I'm mexican and I love to see renditions of mexican dishes by international chefs like Gordon, it's always interesting to see how they tweak them and add their own touch. And, for those ''authentic'' mexicans taking so serious a simple dish, you guys should shut up. There's no such thing as a fully ''traditional'' mexican cuisine/style, if you eat your pico de gallo with or without olive oil, pepper, if you don't add sugar to the soup, that's up to you. Everything comes down to the preferences in mexican families, even in México, in every single state there's differences in the food that we eat, in the preparation. You do you, guys... Don't be that kind of stupid people that defend something you don't even own and feel offended when someone adds/changes something in a recipe when there's nothing written. Remember this... In some way, Gordon is putting mexican cuisine up high by giving his rendition on a simple tortilla soup.

It gets even more important if those people aren't used to eating anything similar to mexican food. For example, I can't eat food that is too spicy. I get a really runny nose, have to drink alot and end up not enjoying it. So if I tried classical mexican food I'd hate it. That's why I'd want to tone the spices down. Meanwhile I know that many other ethnics find the food from my country to be bland. So I'd have no problem with the tweaking it so that it has more taste, as long as the main ideas remain. So basically people are getting offended by his effort to get more people to enjoy their food... It's really idiotic.

If you go to Mexico and try a Greek restaurant there it's different in Mexico than what it is in Greece. Similarly if you go to Europe and eat Mexican it will be different there. Even the produce, ingredients, and meat used taste different on their own. You can't find authentic anything anywhere.

Although it is not something traditionally mexican it is very close, id just get rid of the sugar. Chill out about the authenticity, it is very difficult to get the ingredients for proper Mexican food in England. This is something that is actually close and you can cook almost anywhere, so anyone can enjoy it. You can't get Mexican "queso fresco" cheese or fresh corn tortillas in the UK. This is miles ahead of the disgusting burritos they sell as Mexican food in the UK in every corner, so I approve .

I've tried chicken and vegetables wrapped in tortillas, I think it was chicken burrito!!!!! with, chicken, beef and shrimps fajita... they were grilled and mixed together with vegetables as well, all as one dish... I'm sooo sorry if the names are wrong... I'm not good at all with remembering names!!!!! im from Mexico City D.F. 5 minutes from the airport...and I live in Chicago...i was excited because i was going to Texas for Vacation...was so happy to be close to the border that i was to have real authentic Mexican food...well I was disappointed!! I Went to Houston...San Antonio...Corpus Christi..Katy Texas...and other places...And the food was horrible...Taco bell was better...They have no arrachera...all the Tacos were ground beef..with yellow cheese...like really...i felt like telling the waiter...which he was Mexican...is this the cheese ur mother cooks with...go to Mexico and they do not use YELLOW CHEESE!! i gave up so much hope...Never again...i cant believe living in Chicago...which is so much further away from Mexico...and i can actually get real Mexican food and its Authentic!! smh...Never again..i will rather eat at whataburger then any mexican restaurant..or even Texas road house...so disappointed..

That is the very best attempt on Mexican food by a foreign I've ever seen :D Of course it is not the exact same thing that you'll find in a Mexican kitchen that's obvious, but he did it quite well plus he add a few other things that made that soup even better (that I actually do) like a little spoon of sugar to bring other hidden flavors of the Chipotle bitter, spicy and sweet it makes it a finer more complex dish like "Mole" fore example , and olive oil is quite fresh and good on pico de gallo. The only thing he should do is put the tortillas in the soup, add some fresh cheese (which he did) and cream on top. This is far way more Mexican than burritos, nachos and fajitas.

I'm from mexico, lived here all my life and i am amazed with this, i mean the accuracy of chef ramsay compared to what we cook, we use the same ingredients and have almost the same process, this is one of the best recipes you can find, no wonder why he is one of the best around the globe

I'm not going to knock him down on it, he didn't say i'm going to make caldo de pescado, de pollo, or chicken tortilla soup, he just said he was going to make a mexican soup. I've never seen it but it still looks good. British people don't really seem to have a tolerance for spicy food which is surprising since they have such a large indian population you'd think they'd get used to it. I remember seeing the f-word and Alan Carr beat Gordon in a challenge making Thai food or Malay food and Alan won because Gordons food was "too spicy" even though every person commented on how only Gordon got the ingredients right.

