  • Learn exactly how to make haitian epis, the haitian version of green seasoning. My husband’s aunt came through with some guidance and here you have an authentic recipe complete with a tutorial showing you step by step how to make this delicious seasoning. Similar to sofrito, this haitian seasoning can be used for meat, poultry, and fish. You’ll need:
    1 large green pepper
    1 large red pepper
    2 onions
    1/2 a bushel of parsley
    1/2 a bushel of cilantro
    4 stalks of scallion
    1 head of garlic
    2 chicken bouillon
    1 scotch bonnet pepper
    1 tbsp all purpose seasoning
    2 tbsp of extra virgin olive oil
    150 mL of water, or a small mason jar of water
    1 tbsp lemon juice (optional)
    ****NOTE: Many are trying the recipe and loving it but for some, depending on what blender they use it’s coming out runny. Omit the water. You really don’t need it!

    Just married a Haitian man and my mother in law came over from Haiti (we live in DR) and gave us a huge thing of epis. We out now. This recipe about to save my marriage. 🙌🏾😂

    You can freeze the epis. When my mother used to visit she would make large batches of it for me i would just freeze it into cubes then bag it. Ready for cooking whenever i needed it.

    Oh my goodness! I saw this on Instagram about a year ago, and the person was african, so I didn't know it was called epis! I've been making them and putting them in icecube trays and freezing them. Then pop them out when frozen and put them back in the freezer inside freezer bags. I use it for boiling my meat, chicken etc, in my stews, bolognese, and my stir-fry. There's a difference! My family can't get enough of my food when I add the epis. Totally a game changer ❤❤❤❤

    If you don't have lemon juice you can always use vinegar instead to keep the seasoning flavors intact.

      I have never seen lemons grown in Haïti. Depending on what we are cooking, we use limes or sour oranges.

    You can also use vinegar to preserve I use that and some lemon juice. I Love your recipes by the way ❤

      Yes! I use lemon juice in my epis and oil, but the last two times I've used just a small amount citric acid which works the same to preserve the seasoning.

    I made the epis and it is delicious. When it's frying in the pan with oil, the aroma is so good and can be smelled outside. I followed the recipe and made 32 oz. Thank you....question:when I go to a Haitian restaurant i get fried green plantains and there is a dip that comes with it. What is the recipe for the dip?

    Can't wait to try this ❤️ If scorch bonnet pepper is not available what's the next best type of pepper to use to get use to the exact Flav or this recipe? Plz ask one of the aunties 😊. I think we have habanero in my area but I would like to sub whatever is best.

    It appears that auto correct bit into your recipe. Bunch has become "bushel", we old farmers know better - that would be pounds ( kilos) of herbs.

    Hello, I love this recipe. Am I able to use scotch bonnet pepper sauce since I can't find fresh scotch bonnet pepper?

      Yea, you can use the scotch bonnet sauce just not too much. The acidity in the sauce will kill the dish 😀

    I just found this video and i tried this recipe…. It came out good but tangy…. Is that because of the cilantro?
    What is it suppose to taste like ?

      Look for other Epis recipes. The lemon is what you may be tasting. Use vinegar, Badia Mojo, Sour orange Badia, or no citric acid or cilantro at all & freeze in ice cubes to preserve.

      I’m Haitian and yes you can use any bullion cubes. Chicken or beef or the veggie bouillon cubes. She did an amazing job. My mom use to make it this way too. Or she’ll go the real old school way and make it in a wooden pestle ( pilon) that version is too time consuming but in Haiti they do it like that. Also you only do the pilon version if you’re making a small batch of épis

      I typically use Goya adobo as my go to all purpose seasoning 😀

      She already prepped the vegetables, meaning they have already been washed and diced. People should wash their vegetables prior to use whether or not it's shown in the tutorial.

    I made this exact same recipe, but it was a bit runny. Could it be the blender (vitamix)? Should I use a food processor instead?

      Next time omit the water. It could be the blender you used.

      Food processor is the best option to make green seasoning. You don't add vinegar if you want to store it because the vinegar kills the flavor after a while.
      The core should be removed from the thyme because is dangerous for your intestines. Use only the leaves of the thyme. Only extta virgin oil is recommended . Adding water is a big no no no no. You can freeze it for as long as you want to.

      I am a professional cook and I would like to inform you about green seasoning if I may. . Water into the seasoning is a big no no no . Vinegar is also a big no no no because it kills the flavor of the seasoning .If you want to save it, only oil is recommended as liquid and You can freeze it for as long as you can my dear. Green seasoning is my middle name and I really know about it . Water is alright only for instant use. I am Haitian
