    ---- BREAKFAST ----
    1. Stovetop Oats
    Combine 3/4 cup rolled oats and 1.5 cups unsweetened almond milk in a small pot over high heat. When boiling, reduce heat to low and let simmer, stirring occasionally and watching to make sure it doesn't boil over. Once thick, stir in 1 tsp cinnamon and 1 mashed banana. Remove from heat and serve with any toppings. My favourites are peanut butter, strawberries and banana.
    2. Baked Oatmeal
    Combine 1/2 cup oats, 1 mashed banana, cinnamon (optional), 1 tsp baking powder, and 1/2 cup almond milk. Place in a mini ramekin or other oven safe dish and bake for 25 minutes at 350F. Add any desired toppings, my favourites are strawberries and peanut butter with almond milk.
    3. Peanut Butter Granola

    ---- LUNCH ----
    1. Lettuce Wraps
    Take a piece of Romaine Lettuce (or any lettuce with a large, flexible leaf) and fill it with brown rice/quinoa, smoked tofu/veggie beef cooked in hoisin sauce, sautéed bell peppers/carrots/zucchini/or any vegetables, sautéed onions and mushrooms, avocado and salsa, nutritional yeast or vegan cheese, hot sauce, and anything else of your choice.
    2. Avo-Tomato Sandwich
    On two slices of bread/bagel, spread 1/2 a mashed avocado, a sprinkle of nutritional yeast and add some tomato slices. Optional things I like to add are spinach/lettuce, alfalfa sprouts, and ground flax seeds.

    1. Spaghetti and "Meat" Balls
    Boil spaghetti pasta according to package instructions and set aside.
    In a pot, steam chopped broccoli until tender. Saute mushrooms, onions, and any other desired vegetables until cooked. Separately bake/saute bought "meat" balls.
    Optionally, you can bring saute all of this together in a large skillet with the tomato sauce to make a more uniform "meat" sauce, or it can just be dished into a bowl with the spaghetti with sauce over top.
    2. Pesto Pasta
    In a dry skillet over medium-high heat, toast 1/2 cup of pine nuts until golden brown. Set aside. In a food processor, process two bunches of cilantro and 4 cloves of garlic. Once mixed, add in your toasted pine nuts, 1 tsp salt, 1 tsp black pepper, 1 tbsp lemon juice, optional smoked paprika, and process until smooth. If it's too dry, add in some olive oil or water until it reaches your desired consistency.
    I love putting this over pasta (whole wheat, rice or zoodles) with avocado and nutritional yeast.
    3. Veggie Burgers
    Prepare patty's according to package instructions, or make your own (minimalistbaker...)
    I like to eat mine on a toasted whole wheat bun with hummus, avocado, tomato, any other veggies (spinach, lettuce, sprouts, mushrooms, etc), and nutritional yeast for a cheesy flavor.
    4. Spring Rolls
    Prepare angel hair or fettuccine rice noodles as per package instructions. Chop up bell pepper, cilantro, avocado, cucumber, mushrooms, smoked tofu, bean shoots, and shred some carrots. Soak your rice paper wrap in lukewarm water for about 10 seconds until soft, then fill with any fillings of your choice. Dip into peanut sauce.
    Peanut Sauce Recipe:
    In a food processor, process 1/2 cup peanut butter, 1 tablespoon minced garlic, 1/4 cup tamari (soy sauce), 1/4 cup water, 1 tablespoon rice vinegar, 1 teaspoon hot sauce, 1 teaspoon sugar or other natural sweetener until smooth. Be sparse with soy sauce as it can be quite salty.
    An alt. spring roll recipe - minimalistbaker...
    5. Chickpea Omelet
    Blend or hand mix 2/3 cup water, 1/3 cup chickpea flour, 1 tbsp ground flax seed, 1 tbsp nutritional yeast, 1/8 tsp turmeric, 1/2 tsp baking powder, 1/2 tsp garlic powder, salt and pepper to taste. Pour it over a greased skillet over medium-high heat. Let it cook like you would a normal omelet, flipping when the edges are firm and there are bubbles. Once the other side is cooked, put it on a plate and fold over any fillings. I fill it with sauteed veggies (mushrooms, spinach, bell pepper and zucchini) and sprinkle on nutritional yeast.

