Quesadilla in 3rds.
    Top each piece with a couple of thin slices of avocado and a drizzle of Chipotle Crème
    Makes 10 quesadillas.
    Chipotle Crème
    1 (7 oz.) can Chipotle Chiles in adobo sauce
    1 cup vegan mayonnaise
    Using a small bowl mix 1.5 Tablespoons of the thick liquid found in the can of chipotles with 1-cup vegan mayo.
    Season the sauce with kosher salt and reserve in a squeeze bottle or glass jar with a tight fitting lid.
    Sauce is good for 2 weeks refrigerated.

    I have been eating meat my entire life but now I feel so guilty about it because it just doesn't seem right that we are still killing and eating animals when we don't need to. It's not like we live in a era where we will go hungry and starve without meat. Anyways, I am starting off as a Vegetarian first and will slowly transition to Vegan when I get used to it. So far it's a real struggle because I'm the only Vegetarian in my family and because I'm such a picky eater and I have always hated vegetables lol. But amazing recipes like these are making it a little bit easier. Thanks for this video :)

      Awesome! Glad you are making that change. Good luck it is tough being the only vegetarian/vegan in the family. but what i always find is they start eating more and more of your food as well. so even if they still eat meat, you are helping them bring in a more balanced diet which in my opinion is a win/win.

      Haha there are a fair amount of vegans and vegetarians that hate vegetables! It's still totally possible to eat junk food as a vegan

      That's awesome. I just made the decision to go vegetarian for a month as well! I LOVE animals and seeing these recipes, I believe I could do with no meat. Cheers!

      I know exactly how you feel, when I was starting out at 14 years old my whole family was like dependent on meat and seemed irritated by me wanting to switch over.

      Yeah exactly. It's rough! Today I managed to make vegan burgers (for myself) and veggie burgers (cheese and mayo needed for them) and they loved it!
      It'll be an interesting journey lol.

      i'm 16 and i just became vegan about 6 months ago. Even though i get support from my parents since my mom is pretty much vegan as well, It took some time for my friends and the rest of my family to get use to. It does get a lot easier though i promise. they're so many yummy vegan foods out there to enjoy and i personally have adapted well to everything. The only thing i would recommend you do is take a B12 supplement because more often than not people with a plant-based diet usually have that certain vitamin deficiency. If they still don't understand your decision in time then you just have to realize what you are doing for yourself and animals is more important.

      I'm happily vegan. Have been for about a month now, I definitely have people who judge me but my family has continued to support me and try to understand. I do take b12 and eat with a veggie and fruit base. Thanks for your advice!

      I bet slicing the tongue of a deer makes you feel like a man, something you probably never managed to achieve in any other aspect of your life.
      Temporarily filling your void of in-masculinity further showcases your fear of not being worthy of your peers, this insecurity is probably brought on from parenting issues or abuse. As such i am sorry you go through life baring this burden, go on and take out your vanquish out on the most innocent species akin to yours.
      One day when you you're free from your moral turpitude you will understand your shortcomings and then your real character will shine, for better or for worse.

      You hunt and don't waste, the term hunter and gatherer was something we used to do by necessity by means of survival, not because it was a fun past time. Don't cling onto some wayward mythical principal because it makes you feel masculine and try and spew your garbage to people of higher intellect and expect to come away not feeling a complete idiot. Something i'm sure you're probably used to.

      Your son needs protein in order to get healthy muscles, you are femenizing him with forcing him to be vegan.

      +Jose Flores You don't need meat for protein. And, my son is 28 years old. He converted me to be a vegan. Not what you automatically assumed that I converted him.

      Jose Flores lol clearly you know nothing about veganism compared to American standard diet, don't make a statement like that unless you have thoroughly educated yourself. Meat (animal protein) is protein and that's about where the nutritional value ends, basically no other nutrients and health value, it actually prevents your bones from being able to absorb calcium and most often is actually too much protein which is not good for you, also cause high cholesterol and clog arteries, plus just pure fat besides the protein. Whereas vegan (plant-based) protein sources are not only a healthy amount of protein but so many other nutrients in one such as calcium, MUFAs, fiber, etc. Healthy proteins include any and all beans, nuts (also nut butter) and seeds (sunflower seeds, sesame seeds) which are also MUFAs as well which is the GOOD fat that your body NEEDS but won't clog your arteries or make you gain weight also you need MUFAs to help absorb calcium, quinoa (actually probably one of the best protein sources), chickpeas, lentils (most legumes), tofu and tempeh (and anything made from soybeans such as textured vegetable or soy protein), actually pretty much all veggies as long as you are eating many & a wide variety throughout the day which most vegans do but especially leafy dark greens such as spinach or kale which are also some of the best sources of calcium there are (along with broccoli, actually 1CUP of chopped broccoli is 8G OF PROTEIN!!), hemp anything such as hemp seeds and hemp milk as well as chia, flax, and poppy seeds which all have very many healthy nutrients & functions besides protein, unsweetened cocoa powder (pure dark chocolate is also a MUFA as well), literally any non-dairy milk because as already said soy has a lot of protein as well as any nuts such as almond or cashew milk which are also better sources of calcium than dairy milk and your bones can actually absorb it since nuts are MUFAs literally it is so hard for your body to absorb calcium from dairy esp. if you are clogging it up with animal protein, there are also many many more such as seitan, edamame, & I probably missed a lot but yeah. Try telling me & her son we don't get enough protein compared to meat again lol. So you know where you get your protein but what about a well round of all nutrients in one single item like plant-based proteins?

