Crunchy Buttery Kurma

- Kurma is a delicious, deep fried Indian sweet that is coated with a spiced syrup. This recipe makes the most crunchy, buttery and flavorful kurma. Enjoy!
Ingredients:
3 cups all-purpose flour
1 tbsp full cream powdered milk (optional)
1 tbsp coconut milk powder (optional)
1/4 tsp ground cinnamon
3/4 tsp ground cardamom / elichie
1 1/2 tsp grated ginger
1 tbsp condensed milk
2/3 cup cold margarine, grated
1/2 cup evaporated milk (added gradually)
Syrup:
1 cup granulated sugar
1 cup water
1 1/2 tsp ginger

I just tried the recipe. I am pleased with the results. My dough was not as smooth as yours though, I found the dough to be a bit dry, I didn't use all the milk because while kneading the milk was absorbed and the dough held together. When I make it another time I will try a little more milk. Frying time on point, my syrup thickened up in less time. I also sprinked some milk powder onto the kurma while tossing in the syrup. Flavors on point. Thank you for sharing your recipe
That’s awesome! Next time add a bit more milk for the dough to come together, but add it very slowly as too much milk changes the texture. Enjoy 😊🙏🏼

Just tried this recipe. I think the oil was not hot enough so they took way longer than 2 minutes to fry. I was worried with the final results. But you know what? They were very crunchy and perfect. Thank you so much for thus recipe.

Be sure to use margarine. I’ve used unsalted butter and that makes it swell up a lot when frying. Also, knead the dough very firm. You got this! 😊👏🏻

Hi, the dough will crack a bit at the edges. Don’t be tempted to add more liquid. Add a few drops extra only if the dough is crumbly.
The butter will keep the kurma crunchy. Just keep pulling the cracked edges together as you roll it and you’ll end up with nice edges.
I have been making kurma at home for years. This recipe is one of my best experiments👏🏽👍🏽. Very tasty, crunchy kurma. Yes-it’s the best👍🏽! I am taking it a step further-a little tweaking to bake in oven instead of frying 😊. I’m trying to eliminate the oil. Thank you for sharing
What brand or type of coconut milk powder to use plz?
Any brand will work. I usually use Maggi.
