*Randy:* You'll need to update your insert on peppercorns. They are not called "red" peppercorns, they are called "pink" peppercorns. Pink peppercorns are not a true peppercorn (genus _Piper_ ). Since they are the same shape and size as true peppercorns, they are marketed under the name “pink peppercorn.” Not peppercorns at all, they are ripe berries of different plants depending on where they are being sourced: _Schinus terebinthifolius_ (Brazilian peppertree), _Schinus molle_, (Peruvian pepper tree), and _Euonymus phellomanus_ (Spindle tree with is actually a shrub). Not only do I love seeing the recipes, I also love seeing the family time at the end. You see how grandpa loves his grandson, making sure the baby is right next to him, not the baby’s parents. That’s the OG Asian love. My dad passed away 10 years ago. Watching this reminds me of how he was with my kids. Love love love

I ran out of oyster sauce so I used Fish sauce instead. Also, I ran out of corn starch after making the marinade so I coated the pork chops with flour. It turned out amazing. My mom was surprised how tender it was and my brother who is a very picky eater said he didn't know that pork chops could taste so good. Thank you for sharing your knowledge.

I’m Puerto Rican and I swear the only other type of pork chop seasoned or style I would eat is this. We are kings of pork but this just gave me a hell of an idea. Love the family atmosphere and culture sharing you guys provided. This was awesome. Your dad reminded me of my late Grandpop.

This recipe was so helpful! I adjusted the vegetables & spices to what I have, and I’m not regretting a thing! I used cabbage & red onion, and then I replaced the garlic salt with 5 spice + onion powder, plain salt… and slipped 2 extra cloves of garlic in with the veggies. I used a mix of white and black pepper… tons and tons of it. Drizzled some Lao Gan Ma over the rice, and mmmmm…. life is so good right now!
Thanks for this video as always and thanks to your mom for writing everything down! Another few tips for avoiding smoke and splatter when frying: 1. For splatter, you can cover the top of the pot/pan with a splatter guard which blocks much of the little globs of oil from spraying onto the stovetop. 2. For smoke, a good fume hood is a must.

The marbling and coloration of the meat in the video looks more like the blade end cut of the pork loin. Might also be called an end roast in your supermarket. When I heard pork chop initially I thought the meat would be too tough, but Mr. Lau is using a fatter cut of the loin. My go to is pork shoulder as it takes marinade well, well marbled, and nearly impossible to dry out! Love your videos 🙏

Wonderful recipe and demonstration! The way your Dad speaks is just so homey to me - his cantonese dialect is just like my Grandma's. How he uses the word "doy" instead "jai" to call you son - he must have been from a similar area that my Grandma came from.
I appreciate that this recipe uses common Chinese ingredients. As far as keeping deep fry oil from going everywhere, I just cover the wok. Not sure if this is good or bad but has worked for me.
Delicious! I made it today it taste just like restaurants even better. Yes taking the bones out and splitting the chops in half and tenderizing it with edge of knife gives it a tender texture. Double frying gives it a perfect crunch. My husband could never stop saying it is very good! As a side, I served with your spicy garlic eggplant from our vegetable garden. I paired it with Sauvignon Blanc. Thank u for sharing.

I've just discovered this channel and look forward to trying many of the dishes. Does Dad do a twice cooked pork ? That's one of my favorite Chinese dishes and would love to see how Dad would prepare it.