quite close, if you put more beans and chorizo or some kind of sausage in the soup its more closer to the "firjoles charros" i´m from Culiacan Sinaloa México AND believe me i know that stuff, the "salsa" it´s called "pico de gallo" and we dont put OLIVE OIL in it because we don´t use olive oil that much, the tipical "pico de gallo" it´s only ONION,CILANTRO,JALAPEÑO PEPPER AND TOMATOES. just dice evereything, mix,some salt, and add some limon juice AND THERE YOU GO a tradicional "pico de gallo". i love ramsay, great chef i have learn tons of tips from their videos, and this is one of the most acurate recipes i have whatched from a foreign chef/cock cheers.
I love Gordon, but when it comes to a recipe that is supposed to come from a specific nation we get jealous, but will always be variations to all dishes, we must understand him as his interpretation of a Mexican-style food because the ingredients he is using and does not try to say that's what Mexicans eat, Greetings to all.
This looks amazing; who cares if he's not from Mexico; he made an amazing dish. For those of you who thinks he's wrong, give him some credit for trying, not bash him. He's not Mexican, but he's British; and he's a chef and he is always trying out new cultures. So again, instead of bashing what he's doing wrong, support him in what he's doing right, and again, support his efforts; not many chefs out there can pull this type of dish off.
For all the Mexicans getting upset over it not being "Mexican" need to chill. This is his way of incorporating Mexican ingredients and making a Mexican dish. Adding sugar to soup? Why is that strange whenever we have Mole Poblano that has chocolate and chile (keep in mind that Mole is meant to be spicy and Mole Poblano has that amazing spicy/sweet combo that is simply amazing!. I would understand being upset if he was making an iconic Mexican dish and getting it completely wrong but this is his creation using Mexican ingredients. Also Pico De Gallo does have peppers (not black pepper) in them; whether you use jalapeños or chile serrano is up to you. I am proud to be Mexican and we have one of the best cuisine's in the world but you guys have to chill on being offended because I'm pretty sure if we wanted to make Italian food or even British food we would screw up or change a few things too; and it wouldn't be bad because we are going to cook something we like and we enjoy and that's what Ramsey did. I rest my case. lol

I understand it's not always easy getting fresh ingredients in the UK, but improve the recepy using fresh tomatoes instead of canned ones. It makes a HUGE difference.
Gordon I think your videos are great, I've tried some of your recipes and my family loved them, just a suggestion: My native language is not English, its Spanish, sometimes its a bit hard for me to listen and undestand the ingredients you're mentioning so It would be awesome if you could add a list of ingredients in the description of the video

I LOVE this recipe. I made it after I watched this tutorial and then I also learned how to make tortillas from scratch for the nachos, which was way easier than I thought it would be. The whole meal takes me maybe 40 minutes and is one of my husband's favourite meals. We have it at least once a week.
If all cultures didn't put their own twists to "traditional dishes" then that would pretty much suck. Change it up, and your own flavor to em. If a chef took the time to make this food and respect like he does, then you should respect the fact that he made it (possibly for you), he someone brought this food to you and you asserted that it wasn't traditional enough, i'd say its more a reflection of your disrespect, not his (or any chef).

Made this a few times now, but instead of using a chipotle (can't seem to find it at any market near me), I used 1 chile de arbol and also 1 pasilla chile, the combination of the two is really quite delicious. I also added hominy. This also gets a much better flavor if you cook it a few hours before consumption and just let it simmer! Lets all the flavors incorporate even more. Hope this helps anyone trying to make it!!

