Here in the UK, leek and potato is just about the favourite soup for most people but it has to be homemade. Fortunately it is extremely easy to make , delicious and filling. I recommend it to everyone as a quick meal.

POTATO LEEK SOUP | the coziest vegetarian soup recipe for winter 1339pm 16.5.22 another large blob of grease descends as i try to watch this... the trouble with tater based soups is that if it's left to thicken to any overt degree it's merely akin to very hot wallpaper paste. still; she has a fair few veg in her recipe... p.s the tedious thing with soups is if you add leek or celery then there is chance you can create a very stringy soup...remember to sweat down the leek and peel the celery. though celery detracts from the soup taste in my opinion.. so there you go.

Love this! I make it regularly, very similarly but I use the whole leek, just thyme seasoning from a jar, and I usually add a carrot. Absolutely delicious!
I made this tonight and it was so good. I don't have an immersion blender, so I was a bit nervous. I smashed it up a little with a fork. We used beef broth, because that's what I had on hand. I added parsley and bacon on top with some garlic parmesan moon cheese and served it alongside rye sourdough bread. Was surprised that we all liked it so very much. Thank you for another wonderful healthy recipe.

I love the spice thyme all by itself no other spices to get mixed into it especially in this soup. What I did to add protein was I added half a can of canelli beans. It added such a hardiness richness. Love This recipe

I actually boil a whole chicken in mirepoix for a stock to last the week. The meat is shredded for sliders, chicken salad and enchiladas. The bones go back in the pot for another hour or two to develop bone broth. Overnight in the fridge, fat congeals on top. I remove it, but it could be saved for cooking with. Under that layer there is very gelatinous bone broth and veg remnants. This turns into my soup base. By adding sauteed leek and onions, with salt and pepper, all it needs is 30 minutes on the stove before adding a dash of heavy cream and immersion blender. There's soup for the family for 2 meals. And it's super healthy and delicious!
Leek and potato soup is one of my favorites. I make mine with almond milk, but I am going to make it with stock next time. For toppings, I add chives, avocado, and chopped pecans. The crunchiness of the pecans is a good contrast to the smoothness of the soup.

I make potato leek vegetable soup. I use the base you made and add green vegetables I have on hand. It’s a good way to incorporate more yummy greens in the diet. Examples: kale, broccoli, zucchini or all of them. My family loves this soup with ghee and garlic salt. I cook all together in a pot with water if I don’t have broth. Adding zucchini last as it cooks very quickly.
Great recipe and method. I like mine a bit runny so I can add double cream, stir in and then you have cream of leek and potato soup. Crusty bread with butter.....mmmmmmmmm goes down a treat on a cold day.
I never realised this soup was so simple. Made some for today’s lunch and I can confirm it was absolutely delicious. It’s definitely gone in my recipe book and will be making it again and again. Thankyou🇬🇧

I love that you make a lot of recipes dairy free. I LOVE cheese and and yogurt and was told I need to avoid dairy for inflammation reasons. SO SAD. My daughter needs to avoid eggs and still waiting on husbands test results. Would love to see more recipes that are dairy and egg free at least. I know I should avoid gluten too but that’s another level.
I've been enjoying your recipes and the videos make making the recipes much easier. Can you separate out the desserts from your vegetarian playlist? They're separate categories.
I like to add protein as toppings, like some crispy bacon o chorizo chopped into small pieces before they hit the pan. Or a hard boiled egg mashed with a fork. I also swap potatoes for carrots. And as it takes time to get the job done (I cook leek for a long time to avoid farty consequences 😳🤭), I make like 6-7 servings each time. Feeling my stomach warming when I eat it is like heaven on earth.
The recipe will be prepared in my kitchen shortley or for a long time here after. I muut say I love your cook ware. I hope you relize that I am so envous of that most wonderful cast iron pot.

Such a good point about the potatoes adding all the 'creaminess' one needs in this recipe. Everyone adds butter and cream and it just isn't necessary.

How many calories are in this per portion approx? Great video btw, looks delicious!
I like to add protein as toppings, like some crispy bacon o chorizo chopped into small pieces before they hit the pan. Or a hard boiled egg mashed with a fork. I also swap potatoes for carrots. And as it takes time to get the job done (I cook leek for a long time to avoid farty consequences 😳🤭), I make like 6-7 servings each time. Feeling my stomach warming when I eat it is like heaven on earth.

My share - For a different flavor See if your local store has Liquid smoke in a small Hot sauce sized bottle Higher end food stores normally carry it Or a Good dash of Smokey Paprika