      Jose: Provide factual proof that a growing child has to eat meat, specifically, to grow healthy. You already said children need protein to get healhy muscles. And you can get protein from plants. So, why does it have to be meat, specifically, to get protein? In the end, you should worry about your own diet before preeching to others about theirs.

      Nice vegans are so rare and few to come around. A lot of us omnivores would like info on vegan lifestyle, but yall are always so bitter and insulting. If you want to spread awareness about the benefits of being vegan, you should try a gentler approach. You catch more flies with honey :)

    My wife and I recently started a vegan/vegetarian challenge that we are hoping will become a way of life for us. I always wondered what the heck we would eat if we didn't eat lots of meat. I seriously did not know what I was going to eat, besides apples, bananas and some celery or something. In fact, it has been a major source of stress for me starting this way of life. This was one of the first things we found and decided to try it. It was great! We made it comepletely vegan, and have cooked it several times just because it is so amazing and easy! Am looking forward to expanding the recipe library (yes we have tried a number of other things). Thanks for sharing. By the way, love your knife. It has a really beautiful fold pattern that shows when the light hits it just right.

    i made this last night and it was very easy and yummy. i forgot to saute the veg before adding the cheese, oops...i did a quick saute and steam (used the lid on skillet) anyway, a little messy but it still turned out great...even my 5 year old loved it. i went vegan 2 years ago and do all the home cooking, so cheese is something both my partner and child really miss...this made them happy...and i'm happy to have found this channel. thanks!

    thanks for a great recipe. Made this tonight and it was a big hit. Will make this again and again. I don't use oil, so replaced it with veg. broth to do the veggies. Also, I went from meat eater to vegan in one day. Haven't looked back, It can be done. Might be harder for some, but after about 2 wks, it was just a normal way to eat for me and my husband.

    this looked so yummy, that I went right in the kitchen and whipped up a version of it. I'm not vegan, but I love vegan and vegetarian dishes that are healthy and delicious. So, I had the Tortillas, Reg cheese, bell pepper, onion, avocado. I didn't have chipotle, but I had Jalapeno/ cilantro hummus. So I mixed the hummus with a dash of mayo and a pinch of (tomato pollo powder) and it was the bomb-dot-com...Thank you for the recipe, I will make it your way in the future...

    ok i don't usually leave comments- but these quesadillas are fab fab fab. I saw this video 20 mins before heading to the grocery to find the ingredients. I am really surprised this was soooooo good. My son is a very picky eater and usually don't eat anything new, but he gobbled these up. Thanks for a great recipe...its a keeper.

    You SIr, Are a true blue Chef. The way you slice those peppers shows, that's what my mom says. If they can slice and dice rocking the blade back and forth with a constant rhythm while talking, they're the real thing. Fantastic video, thank you

      When you're trying to turn vegan, you can mix vegan cheese and regular cheese, half and half, and little by little lean off the regular cheese. awesome job! Vegan as much as possible :-)

      Anahi Block I know, i mean my problem is that i'm not addicted to meat, yes i like it, is more like i'm used to eat meat sometimes, but my main problem is i suffer from BED and deppression so making something to eat or eat breakfast is actually a challenge so when i make myself breakfast (by the moment brunch hahah!) especially if it's healthy or vegan friendly i actually feel a bit proud of myself, right now i just thought about it, and can see myself becoming vegeterian and eating vegan foods, vegan umm....i really do hope i get to learn more and decide to get to the goal, but my problem is that i feel like i'll get anxious someday and miss meat, orbuying junk food like nacho cheese doritos or dairy ice cream products, i know dumb but this is what happens when someone is obssesive, but i know i can do better....actually i do need to change my eating habits, because i have a family history of diabetes, and as depressive or suicidal i am, i don't want to suffer of a painful chronic disease....