I followed your recipe chef, it was delicious, my grandmother, she's one of the best cooks I know she's Mexican, she tried it and she fell in love with it. Delicious.
As a side comment, mexican food basically requires onion, coriander, tomatoes and peppers. Beans are used mostly as a side dish and rarely used as an ingredient in a main dish. Rice is also a very common side dish, and we cook different styles of it, using chicken broth instead of plain water and spices, i.e., white rice (with carrots, corn, and peas), red rice (colored with mashed tomates, with carrots, green beans, and peas), green rice (colored with green peppers "chile poblano", and corn). Yellow rice is very rare and it is mainly used for spanish "paella". This dish mimics the traditional "sopa de tortilla" which uses other kind of peppers (i.e., "chile pasilla" or "chile ancho"; it is uncommon to use "chile chipotle"); tortilla strips are deep fried, not baked, and we never use paprika on them. As mentioned in other comments, we put "queso ranchero" (fresh cheese with a high content of salt) on top of this soup , but you can use "queso oaxaca, A.K.A. "quesillo", which is very similar to mozzarella cheese. You can also add "deep fried pork skin" called "chicharrón". You made two things right, "pico de gallo" and to add avocado on top of the soup. You can add olive oil to the "pico de gallo" since it does not changes its taste badly, but it is not a common practice in Mexico. Personally, I use olive oil or any kind of oil on guacamole ("pico de gallo" + mashed avocado), since oils contain a high content of anti-oxidants and it prevents avocado oxidation (enzime darkening); moreover, it confers palatability and a creamy texture. As a chef, I guess you can try different recipes, but if you claim this to be a mexican dish, stick to the mexican recipe, otherwise, name it differently. Take this as a critic rather than an offense. Certainly, you are the chef and I am the viewer, but my experience with mexican food is far greater than yours.
Haha so many ingredients, my mom would just toast some Chile Mulatos and Guajillo, add some tomato, salt, onion and water mix it together and call it good. I'm not complaining it tastes so good and it's easy to control how spicy it gets.

It's not all Americans, and it varies from state to state. Breaking Bad is set in New Mexico, a border state. The border states have a lot of immigrants and illegal aliens. This causes a lot of tension that most commonly boils over as racial profiling. I find that labeling an entire population this and that is always shortsighted. There are 300 million or so Americans.

Although it is not something traditionally mexican it is very close, id just get rid of the sugar. Chill out about the authenticity, it is very difficult to get the ingredients for proper Mexican food in England. This is something that is actually close and you can cook almost anywhere, so anyone can enjoy it. You can't get Mexican "queso fresco" cheese or fresh corn tortillas in the UK. This is miles ahead of the disgusting burritos they sell as Mexican food in the UK in every corner, so I approve .

im from Mexico City D.F. 5 minutes from the airport...and I live in Chicago...i was excited because i was going to Texas for Vacation...was so happy to be close to the border that i was to have real authentic Mexican food...well I was disappointed!! I Went to Houston...San Antonio...Corpus Christi..Katy Texas...and other places...And the food was horrible...Taco bell was better...They have no arrachera...all the Tacos were ground beef..with yellow cheese...like really...i felt like telling the waiter...which he was Mexican...is this the cheese ur mother cooks with...go to Mexico and they do not use YELLOW CHEESE!! i gave up so much hope...Never again...i cant believe living in Chicago...which is so much further away from Mexico...and i can actually get real Mexican food and its Authentic!! smh...Never again..i will rather eat at whataburger then any mexican restaurant..or even Texas road house...so disappointed..

I've never heard of pico de gallo with oil, but he's Gordon Ramsay and I'm not gonna question the master.
That is the very best attempt on Mexican food by a foreign I've ever seen :D
Of course it is not the exact same thing that you'll find in a Mexican kitchen that's obvious, but he did it quite well plus he add a few other things that made that soup even better (that I actually do) like a little spoon of sugar to bring other hidden flavors of the Chipotle bitter, spicy and sweet it makes it a finer more complex dish like "Mole" fore example , and olive oil is quite fresh and good on pico de gallo.
The only thing he should do is put the tortillas in the soup, add some fresh cheese (which he did) and cream on top.
This is far way more Mexican than burritos, nachos and fajitas.
All I see is Mexicans apologizing for other Mexicans for being butthurt but I don't see any of the comments they're talking about lol .. okay 😂

I'm not going to knock him down on it, he didn't say i'm going to make caldo de pescado, de pollo, or chicken tortilla soup, he just said he was going to make a mexican soup. I've never seen it but it still looks good. British people don't really seem to have a tolerance for spicy food which is surprising since they have such a large indian population you'd think they'd get used to it. I remember seeing the f-word and Alan Carr beat Gordon in a challenge making Thai food or Malay food and Alan won because Gordons food was "too spicy" even though every person commented on how only Gordon got the ingredients right.

