Yep, it's smoke fish and mostly done by our Javanese people, descendants of Indonesians. They also make the snack you're talking about with rice wrappers, but they put chicken instead of fish. We call it Loempia.

And visit Napels in Italy! Its still not touched by tourism that much like for example Rome, Venice and Milan. Napels is so pure and restaurants are owned by Neapolitans. They have amazing food! Really fresh and tasty (different than North Italy as well) and supercheap compared to the more industrial places in Italy. I try to go every year, hopefully it won’t lose its authenticity soon. Im sure you’ll love it, people are also extremely nice
Next time you should go in July or August and visit Matapica. You can only visit it by boat (lol, duh, as you have experienced and said yourself thats the main transportation to visit these places there). But its quite a trip by boat and you will sleep in the hamaca’s there next to the atlantic ocean (FYI this is an amazing and (probably) one time experience in your life, but the sound of the ocean waking up in the morning in the middle of nowhere is fantastic). In the middle of the night you will see the huge seaturtles laying their eggs. I went with a few guides who brought hindustani-surinamese food. How wonderful to eat a tasty bara (vada) in front of the ocean with all the quietness and nature around you. You went to see the marroons on the Surinam River, but next time definitely visit Mandje’s ecoresort called “Menimi”. Same experience, but a little more comfort of a bed of course, but you are next to the water in the middle of nature. His wife cooks amazing and they have plenty of activities (like a forest tour and going to a local village, making music etc). Ive been to many countries in South-America, but Surinam is most versatile for sure, not only culture wise, architecture, nature etc but also in terms of food (!). You wont find a country like that anywhere else with influences from Europe, Asia, Africa, Middle East and Indiginous people. Thats why the flag has a star with 5 points, from all the ethnicities of the world that “made” Surinam to what it is now. You won’t find someone with dark skin anywhere else with a Chinese last name, which happens often in Surinam, because all ethnicities mix. Its a huge melting pot. The funny thing is that you should always ask a Surinamese what mix they are to get to know their background. The pom you tried with chicken on the market (you said it tasted like mango) is actually taken from a jewish dish, but the Surinam twist has different spices and Jews used potato, in the Suriname dish they use pom tayer. There is plenty of more that you haven’t tried. I live in the Netherlands and here we have many Surinamese restaurants. You should visit Amsterdam and try some here, but also the other kitchens we have to offer (a huge variety here as well but unfortunately much more expensive of course than what you were used to in Surinam and India for example that you both visited)