    This is a response to "richcampoverde"'s comment about vegans being hypocrites for drinking their mother's milk. As a vegan, let me explain where he went wrong. (For some reason I can't reply on his actual comment.)
    1. When you're at an age where you rely on drinking mother's milk, it's also at an age where you're extremely unlikely to have made the decision to be a vegan…hardly a hypocrite.
    2. If you watch the free online documentary "Earthlings" you will understand that today's mass manufacturing of cow's milk is highly connected to the suffering of animals. The female cow is continually being kept pregnant, artificially inseminated over and over, in order to be able to produce large amounts of milk. The calf that is born will get to see very little of that milk if it's (another milk producing) female, and practically nothing if it is a baby male, for it will then be slaughtered as veal. Humans are the only species that chooses to drink the milk of another species, for a very long time after is is actually necessary (after we've stopped relying on our mother's milk).
    3. The point of a vegan diet is to reduce as much animal suffering as possible. Sometimes we fail, and sometimes we're doing rather well. But at least we're trying.
    4. You're right in saying that we have evolved from herbivores to omnivores, but that doesn't mean that we somehow rely on eating meat. With the right source of nutrients, vegans can live an extremely healthy life without any vitamin pills. When it comes to health, there is no difference between a vegan with a bad diet, or a meat eater with a bad diet. In today's educated western world, where we have continual easy access to all kinds of food, we can inform ourselves and decide where we get our nutrients from, without including the suffering of mass-produced animals. At different times in history, and still in many parts of this world today, a lot of people do not have this luxury of ever present foods, and hunting animals was and is essential to their own survival. You would never expect them to be vegetarian even.
    And so there is no hypocrisy with being a vegan. It's simply the desire to do your best in eliminating the unethical treatment of animals. Though, nobody's perfect.

      Dennis Simcott honestly drinking your mothers milk is perfectly normal and ok, vegan is to not consume something that comes from an animal aside from us, cows are supposed to drink THEIR mothers milk just how we are ONLY supposed to drink our mothers milk as baby’s there is nothing unvegan about that :)

      Lots of mistakes in your post. I don't disagree with #2 #1 I don't see as relevant since lost of people consume milk as adults.
      #3 is not true that's the cult side of Veganism, not everyone who is Vegan is part of that cult thinking.
      #4. Yes you do need to take pills, B12 for example is only found in meat today so you must at the very least take that from time to time. one can go years without it, but vegans have died from lack of B12.
      The hypocrisy in being Vegan is only with the cultist vegans. The reason is because cult Vegans don't accept the reality of nature which is full of horrible animal suffering way beyond what humans do. At least we don't eat them while they are still alive as many predators do. They don't wait for it to die, it lays there watching for a hours some times as animals eat at it, it can only sit there in pain and watch as other animals pull out it's stomach and eat it. The cultist Vegan utopia of animal cruelty is a myth, meant to prey on those with bleeding hearts.
      In addition to part 4, most vegan foods are unavoidable for poor people, you always see these ivory tower cultist vegans preaching at people without ever considering that.
      It's sensible there for to demand better treatment for animals in farms, not all farms operate badly. Halal and kosher meat should be banned as it's not the most humane way to kill the animal.

    I LOVE meat and am not looking to give it up :-). However we do 2 to 3 meatless nights a week. This looks so good that I may change the 2 to 3 times a week meatless nights to straight up VEGAN! I'm so making this soooooon :-)

    My goal for 2015 is to try being Vegan for a week. I am doing some research on new types of food, hopefully lowering the calorie intake and adding more color to my family's food. This looked so yummy. Going to give it a try.

    I just watched a video with no seasoning in their meals ... finally a good portion of seasoning. Just because it's vegan, doesn't mean it has to taste bland. Throw in some spices to push the flavour of the veggies ... great-looking fajita quesadillas! :-)

    This was my first self made food, my parents loved it, however it wasnt all vegan like butter and cheese , but i think its a nice step forward to eat less meat and i don't think i will be 100% vegetarian but do my best to reduce it. (srry for english)

    I recently become vegan and I'm amazed at all the substitutes for dairy and meat products. I already feel so much better about myself, and all over more healthy. I've cut out all junk food, diet sodas, and just drink water or tea :3

    I've been vegan for seven years, and have only recently been getting into the raw lifestyle. I'm obsessed with zucchini noodles and cashew pesto. People would be absolutely shocked at all the things which can be made raw (just like with veganism- the only limits are your own creativity). Raw "cheese"cakes, muffins, mexican food- so much better for you, and all so colorful and vibrant. :)