I love Gordon, but when it comes to a recipe that is supposed to come from a specific nation we get jealous, but will always be variations to all dishes, we must understand him as his interpretation of a Mexican-style food because the ingredients he is using and does not try to say that's what Mexicans eat, Greetings to all.
This looks amazing; who cares if he's not from Mexico; he made an amazing dish. For those of you who thinks he's wrong, give him some credit for trying, not bash him. He's not Mexican, but he's British; and he's a chef and he is always trying out new cultures. So again, instead of bashing what he's doing wrong, support him in what he's doing right, and again, support his efforts; not many chefs out there can pull this type of dish off.
For all the Mexicans getting upset over it not being "Mexican" need to chill. This is his way of incorporating Mexican ingredients and making a Mexican dish. Adding sugar to soup? Why is that strange whenever we have Mole Poblano that has chocolate and chile (keep in mind that Mole is meant to be spicy and Mole Poblano has that amazing spicy/sweet combo that is simply amazing!. I would understand being upset if he was making an iconic Mexican dish and getting it completely wrong but this is his creation using Mexican ingredients. Also Pico De Gallo does have peppers (not black pepper) in them; whether you use jalapeños or chile serrano is up to you.
I am proud to be Mexican and we have one of the best cuisine's in the world but you guys have to chill on being offended because I'm pretty sure if we wanted to make Italian food or even British food we would screw up or change a few things too; and it wouldn't be bad because we are going to cook something we like and we enjoy and that's what Ramsey did.

I understand it's not always easy getting fresh ingredients in the UK, but improve the recepy using fresh tomatoes instead of canned ones. It makes a HUGE difference.

I LOVE this recipe. I made it after I watched this tutorial and then I also learned how to make tortillas from scratch for the nachos, which was way easier than I thought it would be. The whole meal takes me maybe 40 minutes and is one of my husband's favourite meals. We have it at least once a week.

If all cultures didn't put their own twists to "traditional dishes" then that would pretty much suck. Change it up, and your own flavor to em. If a chef took the time to make this food and respect like he does, then you should respect the fact that he made it (possibly for you), he someone brought this food to you and you asserted that it wasn't traditional enough, i'd say its more a reflection of your disrespect, not his (or any chef).

Made this a few times now, but instead of using a chipotle (can't seem to find it at any market near me), I used 1 chile de arbol and also 1 pasilla chile, the combination of the two is really quite delicious. I also added hominy. This also gets a much better flavor if you cook it a few hours before consumption and just let it simmer! Lets all the flavors incorporate even more. Hope this helps anyone trying to make it!!

As a side comment, mexican food basically requires onion, coriander, tomatoes and peppers. Beans are used mostly as a side dish and rarely used as an ingredient in a main dish. Rice is also a very common side dish, and we cook different styles of it, using chicken broth instead of plain water and spices, i.e., white rice (with carrots, corn, and peas), red rice (colored with mashed tomates, with carrots, green beans, and peas), green rice (colored with green peppers "chile poblano", and corn). Yellow rice is very rare and it is mainly used for spanish "paella".
This dish mimics the traditional "sopa de tortilla" which uses other kind of peppers (i.e., "chile pasilla" or "chile ancho"; it is uncommon to use "chile chipotle"); tortilla strips are deep fried, not baked, and we never use paprika on them. As mentioned in other comments, we put "queso ranchero" (fresh cheese with a high content of salt) on top of this soup , but you can use "queso oaxaca, A.K.A. "quesillo", which is very similar to mozzarella cheese. You can also add "deep fried pork skin" called "chicharrón".
You made two things right, "pico de gallo" and to add avocado on top of the soup.
You can add olive oil to the "pico de gallo" since it does not changes its taste badly, but it is not a common practice in Mexico. Personally, I use olive oil or any kind of oil on guacamole ("pico de gallo" + mashed avocado), since oils contain a high content of anti-oxidants and it prevents avocado oxidation (enzime darkening); moreover, it confers palatability and a creamy texture.
As a chef, I guess you can try different recipes, but if you claim this to be a mexican dish, stick to the mexican recipe, otherwise, name it differently.
Take this as a critic rather than an offense. Certainly, you are the chef and I am the viewer, but my experience with mexican food is far greater than yours.

Watched Breaking Bad for the first time today! And i also heared the word "Bean Eater" i think that they are mexican. But i'm from Sweden and i dont get that Americans are so mean to mexicans i mean America was discoverd by a immigrant??
It's not all Americans, and it varies from state to state. Breaking Bad is set in New Mexico, a border state. The border states have a lot of immigrants and illegal aliens. This causes a lot of tension that most commonly boils over as racial profiling.
I find that labeling an entire population this and that is always shortsighted. There are 300 million or so Americans.