    I have recently started a "change of life" journey when it comes to my diet. I have chronic pain and I'm over weight. Since having back problems, my weight has just gotten worse and worse. 5 days ago my mind, body and soul all synced up to being ready for a change. I'm not interested in weight loss as much as I'm interested in getting HEALTHY. Obviously weight loss is a part of it but I'm not going to let the numbers define me. I'm working on how I feel and living a long, healthy, happy and fulling life.
    Having said all that, I was looking up some vegan recipes or foods. This video is PERFECT!! THANK YOU so much for sharing so many great recipes. I am a meat eater and dont have immediate plans to stop but I am educating myself on using fruits and vegetables in a more satisfying way. Also, I want to know what everything is I put in my body. No more processed foods or short cut items. The granola recipe fits exactly what I'm trying to do. Even if I want ice cream, I will make it myself.

      +Skye Bostian thank you so much! I made this post about 3 weeks ago since tomorrow will be the one month anniversary to my "life change". I'm so happy and proud to report that I am still actively on this journey!! So many people have hinted that it might be a fluke or that I won't last. Still going strong and i do feel better already. My weigh in doesn't happen until tomorrow but after 4 days, I was down 9 lbs. Day 9 I was down an additional 7 lbs (16 total). Day 14 - two week mark - I was down an additional 5.6 lbs (21.6 total). I forgot at the 3 week mark so I weighed in on the 23rd day and was UP 7.6 lbs!!! I felt bloated and swollen too. Mother Nature decided to drop by and give me a what for. Other than that, I'm not sure why I gained weight. It's not stopping me nor does it define me though 💁🏻 if I only weighed in once a month, I wouldn't even know that happened soooo... Yea. Tomorrow morning I will weigh in and see where I'm at. I feel better and will keep going no matter what

      Were doing good... figuring out how much fat vs calories to take in specially with my 4 year old... I hear ppl say that they need lot more fat so were just trying to test stuff here and there to see where were confertable! I felt good in the first weeks but lately I feel tired and I hear it might be because I dont eat enough calories but yet when I count them on Cronometer, Im eating over 1900 per day which should be plenty for my hight and size.... im trying to find that out too...

      Maybe try to eat more savoury and high in energy foods to provide stability instead of just fruit and veg. Coming from a vegetarian this might not be good advice but I hope you the best.

      MadnessMachines Im eating fruits , veggies and alot of starch like legumes, rice , potatoes and sweet potatoes along with oats in the morning... Im not sure if im laking other things...im trying to fallow the Oh she glows and forks over knives recipe books to cook dinner and im eating left overs for my lunch most of the time and taking B12 supplements ...so I dont know what im doing wrong... maybe my body needs the sleep from all the deprevations of years prior .... i have no clue!

    Tried the stovetop oats with the mashed banana and cinnamon! Melted about 2tbsp of peanut butter in the microwave and drizzled it over the top. Best oatmeal I've ever had, great for after workout meal! Thanks for the recipe

      +The Life You Live Best of luck! Since I changed my eating habits I have zero desire to go back. After a week I had a yogurt cup left in my fridge from before and because I spent $2 on it, I though well shoot, it'd be a waste to throw it out! WORST IDEA EVER! I had horrible diarrhea and bloating (that might be tmi lol). There's something discerning about going without dairy for a week then it making me horribly sick. I could go months without veggies and feel just fine eating them randomly haha!

    Pro-tip: You aren't supposed to flip omlets. You're supposed to put a lid over the pan and like steam the top. If I hadn't taken a cooking class I wouldn't have known that.

    One thing I like to eat (I'm not vegan/vegetarian yet, hope to be soon ;D) it's a snack wrap.
    So how to make:
    You get a flour tortilla and cover one side with peanut butter. Next, you take a whole banana and place it in the middle, along with whatever nuts and granola you want (honey is optional for vegetarians) roll it up into like a burrito looking wrap, and there you have it! I find these as a great snack because they are a great fill-up food and they are super good!!!!! :D

    Heat up some coconut milk, mix in cinnamon, brown sugar, nutmeg and/or pumpkin spice, mix in the oats, let it cook then top it off with some nuts of your choice pecans, walnut or almonds and if you would like add a banana or coconut flakes, Perfect fall type of breakfast

    i want to go vegan, but im only 13 and it would be way too much effort for me and my family to buy and cook al this food. so i guess i have to stay vegetarian until im living alone.

