  • Kurma is one of those sweet, crunchy desserts that has you craving more. According to my Polish friend Ania, "it's sooooo addicting, and tastes like doughnut".     Matthew's Mithai Recipe: • Soft Mithai || Diwali ...
    Since Divali is nearing, I figured I would share this recipe that was handed down to me from my Aunty Sandra. It's sweet, flaky, crispy, crunchy, and "more-ish" (as we would say back in Trinbago).
    Here's what you will need:
    For the dough:
    2 cups of Flour
    1/4 cup of Butter (unsalted if this will be done for pooja/prayers)
    2 tablespoons of grated Ginger
    1/2 teaspoon of Cinnamon
    5 tablespoons of COLD Evaporated Milk
    2 tablespoons sweetened Condensed Milk
    Paag or Sugar Syrup:
    1/4 cup of Water
    1 teaspoon grated Ginger
    3/4 cup of Granulated/White Sugar

    Definitely one of the best recipes, I tried it before using other recipes and it did not come out very well...this one was simple and perfect! Thanks again! Oh btw, I placed it in front of a fan, so the sugar crystalised faster, less turning!

    Omg. Just made it. Came out perfect. Only difference probably because of humidity I didn't need that amount of Carnation. Thank you. You're going to convert me. Lol. GOD BLESS.

    Tried this recipe and it came out so crunchy. Love my ginger in the Kurma and Paag. Using a plastic bowl to toss it up was better though. Easy to get sugar off.

    I love Kurma don't matter what store brand or who cooks it at home, I have never tasted bad Kurma they all usually taste the same to me, but I'm never 100% sure if I like Kurma soft or hard, thin or thick, flacky or crunchy, I just eat it all.

    These are like sweet murukku. I bought some a couple of weeks ago just to try. They are delicious but I left the packet open and they went stale. I might try your cooking method.
    Evaporated milk was always called Carnation milk in the UK too. It's changed over the last twenty years.

      Yes it can. A bit tricky though. Keto snacks require so many ingredients, sometimes it's best you break your diet and indulge.

    I tried it and they all crumbled in the pot when they were trying😞. I did substitute the condensed milk for honey, but I probably should have chilled it longer. Don't know what went wrong!

      Jannelle Singh The only way it will crumble is if you used too much butter. How much butter & flour did you use?
