It did take just over 30 minutes with a break to allow chicken marinade for rest for 2 hours, no compromise on flavour, better than a restaurant, everyone absolutely loved it. You are simply a genius. My wife just ordered your 30 minute book for me for Xmas. Can’t wait to try more out.

Chetna it would be great with summer here (well maybe) and we still not being able to travel if you could do some recipes on Indian picnic food. There is very little on the web about what Indians would take on a picnic and I know having been to India many, many times, picnics do form part of their lives.

I over salted as well. I think I used less chicken which could be the cause but plan to scale the salt back some next time. You can add but not take away. Lol

I see you’ve made some key changes in your 2021 video. 1) No garam masala in your chicken marinade. 2) you’ve added a bay leaf into your sauce base . 3) no more fresh green chillies in your sauce. I am hoping to make it using your new formula next week perhaps but it would be amazing to know what inspired these changes from a culinary perspective - thank you for sharing 🙏

Nope, it's not necessary to wash chicken and it's actually worse because you end up splattering raw chicken juice all over your kitchen. It's totally safe to just cook as is - I always pat my chicken dry with a couple paper towels to let the spices stick better.
Fry it on the stovetop a few minutes and then turn to brown the other side. Remove and set aside. Then add the onions. Chef John at Food Wishes has an excellent video.

Please don’t add the seeds, just skip the leaves, the seeds don’t taste anything like the leaves and if not used correctly can ruin the dish! Enjoy x