      I'm 13 and I turned vegan. And it's no different to normal grocery shopping! You just have to make sure it's completely vegan. And it's not expensive at all. X

    I tried the granola recipe and it was great. If you don't have maple syrup you can mix 1 c water, 1 cup brown sugar, and one cup water and bring to a boil and let boil for around 8 minutes stirring throughout. Let sit for about 5 minutes and you have maple syrup. Also, if you don't have rolled oats or you want to have extra flavor, you can use the packets of instant oatmeal

    Ok I've been a vegan for just about 2 months now and I've noticed that a lot of vegans love avocado but for some reason I absolutely HATE the taste of it. Am I just picking up bad avocados or do I just like really not like the taste of it?

      +Juman Orfali It took me a long time to like avocado honestly, I just kept trying it in new ways and it grew on me. I only really like it in things though, I couldn't eat it by itself. Totally normal to not like something, you can definitely just leave it out or substitute it with something that you do like :)

      I'm EXACTLY the same! I literally GAG every time I taste it in my mouth! 😫 The only way for me to eat an avocado is if it's really diluted in flavor, for example making an avocado smoothie with lots of agave, dates and vanilla extract and coconut/almond milk. 💔 I feel your pain

      +Juman Orfali I used to not like it, and would only have it with gobs and gobs of salt lime juice and garlic salt (basically guacamole) then slowly stopped adding things to it. Maybe that will help? :)

      Man I love avocados . You'll now it's ripe when you press on the avocado and it dents alittle if that makes sense if it's too firm it's not ready and if it's too squishy it's over ripe

    Tried every single one and they're incredible! I love how different they are to all the usual like protein pancakes and all that. I recently went to a festival where I bought some watermelon and in the tub was cubes of watermelon but also basil and 2-3 medium size slices of chilli pepper I was thinking oh no I'm not gonna like it but the flavours combined were awesome! Give it a try!! Xx

      Celia Solorio its healthy to be vegan at any age. Many vegan parents raise their babies vegan. Just make sure you get all the nutrients the body needs. There's daily vitamins you can take to supply yourself with the necessary nutrients.

      The key of losing weight is not how much you eat,but how you eat. There's a difference between consuming 2000 calories from unhealthy food and from healthy food. Also make sure not to starve,I usually consume about 2000 calories a day and im still losing weight slowly :)

      hey! that's great that you want to be vegan :) but please do consultant with your parents and please please please do loads of research!! because when you are a vegan you miss out on nutrients that you would get normally in meat,eggs,dairy etc,,, so do go to your local health store and ask the person what vitamin supplements you need for a new vegan :) the person would be able to answer your question :)

      Yes! I agree w itachi! Never starve yourself. As long as you're eating healthy, the rest takes care of itself. Also make sure you drink lots of water. Also sometimes results arent immediate. So dont give up. Best of luck to you and your journey on being healthier

      Insects are different to higher order animals, and do not feel "pain". They lack the neurological structures that translate a negative stimulus into an emotional experience. So I'm not sure if the vegan agenda here is applicable.

    I've been a vegetarian for over 8 years and I'm trying to go vegan so I can lose weight and also because I feel it would so much healthier but it's literally impossible for me cuz eggs and seafood are two of my favorite foods.

    a great tip for green smoothie when u blend it make sure u blend it first put in a width of a fingernail of fresh ginger, no need to peel just make sure it is a nice piece not dried piece. It adds a great kind of flavor and as u like it add more. Do not freeze it cuz when u thaw it they get slimy

    how can I be vegan on a budget? I find it so hard to afford a big variety of fruits and vegetables

      Do more of a starch solution type of diet: concentrate more on complex carbs/starches/legumes, such as potatoes, sweet potatoes, rice, beans, lentils, pasta, oats, sprouted grain bread, and when you do buy your fruit/veg, buy it in bulk and what's in season it'll be way cheaper. Freeze whatever fruit you don't finish and use it all year round. I buy my frozen fruit at Costco because it's half the price than it is at the market. Bananas are some of the cheapest fruit that you can find and great for smoothies and oatmeal. Being vegan can be super cheap and easy! Starches/legumes are some of the cheapest foods in the world!
