QUICK + EASY TEX-MEX Mexican Style Soup Recipe!

- Learn how to make an incredible spicy vegan Mexican soup in just literally minutes!
LAY HO MA!! This recipe is going to be a lifesaver for the days where you just can't be bothered. This spicy Mexican soup is fast, simple, and absolutely packed with flavour. Join me in this episode and learn how to make my version of a spicy vegan Mexican soup.
Ingredients:
1/2 red onion
2 pieces garlic
1 scotch bonnet (optional! very spicy!)
2-3 tbsp olive oil
1/2 tbsp cumin
1 1/2 tbsp smoked paprika
1/2 tbsp chili powder
2 tbsp dried oregano
1 800ml can peeled tomatoes
1 can black beans
2 cups corn
6 cups water or vegetable stock (plus 1 tbsp pink salt if using water)
3 tbsp tomato paste
2 tbsp cane sugar
1 avocado
1 small bunch cilantro
few tortilla chips
Directions:
1. Dice the red onion and garlic
2. Remove the seeds from the scotch bonnet and finely chop
3. Heat up a stock pot on medium high heat and add the olive oil
4. Add in the onions, garlic, and pepper followed by the dry spices
5. Give the pot a stir and add in the canned tomatoes (carefully!)
6. Use a spatula to break up the tomatoes
7. Add the beans, corn, and the water/veggie stock
8. Add the tomato paste and the cane sugar
9. Bring the soup to a boil, then its ready to serve
10. Top the soup with avocado cubes, fresh cilantro, and some crushed tortilla chips

I am asking again, because I think my question was missed on a previous video. What are you referring to when you say “pink salt?” Pink salt is a culinary industry term for a curing salt, which has nitrates and nitrites in it for curing meat. Do you mean Himalayan pink salt?

TIP.
I cook a lot of afro carribean food. If you don't like all the heat from the scotch bonnet, you don't need to omit it. Instead of chopping it, add it whole when simmering and remove before serving just like you would a bay leaf. That way you get a nice bit of heat and flavour without setting your mouth on fire 🔥 x

Yeah we do this alot where I'm from, Tanzania. You get the right amount of heat but not too much to the point of crying😂😂
Yes that is how we do it in Trinidad, put the whole pepper in then take it out after cooking, to make soups, curry dishes, cook up rice etc Except we use Congo Pepper, now that is 🥵 hot hot hot. 🤪Looks great and will try it along with many more of your delicious recipes. I ordered your recipe book.... just could not resist.
so close to perfect. last ingredient lime. squeeze a whole one in to each bowl. next level delicious
Thank you for the recipe. I made it and it's so delicious. I also squeezed in some lime juice then threw the lime in the soup and it added a beautiful, aromatic flavour. At the end I topped it off with spring onion which added more freshness. Will definitely be making this again in the future. Thanks again.

I made this for lunch today and it was awesome. I put some hummus in there as garnish cause I did not have any avacados and the taste shoot to the roof!
Looks good, and I am eager to experience what this tastes like. I love simple quick recipes. I think I may try the suggestion from the comment thread by using the scotch bonnet like a bay leaf and removing it when done.
So simple, so satisfying. I used a tablespoon of miso instead of salt, and a ghost pepper with the seeds bc I like it extra spicy. Keep up the good work, Wil. Plant foods are so life affirming. Love your content bro 😎

Trouble hearing on the youtube if the smoked paprika is 1/2 TBSP or 1.5 Tbsp? I have made once and I think i used a wee bit much, but delicious regardless - greetings from Perth - taught wholefoods cooking for 20 years here - lovely to watch somebody else and get inspired!

I made this exact recipe by heart! So I'm amused😊 the only difference is instead of chilli seasoning and scotch bonnet I used sweet thai chili sauce and for kick added some jalepeno's. Didnt hv avocado..I'll try that next time or hv avocado toast on the side. Nice recipe!

I am a Mexican woman living in the UK. I will be making the soup though I will not put in the tin of tomatoes nor the scotch bonnet chiles. I will make a “salcita” with fresh green chiles and
...lime juice to add to the soup once is served. To each her/his taste for picant food. Chichi !

Water is fine (just remember to season) buuuuuut veggie stock is always gonna be more flavourful 😇
As a Mexican, I’d never made or seen soup like this but it looks delicious-gonna try it. It looks like a runny chili. I’d just add some lime maybe. Will see.

What would I use to replace the SCOTCH BONNET pepper? I don’t mind some heat but I think I’m kinda afraid of using that pepper!! Lol
You could sub for a green pepper or a more mild pepper like jalapeño 🙌🏻🥳

Love your recipes but coming.from a Mexican, we don't put any sugar in our soups...or scotch peppers. We also don't use all the powders or canned tomatoes.but looks good.

You could improve this recipe by adding a teaspoon of hot chocolate. Goes great with chilli so I think it would work with this soup too.
