Thanks Dr. Joe for the excellent presentation. You can also wash a few Okra and cut them in two and soaked them in a glass of water overnight and drink the slimy water, remember to take the pieces out before drinking the water. May I say that you forgot to mention Jute Leaves, Called Ewedu in Western Nigeria, and is considered as the top slimy vegetable leaves, and it is very good at lowering LDL, the bad cholesterol, also water leaves and watercress are right up there with the mix. Glory Be To God who made all things well, Amen.

In Trinidad and Tobago we regularly use both Okra and Aubergine. We pronounce the first "ochro" and it's used in a kind of thick soup called calalloo. This is made with dasheen (taro) leaves, lots of ochroes and other seasonings. We also make ochro rice - really rice steamed with ochroes and seasonings.
Aubergine is called "melongene" here. It's added to stewed beef or roasted with garlic etc. to make a "bhaigan or melongene choka".

    Hi Dr Joe.
From a small child my parents have been using okra in our diet. I am following the tradition. I regularly prepare okra sauce to eat with coucou, (a traditional dish here in Barbados) or just to have as a side dish. The okra is cooked up with or without salted cod, onions, thyme, black pepper, tomatoes, sweet pepper and a dash of tumeric or curry powder. If you use the salted cod it should be boiled separately to take away most of the salt. If not, add salt to taste to the sauce. The okras and the cod should be smashed to produce a thick sauce.

I'm glad the aubergine came out at the end. I can't deal with the sliminess of chia seeds or okra, but I love aubergine. Aubergine coated in Harissa paste and roasted in olive oil is delicious. Also, have you come across Jessie Inchauspé? She's been on many podcasts lately, and she advocates eating vegetables first in a meal to provide a mucus lining to the small intestine, slowing down the absorption of glucose and lowering blood glucose spikes. It sounds like a similar idea to this. I have started to do this while wearing a continuous glucose monitor, and the effect on my blood glucose levels has been dramatic. My postprandial glucose level more than halves eating this way.

I cant eat chia seeds. Bought them once. Soaked them. They looked like tadpoles still in their egg sacks😫threw the whole thing away. In asia where i live we have an abundance of fresh food which i prefer. Quinoa and chia seeds are easily available in stores but not so popular. We have several seeds and grain we use. I have high cholesterol and Dr advised OATS and barley in my diet. Helps. .

Okra my favorite, I cook these at least 3 times a week, in many different ways.if I want it very slammed I boil some water then I pour a very thin sliced okra, a pinch of baking soda some salt, then I keep staring until a nice. Consistency the I through in I two handful of baby spinach . Let boil little more and is ready to eat. If I want them less slamming I cut them by half lengthwise , I sprinkle some powdered garlic, black paper, sprinkle of powdered chill, a spoon of vinager,a spoon of olive oil,I mix it all, I then on a tray I put a baking paper, then pour the okra and take to oven to roast at 350 degrees if gas. Ops- if you like red paper like me cut them lengthwise and mix it with okra when marinating then roasted them together. Bon appetite. Let me know how do you like it🙏🙏💃🏼
