Hey Ines, well, we used fresh garlic to start with but like to give it a quick roast in the oil to soften it and also infuse the garlic flavor in the oil. Win-win!
Thanks. It's a version of pesto and traditionally has oil. It's a condiment, stir though sauce. Feel free to exclude or include as much or as little that suits you and what you want to use it for. Cheers!
I think you can simply leave it out. It's just a recommendation for vegans to have yeast. It's a vitamin b boost. Something not so easy to get from only veggies and fruit. Not impossible, but maybe you should think about using supplies. Apart from that, my favourite pesto is with parsley...so even basil is not a must

I absolutely love Cook's Illustrated magazine, but now that I am vegan there is very little I can prepare from those recipes (plus they have always used massive amounts of fat, which is so unhealthy, even though delicious!). I would love it if you and Chad would launch a vegan version of Cook's Illustrated (because you both obviously have loads of spare time to take on another venture!).

@@DerekSarnoChef I definitely agree. My bf actually send me a lot of your videos, he is vegan and deadly allergic to nuts/sesame seeds so he loves to share them with me! (I am allergic but recently learnt not pine nuts or almonds as they're seeds not nuts) I've seen quite a few recipes of yours which is nut-free which is so refreshing to see. Nuts are used so much in recipes and a lot of people forget that it is one of the most common allergies, and they don't accommodate!
You replace the parmesan by nutritional yeast, but, as usual, you have no problem with leaving in all the oil. So, while it's technically vegan, it's not healthy.

7-10 days in the fridge? Really? What's you secret man! My store bought pesto lasts a few days after I open it before I can start to see mold growing!
I’m using water instead of a ton of oil. If you go vegan better make it healthy.
