  • This week I stop into Calumet Fisheries in Chicago and get myself some smoked fish. Then I go fishing for catfish in Arkansas with Evan LeRoy, of LeRoy and Lewis. I smoke the brined catfish, along with salmon, in the Mini Chudbox with low heat to make sure it's extra smoky.

It seems like fire some things (this fish, sausage, etc...) that the dirty smoke is what you want. Why is that? Could you do s video sometime explaining why dirty smoke might work better for some things?

This looks like the simplest video to do at home that's on this channel, nice. Also, is it recommended to let smoked fish cool in a fridge like you did, or did you do that to just replicate the restaurant you went to? I'm curious because I'm hoping to try this and eat as soon as the fish comes off the smoker when the juices are still kinda flowy.
