- Welcome to Lisa's Caribbean Kitchen! I hope you're hungry because in my kitchen, you will learn how to make the best Caribbean food! My goal is, even if you can't boil eggs, you should be able to follow my steps to make great tasting food! The ingredients will always be in the description box! Need me to elaborate on something? Ingredients:
3 Cups of Water (Use 2 cups, bring to a boil and 1 cup to mix corn meal with)
1 Cup Fine Yellow Corn Meal (I use the Madame Gougousse brand)
4 Cinnamon Sticks
5 Anise Star
1 Can Carnation/Evaporated Milk
(If you want it on less thick, use 1.5 Cups of Milk)
1 TSP Lime Zest
1/2 TSP Nutmeg
1/2 TBSP Almond Extract
1/2 TBSP Vanilla Extract
1/4 Cup of Sugar (You can add more or less depending on your preference)
1 TBSP Butter
2 Pinch of Salt
Keep stove on medium heat while cooking
This makes enough for 2-3 people!

Memories. Is remember back in the late 80s when the adults couldn't find the cornmeal from back home they would use Jiffys.
My mother in law made this for us over the Holiday break and it was sooooo good. I can’t wait to make it!
Wow this was delicious! I didn't had high expectations when making this, because I had to use polenta instead of the corn meal, and lime aroma (the kind you use for baking) instead of the zests, because stores are closed today, but it turned out very tasty nontheless! Thank you for posting this!
I tried this recipe without knowing what to expect (never had haitian food before) and, even though I liked it, I was expecting A LOT more punch based on the ingredients used (I've also added coconut milk, ginger and 3x more sugar). It has a surprisingly mild flavour, not that far from regular milk oatmeal. This mix of corn, milk and cinnamon reminds me a lot of the "canjica" we eat in Brazil.
Oi! One thing I always say is use my videos as a guide but make the recipe yours which is exactly what you did because we all have different taste buds. Most Haitians would never add ginger to this dish so that's very interesting also 3x more sugar would be way too sweet for me. I love anything coconut so I want to diffinetly try this recipe with coconut milk the next time I make it. Thanks for sharing your take on this recipe and giving a Haitian dish a try! Try something else you may actually like it. I love Brazilian coconut bread, so delicious 😊

I am going to try this today for the first time. I specifically brought the same corn meal when i went to Florida. I use to enjoy my mom making this in the early morning. Never bothered to learn lol Thanks for posting.
Hey Aggie! The brand I use is my favorite brand, I've tried others but this one is hands down the best I've tried so far. I could eat this for breakfast every morning lol glad the kids enjoyed it!

Can I leave out the anise stars without compromising taste? I can't find them where I'm located
Hi my love! Yes you can!! Of course you're missing a key ingredient but it will still give you good taste without it. I'm not sure if you have access to Amazon where you live, but they have it on there also.
